Tips for success

To prevent the bottom of the crust from becoming soggy, try pre-baking or blind-baking the pie crust for about five to eight minutes before adding the beef filling. This creates a protective barrier that keeps the crust wonderfully crispy.

Alternatively, sprinkling a thin layer of cheese over the bottom of the unbaked crust before adding the hot beef can also help seal the pastry. Always ensure the beef mixture is not excessively wet before transferring it to the crust.

For clean, beautiful slices, use a sharp, serrated knife to cut through the crispy crust and toppings. Wipe the blade clean between each slice to maintain a neat presentation.

If the pie seems a bit loose when first removed from the oven, allow it to rest on a wire rack for ten minutes. This resting period allows the melted cheese and meat juices to settle, making the pie much easier to slice and serve without falling apart.

Variations

  • Spicy Jalapeno Taco Pie: Add diced jalapenos to the ground beef while browning and swap the cheddar cheese for pepper jack to give the pie a fiery kick.
  • Black Bean and Corn Taco Pie: Stir canned black beans and sweet corn kernels into the seasoned beef mixture before baking to add extra texture and flavor.

Storage and make-ahead

Fridge
Keep leftovers in an airtight container in the refrigerator for up to 3 days. Store cold toppings separately if possible.
Freezer
Freeze the baked pie shell and beef filling (without toppings) wrapped tightly in foil for up to 2 months. Thaw in the fridge before reheating.
Reheat
Reheat slices in a 350°F (175°C) oven for 10-15 minutes until the crust is crispy and the center is hot. Avoid reheating with fresh toppings.

Store any leftover taco pie in an airtight container in the refrigerator for up to three days. To preserve the crispness of the crust and the freshness of the toppings, it is highly recommended to store the hot, baked portion of the pie separately from the cold toppings.

If leftovers already have toppings on them, they can still be refrigerated, but the lettuce will lose its crunch and the sour cream may become slightly watery upon reheating.

The ground beef filling can easily be prepared up to two days in advance and stored in the refrigerator. When ready to serve, simply assemble the pie with the cold beef, add the cheese, and bake as directed, adding a few extra minutes to the baking time to ensure the filling is heated completely through. The crust should not be assembled ahead of time, as the raw dough will absorb moisture and become soggy.

Serving ideas

Serve this delicious taco pie warm, cut into generous wedges. It makes a complete and satisfying meal on its own, but it can also be paired with side dishes to stretch the meal further.

A side of cilantro-lime rice, black beans, or a simple corn salad complements the southwestern flavors perfectly. For an extra touch of indulgence, offer extra bowls of salsa, guacamole, and hot sauce at the table so guests can customize their slices.

This dish is perfect for casual family dinners, game day gatherings, or informal potlucks. The visual appeal of the colorful toppings arranged over the golden crust makes it an instant center-piece. To serve a larger crowd, the recipe can easily be doubled and baked in a larger casserole dish using a double layer of crust, or served alongside tortilla chips for scooping up any loose filling that falls onto the plate.

Frequently asked questions

Can this taco pie be made ahead of time?
The ground beef filling can be cooked and seasoned up to two days in advance. However, assemble and bake the pie just before serving to keep the crust crispy.
How is a soggy crust prevented?
Thoroughly drain the grease from the ground beef before adding it to the crust, and ensure the diced tomatoes are patted dry to remove excess moisture.
Can puff pastry be used instead of pie crust?
Yes, a sheet of thawed puff pastry works beautifully. It will yield an extra flaky, buttery crust that pairs wonderfully with the savory beef filling.

A hearty slice of cheesy taco pie being lifted from a glass dish, showing a golden crust and melted cheddar stretch.

Ingredients

  • 1 refrigerated pie crust
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded lettuce
  • 2 Roma tomatoes, diced
  • 1/4 cup sliced black olives
  • 1/2 cup sour cream

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until it is completely browned and no pink remains, about 6 to 8 minutes. Carefully drain any excess grease from the skillet to ensure the pie crust does not become soggy during baking.
  2. Reduce the heat to medium. Add the taco seasoning to the skillet, stirring well to combine. Cook the mixture for 3 to 5 minutes until the beef is fully coated and seasoned. Ensure the ground beef reaches a safe internal temperature of 160°F (71°C) before removing it from the heat.
  3. Preheat the oven to 375°F (190°C). Gently unroll the refrigerated pie crust and press it evenly into the bottom and up the sides of a 9-inch clear glass pie dish. Flute or crimp the edges of the crust with your fingers for a decorative finish.
  4. Spread the seasoned ground beef mixture evenly into the prepared pie crust. Sprinkle the shredded cheddar cheese in an even layer over the top of the beef. Place the pie dish in the preheated oven and bake for 15 to 18 minutes until the crust is golden brown and the cheese is completely melted and bubbling.
  5. Remove the pie from the oven and let it cool on a wire rack for 5 minutes. Scatter the finely shredded lettuce evenly over the melted cheese layer, followed by the diced Roma tomatoes.
  6. Arrange the sliced black olives over the tomatoes. Add a generous dollop of sour cream to the center of the pie. Slice into wedges and serve immediately while warm.
