Tips for success
For an extra golden finish, brush the tops of the pastries with a little beaten egg wash before baking. This gives the pastry a professional sheen and a deeper color. Be careful to apply the wash only to the top, avoiding the cut edges, as this can sometimes prevent the layers from rising as high as they should.
If you prefer a more savory profile, sprinkle a tiny amount of dried herbs like thyme or rosemary over the cheese before folding the pastry.
This adds a subtle aromatic quality that complements the richness of the Gruyere. Keep the additions minimal to ensure the pastry remains the star of the show and the structural integrity of the pockets is maintained.
Variations
- Spinach and Feta: Replace the ham with sautéed, well-drained spinach and crumble feta cheese into the center before folding for a tangy, vegetarian alternative.
- Bacon and Cheddar: Substitute the deli ham with crispy, cooked bacon pieces and use sharp cheddar cheese for a bolder, smokier flavor profile.
Storage and make-ahead
- Fridge
- Store in an airtight container for up to 2 days.
- Freezer
- Freeze unbaked, assembled pockets on a tray, then transfer to a bag for up to 1 month. Bake from frozen, adding 5 minutes to the time.
- Reheat
- Reheat in a 350°F oven for 8 to 10 minutes until warmed through and crisp.
If any pastries remain, store them in an airtight container at room temperature for no more than two hours before transferring them to the refrigerator.
They can be kept in the refrigerator for up to two days. Note that the puff pastry will lose its initial crispness once refrigerated, so reheating is necessary to restore the desired texture.
You can assemble the pockets up to four hours in advance and keep them on the baking sheet in the refrigerator. Cover them loosely with plastic wrap to prevent the pastry from drying out.
When ready to serve, simply transfer the cold tray directly into the preheated oven. This makes them a convenient option for entertaining, as the final step requires minimal effort.
Serving ideas
Serve the pastries warm, ideally within ten minutes of coming out of the oven. This ensures the cheese is perfectly gooey and the pastry is at its peak flakiness. They are excellent as a standalone appetizer or paired with a crisp, acidic side salad to balance the richness of the butter and cheese.
For a more substantial presentation, arrange the pastries on a decorative platter and garnish with fresh herbs like parsley. Provide napkins, as the pastry is naturally flaky and can be crumbly when eaten.
These pockets are best enjoyed immediately, as the texture of the puff pastry changes significantly as it cools down to room temperature.
