Tips for success
For extra crispy edges, you can transfer the cooked casserole to a baking dish and broil for 2–3 minutes, but this is optional.
If you prefer a spicier dish, add more pickled jalapeños or a dash of hot sauce before serving. The casserole is quite rich, so a light side salad or steamed vegetables balance it well.
To make this a complete meal, serve with a dollop of sour cream or guacamole. The leftovers are excellent for lunch the next day—just reheat in the microwave or on the stovetop.
This recipe is also great for parties; keep the slow cooker on warm and let guests serve themselves.
Variations
- Spicy Chorizo Version: Swap the bacon for cooked chorizo sausage. Use 1 cup crumbled cooked chorizo in place of bacon. Add an extra 1/4 cup pickled jalapeños for more heat. The chorizo adds a smoky, spicy depth that pairs well with the cheese.
- Veggie Loaded: Add 1 cup of sautéed bell peppers and onions along with the tots. Use a vegetarian bacon substitute or omit the bacon entirely. Increase the nacho cheese sauce to 1 1/2 cups to keep it creamy. Top with extra fresh tomatoes and green onions.
- BBQ Chicken Tater Tot Casserole: Add 2 cups of shredded cooked chicken mixed with 1/2 cup barbecue sauce. Layer the chicken mixture between the tots and cheese. Reduce the pickled jalapeños to 1/4 cup to let the BBQ flavor shine. Serve with extra BBQ sauce on the side.
- Loaded Breakfast Casserole: Add 6 beaten eggs mixed with 1/4 cup milk to the slow cooker along with the other ingredients. Cook on high for 3 hours, or until the eggs are set. This turns the casserole into a hearty breakfast dish. Serve with hot sauce on the side.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop with a splash of milk to restore creaminess.
- Freezer
- Freeze the fully cooked casserole in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat thawed casserole in a 350°F (175°C) oven for 20–25 minutes, or microwave individual portions for 1–2 minutes until hot.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The casserole will thicken as it cools; reheat gently in the microwave or on the stovetop with a splash of milk to restore creaminess. For best texture, reheat only the portion you plan to eat.
You can assemble the casserole in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook on high as directed.
You may need to add 15–20 minutes to the cooking time since the ingredients start cold. Alternatively, cook the casserole fully, then refrigerate and reheat in the slow cooker or oven.
Serving ideas
Serve this casserole hot, straight from the slow cooker, with a large spoon for scooping.
The green onions and diced tomatoes on top add a fresh crunch that contrasts with the creamy, cheesy base. It’s a hearty main dish that pairs well with a simple green salad or coleslaw.
For a fun presentation, set out bowls of extra toppings like sour cream, salsa, or additional jalapeños so everyone can customize their serving. This casserole is also great for potlucks or game-day spreads—keep it warm in the slow cooker and let guests help themselves.

Crockpot Loaded Tater Tot Casserole: 30-Minute Prep

Ingredients
- 32 oz frozen crispy tater tots
- 2 cups sharp cheddar cheese, shredded
- 1 cup warm nacho cheese sauce
- 1 cup crumbled cooked bacon
- 1/2 cup sour cream
- 1/2 cup pickled jalapeño slices
- 1/4 cup sliced green onions
- 1/2 cup diced tomatoes
Instructions
- Place the frozen tater tots in a 6-quart slow cooker. Sprinkle the shredded sharp cheddar cheese over the tots, then pour the warm nacho cheese sauce over the top. Add the crumbled cooked bacon and sour cream, and stir gently to coat the tots evenly.
- Scatter the pickled jalapeño slices over the top of the casserole. Do not stir them in; they will soften and infuse the dish as it cooks.
- Cover the slow cooker and cook on HIGH for 2 1/2 hours. Do not lift the lid during the first 2 hours to allow the heat to build up. After 2 hours, check the casserole; it should be bubbling around the edges and the tots tender-crisp.
- Once the casserole is bubbling and the tots are cooked through, sprinkle with sliced green onions and diced tomatoes. Serve hot directly from the slow cooker, scooping out portions with a large spoon.
