Tips for success
To take this simple casserole to the next level, focus on the quality of your cheese. Freshly grating a block of sharp or extra-sharp cheddar cheese makes a massive difference in both flavor and texture.
Pre-shredded cheeses are coated with potato starch or cellulose to prevent clumping, which also prevents them from melting into the ultra-gooey, stretchy texture shown in the video. Grating your own cheese ensures a smooth, glossy melt that browns beautifully in the oven.
If you prefer a softer, more integrated texture, you can lightly fry the corn tortillas in a small amount of oil for just a few seconds on each side before layering them.
This process, known as passing the tortillas through oil, helps them resist absorbing too much sauce and keeps them from breaking down completely. However, if you want a quicker and lighter preparation, using them straight from the package works wonderfully and yields a tender, noodle-like consistency.
Variations
- Spicy Pepper Jack: Swap the cheddar cheese for shredded pepper jack cheese to add a spicy kick and a creamy melt to the layers of the casserole.
- Black Bean and Corn: Add a layer of rinsed canned black beans and sweet corn kernels along with the shredded chicken for extra texture and color.
- Salsa Verde Swap: Use a roasted tomatillo salsa verde instead of green chili enchilada sauce for a brighter, more citrusy flavor profile.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 to 4 days.
- Freezer
- Freeze the unbaked or baked casserole tightly wrapped in foil for up to 3 months. Thaw in the fridge overnight before baking.
- Reheat
- Reheat portions in the microwave for 1 to 2 minutes, or warm the entire dish covered with foil in a 350°F (175°C) oven for 15 to 20 minutes.
To store leftovers, allow the casserole to cool completely at room temperature for no more than two hours. Cover the baking dish tightly with aluminum foil or plastic wrap, or transfer the slices to an airtight container. Store the casserole in the refrigerator for up to three to four days. The flavors will continue to develop as it sits, making the leftovers taste even better the next day.
This casserole is an excellent candidate for making ahead of time. You can fully assemble the dish, cover it tightly with plastic wrap, and store it in the refrigerator for up to twenty-four hours before baking.
When you are ready to serve, remove the plastic wrap, cover the dish with aluminum foil, and bake at 375 degrees F (190 degrees C) for thirty minutes. Remove the foil and bake for an additional ten minutes until the cheese is bubbling and golden.
Serving ideas
Serve this rich and comforting casserole hot, sliced into generous squares. Because it is a complete, satisfying meal on its own, you do not need many side dishes to accompany it.
A simple, crisp green salad tossed with a light lime vinaigrette provides a wonderful contrast to the rich, cheesy casserole. You can also serve it alongside a bowl of warm black beans or pinto beans seasoned with cumin and garlic for a classic Tex-Mex spread.
For a complete dinner experience, pair the casserole with some light, refreshing beverages that cut through the richness of the melted cheddar cheese. Slices of fresh avocado or a spoonful of cool sour cream can be offered on the side for guests to add if they wish, though the casserole is incredibly delicious exactly as it is. Serve it immediately while the cheese is at its peak meltiness and gooey texture.

Easy Green Chili Chicken Enchilada Casserole

Ingredients
- 28 oz green chili enchilada sauce
- 12 corn tortillas
- 3 cups shredded cooked chicken
- 2 1/2 cups shredded cheddar cheese
Instructions
- Preheat the oven to 375 degrees F (190 degrees C). Lightly grease a 9x13-inch baking dish with cooking spray. Pour about 1/2 cup of the green chili enchilada sauce into the bottom of the dish, spreading it evenly to coat the surface and prevent the tortillas from sticking.
- Arrange 6 corn tortillas over the sauce, overlapping them slightly to cover the bottom of the baking dish completely. Cut or tear the tortillas if necessary to fit the corners of the dish perfectly.
- Evenly distribute 1 1/2 cups of the shredded cooked chicken over the tortilla layer. Top the chicken with 1 cup of the shredded cheddar cheese, spreading it evenly to the edges.
- Pour 1 cup of the green chili enchilada sauce over the cheese. Repeat the layers by placing the remaining 6 corn tortillas on top, followed by the remaining 1 1/2 cups of shredded cooked chicken, 1 cup of green chili enchilada sauce, and the remaining 1 1/2 cups of shredded cheddar cheese.
- Place the baking dish in the preheated oven and bake uncovered for 20 to 25 minutes. The casserole is ready when the edges are bubbling vigorously and the cheese on top is completely melted and golden brown in spots.
- Remove the casserole from the oven and let it rest for 10 minutes before slicing. Use a sharp knife to cut into portions, and lift each slice carefully with a spatula to serve.
