Tips for success
For the best texture, use day-old everything bagels—they soak up the custard without falling apart.
If you only have fresh bagels, cut them into cubes and spread them on a baking sheet in a 300°F (150°C) oven for 10 minutes to dry them slightly. This step makes a noticeable difference in the final texture.
Don't skip the everything bagel seasoning on top—it adds a crunchy, aromatic layer that contrasts with the creamy custard.
You can also add a pinch of red pepper flakes for a little heat. For a more pronounced lemon flavor, add the zest to the custard mixture before pouring it over the layers.
Variations
- Vegetarian Version: Omit the smoked salmon and add 1 cup of sautéed spinach or mushrooms. Increase the capers to 1/3 cup for extra brininess. The strata will still be rich and satisfying.
- Smoked Trout Swap: Replace the smoked salmon with flaked smoked trout for a different flavor. Trout has a stronger, more distinct taste that pairs well with the bagel seasoning and dill.
- Add More Veggies: Layer in 1 cup of thinly sliced cherry tomatoes or roasted red peppers for a pop of color and sweetness. Reduce the red onion to 1/4 cup to balance flavors.
- Spicy Kick: Add 1/2 teaspoon of red pepper flakes or a few dashes of hot sauce to the egg custard. Serve with extra hot sauce on the side for those who want more heat.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. The strata will keep its texture well; reheat gently.
- Freezer
- Wrap the cooled strata tightly in plastic wrap and foil, then freeze for up to 2 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat individual portions in the microwave on high for 1-2 minutes, or in a 350°F (175°C) oven for 10-15 minutes until warmed through.
Refrigerate leftovers in an airtight container for up to 3 days. The strata will firm up when chilled; reheat individual portions in the microwave or in a 350°F (175°C) oven until warmed through. For best results, add a splash of milk or half-and-half before reheating to restore creaminess.
Assemble the strata completely the night before, cover the slow cooker insert, and refrigerate. In the morning, place the insert in the slow cooker and cook on low for 3 1/2 to 4 hours, adding 30 minutes to the cooking time to account for the cold start.
Alternatively, cook the strata fully, let it cool, and refrigerate for up to 2 days before reheating.
Serving ideas
Serve the strata warm, straight from the slow cooker, with a side of fresh fruit or a simple green salad.
It's a complete meal on its own, but a dollop of sour cream or a drizzle of hot sauce would be a welcome addition. For a brunch spread, pair it with crispy potatoes, a mimosa bar, or a simple yogurt parfait.
To slice clean wedges, use a large spatula and cut directly in the slow cooker. The strata is tender, so handle it gently. Garnish each serving with a sprig of dill and an extra pinch of everything bagel seasoning for a finished look. Leftovers can be packed for lunch and reheated the next day.

Everything Bagel Smoked Salmon Crockpot Strata

Ingredients
- 6 day-old everything bagels, cubed
- 8 oz cream cheese, cubed
- 8 oz smoked salmon, torn into ribbons
- 1/4 cup capers, drained
- 1/2 cup finely diced red onion
- 10 large eggs
- 1 1/2 cups half-and-half
- 1/4 cup fresh dill, chopped, plus more for garnish
- 2 tbsp everything bagel seasoning, plus more for garnish
- 1 tsp lemon zest
Instructions
- Cube the day-old everything bagels into 1-inch pieces and place them in a large bowl. Cube the cream cheese into 1/2-inch pieces. Dice the red onion finely. Chop the fresh dill. In a separate bowl, whisk the eggs and half-and-half until fully combined and slightly frothy.
- Spray the inside of a 6-quart slow cooker with nonstick cooking spray. Add half of the bagel cubes in an even layer. Scatter half of the cream cheese cubes, half of the smoked salmon ribbons, half of the capers, and half of the red onion over the bagels. Repeat with the remaining bagels, cream cheese, smoked salmon, capers, and red onion.
- Pour the whisked egg and half-and-half mixture evenly over the layered ingredients. Gently press down on the top with a spatula to help the custard soak into the bagel cubes. Sprinkle the chopped dill and everything bagel seasoning over the top.
- Cover the slow cooker with the lid and set it to LOW. Cook for 3 to 3 1/2 hours, until the strata is puffed, the center is set, and the edges are golden brown. The internal temperature of the egg custard should reach 160°F (71°C).
- Turn off the slow cooker and let the strata rest, uncovered, for 10 minutes. This allows the custard to set further and makes slicing easier.
- Garnish the warm strata with fresh dill fronds, a sprinkle of everything bagel seasoning, and lemon zest. Slice into wedges and serve straight from the slow cooker or transfer to a platter.
