Tips for success
Work with one truffle at a time during the dipping and decorating phase to ensure the candy eye is applied before the chocolate begins to set.
If the melted white chocolate starts to thicken in the bowl halfway through the process, warm it briefly for five to ten seconds to restore a fluid dipping consistency.
To give the truffles a cleaner look, slide the base of the fork across the rim of the bowl after dipping each ball. This removes drips from the underside and helps prevent a wide pool of chocolate from spreading around the bottom of each finished piece on the parchment paper.
Variations
- Dark Chocolate Eyeballs: Coat the cookie balls in melted dark chocolate instead of white chocolate for a dramatic, cocoa-rich variation that still holds candy eyes neatly.
- Double Eyeball Truffles: Place two smaller candy eyes side by side onto each dipped truffle ball while wet to create playful monster-style confections.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 5 days.
- Freezer
- Freeze in a single layer in an airtight container for up to 1 month.
Store the finished truffles in an airtight container placed in a cool, dry area or inside the refrigerator to preserve the crispness of the outer shell.
Separate multiple layers with parchment paper so the candy eyes and chocolate coatings remain intact and do not scuff during storage.
These truffles can be prepared entirely up to three days in advance. Once the chocolate shell has fully hardened, seal them in an airtight container and store in the refrigerator.
Bring them to cool room temperature just before serving to allow the rich flavors to soften slightly.
Serving ideas
Arrange these finished eyeballs on a plain white serving platter or a dark slate board to make the contrasting colors stand out clearly. They can also be placed into individual mini paper baking cups, which makes serving sanitary and convenient for guests at a dessert buffet.
These bite-sized confections pair well with cold milk, hot espresso, or unsweetened coffee, which helps balance the sweetness of the white chocolate.
Keep the platter away from direct heat sources or warm sunlight to prevent the chocolate coating from softening during the event.

Ingredients
- 12 dark cookie truffle balls, store-bought or made ahead
- 10 oz white chocolate, melted
- 12 candy eyes
Instructions
- Line a dark baking sheet with parchment paper. Place the dark cookie truffle balls in neat rows across the prepared baking sheet so they are organized and ready for dipping.
- Melt the white chocolate in a clear glass bowl until completely smooth. Using a fork, submerge each cookie truffle ball into the melted white chocolate until thoroughly coated, lift it out while letting excess chocolate drip through the tines, and return it to the parchment-lined sheet.
- While the white chocolate coating remains wet, press one candy eye onto the center of each coated truffle ball. Allow the finished truffle eyeballs to rest undisturbed until the white chocolate shell sets completely firm.
