Tips for success

For a deeper flavor, you can sear the beef roast in a hot skillet with a small amount of oil before placing it into the slow cooker. This caramelization adds a rich, toasted flavor to the exterior of the meat and contributes to a darker, more complex gravy.

If you choose to do this, ensure the skillet is very hot and sear all sides of the roast quickly to avoid overcooking the interior before it even enters the slow cooker.

If you prefer a thicker gravy, you can remove the beef once it is finished cooking and whisk in a slurry made of equal parts cornstarch and cold water into the remaining liquid in the slow cooker.

Turn the setting to high and heat for an additional 15 to 20 minutes until the sauce has reached your desired consistency. This simple step can turn your cooking liquid into a luxurious, restaurant-style gravy that pairs perfectly with the tender beef.

Variations

  • Spicy Pot Roast: Add a tablespoon of chopped pickled jalapeños or a teaspoon of red pepper flakes to the liquid before cooking for a subtle, warming heat that complements the savory gravy.
  • Root Vegetable Roast: Add two cups of peeled and chopped carrots and potatoes to the slow cooker along with the beef for a complete, one-pot meal that requires no additional side dishes.

Storage and make-ahead

Fridge
Store in an airtight container for up to 3 days.
Freezer
Store in a freezer-safe container for up to 3 months.
Reheat
Reheat in a saucepan over low heat or in the microwave until hot throughout.

If you have leftovers, allow the meat and gravy to cool for no more than 2 hours before placing them into airtight containers. Properly stored, the roast will stay fresh in the refrigerator for up to 3 days. When storing, try to keep the meat submerged in some of the gravy to prevent it from drying out; this helps preserve the texture and moisture content of the beef for when you are ready to eat it again.

This dish is perfect for make-ahead meal planning. You can assemble the ingredients in the slow cooker insert the night before, cover it, and keep it in the refrigerator. In the morning, simply place the insert into the slow cooker base and start the cooking process.

Alternatively, you can cook the roast completely, shred it, and store it in the refrigerator to reheat later, which often allows the flavors to meld and deepen even further.

Serving ideas

Serve this pot roast hot, ideally with a side of creamy mashed potatoes or roasted root vegetables to soak up the savory gravy. A simple green salad with a vinaigrette dressing provides a nice, crisp contrast to the rich, slow-cooked meat. For a more casual meal, the shredded beef is excellent served on toasted buns as a sandwich, topped with a few pickled onions or a dollop of coleslaw to add a bright, tangy crunch.

When plating, spoon a generous amount of the gravy over the shredded beef to keep it moist and flavorful. You can also garnish the dish with fresh chopped parsley or chives to add a pop of color and a light, fresh note that cuts through the richness of the gravy.

If you are serving a crowd, placing the shredded beef on a large platter allows guests to help themselves, and you can keep the gravy in a separate bowl for easy serving.

Frequently asked questions

Can this recipe be made with a different cut of beef?
Yes, other tough cuts like a bottom round roast or a rump roast will work well. The key is to choose a cut that benefits from long, slow cooking to break down the connective tissues.
Is it necessary to add water if the gravy seems too thick?
The beef will release a significant amount of juice during the cooking process. If you find the gravy is too thick after cooking, you can stir in a small amount of beef broth or water to reach your desired consistency.
Can this be cooked on high instead of low?
It is possible to cook on high for 4 hours, but low and slow is generally preferred for this type of roast. Cooking on low allows for more even heat distribution and results in a more tender, succulent outcome.

Ingredients

  • 3 lb beef chuck roast
  • 1 packet ranch seasoning mix
  • 1 packet brown gravy mix
  • 1 cup beef broth

Instructions

  1. Place the raw beef chuck roast into the bottom of the slow cooker insert. Ensure the meat is positioned centrally to allow for even cooking throughout the process.
  2. Sprinkle the entire packet of ranch seasoning and the packet of brown gravy mix evenly over the top of the beef. Pour the beef broth over the seasonings to help distribute the flavors.
  3. Cover the slow cooker and cook on low for 8 hours. Once the time is up, ensure the beef has reached at least 145°F (63°C) internally. Remove the roast to a cutting board, let it rest at least 3 minutes, then shred the meat using two forks and serve with the gravy.
