Before you start

Before starting, make sure all ingredients are at room temperature except the milk, which should be warm (about 110°F) to activate the yeast. Measure out the flour and have a large mixing bowl ready. Line a baking sheet with parchment paper.

Prepare the egg wash by beating the egg yolk in a small bowl. Have a rolling pin, a sharp knife or bench scraper, and a pastry brush within reach. The dough will need 40 minutes to rest, so plan accordingly.

Ingredients at a glance (12)
  • 1 1/2 cups warm milk (300ml)
  • 1/2 cup vegetable oil (100ml)
  • 3 tbsp granulated sugar
  • 1 tsp salt
  • 1 packet active dry yeast (11g)
  • 1 large egg
  • 4 1/2 cups all-purpose flour
  • 1 cup black poppy seed paste (haşhaş ezmesi)
  • 125 g melted butter
  • 1/2 cup vegetable oil
  • 4 tbsp granulated sugar
  • 1 egg yolk, beaten

Instructions

Dough and Filling

  1. Make the Dough
In a large bowl, whisk together the warm milk, vegetable oil, sugar, salt, yeast, and egg. Gradually add the flour, stirring until a soft dough forms. Turn out onto a lightly floured surface and knead for about 8 minutes until smooth and supple. Place the dough back in the bowl, cover with a damp cloth, and let it rest for 40 minutes until doubled in size.
Look for The dough should be smooth, elastic, and slightly sticky but not tacky.
Tip If the dough is too sticky, add a little more flour, a tablespoon at a time.
  2. Prepare the Filling
While the dough rests, make the filling. In a medium bowl, mix together the black poppy seed paste, melted butter, vegetable oil, and granulated sugar until well combined. The mixture should be glossy and spreadable.
Look for The filling should be smooth and shiny, with no streaks of butter.
Tip Warm the poppy paste slightly if it is too thick to mix easily.

At the end of this phase, the dough should have doubled in size and feel soft and elastic. The filling should be smooth, glossy, and spreadable, with the butter and oil fully incorporated. The dough should be covered and resting, and the filling set aside at room temperature.

Shaping the Buns

  1. Roll and Layer the Dough
Punch down the rested dough and divide it into 4 equal pieces. On a lightly floured surface, roll each piece into a thin rectangle about 1/8-inch thick. Spread a thick layer of the poppy filling evenly over the first rectangle. Place the second rectangle on top, spread with filling, and repeat with the remaining two rectangles, ending with a layer of filling on top.
Look for The stacked layers should be uniform and the filling evenly distributed.
Tip Keep the rectangles as even as possible for consistent layers.
  2. Slice into Strips
Using a sharp knife or bench scraper, slice the stacked dough into long ribbon strips, about 1 1/2 inches wide. You should have about 8 strips total.
Look for The strips should be cleanly cut, showing distinct layers of dough and filling.
Tip Use a pizza cutter for easier slicing.
  3. Twist and Coil
Take each strip and twist it into a spiral rope. Then coil the rope into a round snail bun, tucking the end underneath. Place the buns on a baking sheet lined with parchment paper, leaving space between them.
Look for The buns should have a tight spiral shape with visible layers.
Tip Twist the strip firmly but gently to avoid tearing.
  4. Brush with Egg Yolk
Brush the tops of the buns generously with the beaten egg yolk. This will give them a deep golden shine during baking.
Look for The buns should be evenly coated with egg yolk.
Tip Use a soft pastry brush to avoid deflating the dough.

The stacked dough should be even and well-filled, with no bare spots. When sliced, the strips should show distinct layers of dough and dark filling.

The twisted ropes should hold their shape, and the coiled buns should be neat and uniform. The egg wash should coat the tops evenly without pooling.

Baking and Finishing

  1. Bake the Buns
Preheat the oven to 375°F (190°C). Bake the buns for 25 minutes, until they are deeply golden and the filling is bubbling. The internal temperature should reach at least 160°F (71°C) to ensure the egg is fully cooked.
Look for The buns should be puffed, golden brown, and fragrant.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Rotate the baking sheet halfway through for even browning.
  2. Cool and Serve
Remove the buns from the oven and let them cool on the baking sheet for 5 minutes. Then transfer to a wire rack to cool slightly. Serve warm, pulling apart the flaky layers to reveal the aromatic black poppy seed filling.
Look for The buns should be flaky and tender, with a rich, nutty aroma.
Tip For best texture, serve within a few hours of baking.

The buns should be deeply golden, puffed, and fragrant. The filling may bubble slightly around the edges. A skewer inserted into the center should come out clean, and the internal temperature should be at least 160°F (71°C). Let them cool slightly before serving to allow the layers to set.

Common mistakes

One common mistake is over-flouring the dough, which can make the buns dry and tough. Add flour only as needed to prevent sticking. Another pitfall is rolling the dough too thick; if the layers are too thick, they won't create the delicate flaky texture.

Also, be sure to spread the filling evenly—too much in one spot can cause the buns to become soggy. Finally, don't skip the egg wash; it is essential for that deep golden color and shiny finish.

How to tell it’s done

The buns are done when they are deeply golden brown on top and the filling is visibly bubbling around the edges. To ensure the egg is fully cooked, insert an instant-read thermometer into the center of a bun; it should read at least 160°F (71°C).

The buns should feel firm to the touch and sound hollow when tapped on the bottom. Let them cool for at least 5 minutes before pulling apart to allow the layers to set slightly.
