Before you start

Before starting, ensure your slow cooker is clean and ready. Take the refrigerated cinnamon rolls out of the refrigerator just before you are ready to cut them, as they are easier to handle when cold.

Have all your custard ingredients measured and ready in a single bowl to ensure a smooth assembly process. Ensure your toasted pecans are prepared in advance so they are ready for the final garnish as soon as the casserole finishes cooking and the icing is drizzled over the top.

Ingredients at a glance (7)
  • 2 cans refrigerated jumbo cinnamon rolls, quartered
  • 6 large eggs, whisked
  • 1 cup heavy cream
  • 1/4 cup maple syrup
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 cup toasted pecans, for serving

Instructions

Dough Preparation

  1. Prepare the dough
Open the two cans of refrigerated jumbo cinnamon rolls. Using a sharp knife or kitchen shears, cut each roll into quarters. Grease the inside of your slow cooker insert generously with non-stick spray or butter, then add the quartered cinnamon roll pieces, spreading them out evenly across the bottom of the ceramic pot to ensure they cook consistently.
Look for The rolls are evenly distributed in the cooker.
Tip Cut the rolls into uniform pieces to promote even cooking throughout the casserole.

The cinnamon rolls are neatly quartered and arranged in a single layer in the greased slow cooker insert. The rolls should be spread out to cover the base, providing a consistent foundation for the custard to soak into.

Check that the insert is sufficiently greased to prevent the sugar-rich dough from sticking during the long cooking cycle, which is essential for easy serving later.

Custard Integration

  1. Whisk and pour the custard
In a medium mixing bowl, combine the eggs, heavy cream, maple syrup, ground cinnamon, and vanilla extract. Whisk the mixture vigorously until completely smooth and combined. Pour this custard mixture evenly over the quartered cinnamon rolls in the slow cooker, ensuring all pieces are moistened.
Look for The liquid is well-combined and poured over the dough.
Tip Make sure to scrape the bowl to get all the cinnamon into the pot.

The egg, cream, and spice mixture is fully incorporated and poured evenly over the dough. Every piece of cinnamon roll should be coated in the liquid, which will help it rise and set into a cohesive casserole. The mixture should look uniform, with the cinnamon and vanilla well distributed, ensuring that every bite will have a balanced, aromatic flavor profile throughout the dish.

Slow Cooking and Glazing

  1. Slow cook and glaze
Cover the slow cooker with the lid. Cook on LOW for three hours. The casserole is done when the center is set and fluffy and the edges are caramelized. Once cooked, drizzle the reserved icing from the cinnamon roll packages over the top and garnish with toasted pecans. Serve warm. To cook the eggs through to a safe internal temperature, ensure they reach 160°F (71°C) in the center.
Look for The center is puffed and the edges appear golden brown.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Avoid lifting the lid during the first two hours to maintain consistent heat.

The casserole has finished its three-hour cycle on low. The edges are beautifully caramelized, and the center is set and fluffy. Once finished, the icing is drizzled over the top, melting slightly into the warm crevices of the casserole, and the toasted pecans are added for a final textural contrast. The dish is now ready to be scooped and served immediately while still warm.

Common mistakes

A common mistake is overcrowding the slow cooker or using rolls that are too small, which can lead to a dense or mushy texture rather than the desired fluffy, layered casserole. Another error is lifting the lid too frequently during the cooking process.

Each time the lid is removed, heat escapes, which can significantly extend the cooking time and disrupt the delicate caramelization of the edges. Finally, ensure the eggs and cream are whisked thoroughly; uneven mixing can result in pockets of unseasoned custard.

How to tell it’s done

To determine if the casserole is finished, the center should be puffed and firm to the touch, indicating that the egg custard has fully set. The edges should appear deep golden brown and slightly caramelized from the slow cooking process.

Using a food thermometer, check the center of the bake to ensure it has reached a safe internal temperature of 160°F (71°C). The aroma should be intensely sweet and fragrant with cinnamon throughout the entire kitchen.
