Tips for success
For the best texture, serve these brownies straight from the refrigerator. The cold chocolate shell snaps loudly, and the kataifi stays extra crunchy.
If you prefer a slightly softer shell, let them sit at room temperature for 5-10 minutes before serving. Use a serrated knife or a chef's knife with a thin blade to cut through the layers cleanly, wiping the blade between cuts.
To make the brownies even more indulgent, drizzle with extra melted chocolate or sprinkle with chopped pistachios before the chocolate sets. If you want a more intense pistachio flavor, add a few drops of pistachio extract to the pistachio cream.
For a dairy-free version, use dairy-free brownies, dairy-free pistachio cream, and vegan chocolate, but note that the butter for toasting must be replaced with a plant-based alternative.
Variations
- Nut-Free Option: Replace pistachio cream with a sunflower seed butter and use toasted shredded phyllo without nuts. Omit pistachios entirely, and use a nut-free chocolate. This version is safe for those with tree nut allergies.
- White Chocolate Shell: Swap the dark chocolate for white chocolate and coconut oil. The white chocolate will create a sweeter, creamier shell that contrasts beautifully with the pistachio layer. Reduce the amount of sugar in the brownie base if desired.
- Salted Caramel Drizzle: After pouring the chocolate shell, drizzle with warm salted caramel and swirl gently with a knife. The caramel adds a gooey, salty-sweet layer that complements the pistachio and chocolate. Use a store-bought or homemade caramel sauce.
- Spiced Chocolate: Add 1/2 teaspoon of ground cinnamon or a pinch of cayenne pepper to the melted chocolate for a warm, spicy kick. This variation pairs well with the pistachio and adds an unexpected depth of flavor.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 5 days. Keep chilled to maintain the crunch.
- Freezer
- Wrap individually and freeze for up to 2 months. Thaw in the refrigerator overnight.
- Reheat
- No reheating needed; serve cold for best texture. If desired, let sit at room temperature for 5 minutes.
Store leftover brownies in an airtight container in the refrigerator for up to 5 days. The layers will remain intact, and the chocolate will stay firm.
For longer storage, wrap individual brownies in plastic wrap and place in a freezer-safe bag or container. Thaw in the refrigerator overnight before serving.
These brownies can be assembled up to 2 days ahead. Prepare the brownie base, toast the kataifi, and assemble the layers. Keep the assembled brownies in the refrigerator, covered, until ready to serve. The chocolate shell will remain set and shiny.
Serving ideas
Serve the brownies cold for the best crunch, directly from the refrigerator. Cut into squares and arrange on a platter.
They are perfect for parties, potlucks, or as a special treat with coffee or tea. The dramatic layers make them a stunning centerpiece for a dessert table.
For a more elegant presentation, dust with a little powdered sugar or cocoa powder just before serving. Pair with a scoop of vanilla ice cream or a dollop of whipped cream to balance the richness. The contrast of hot and cold, creamy and crunchy, makes each bite memorable.

Crunchy Dubai Pistachio Kataifi Brownies

Ingredients
- 1 batch dark fudge brownies, baked and cooled
- 1 1/2 cups kataifi dough, thawed
- 3 tbsp unsalted butter, melted
- 1 cup pistachio cream
- 8 oz dark couverture chocolate, chopped
- 1 tbsp coconut oil
Instructions
- Bake a batch of dark fudge brownies in a 9x9-inch pan according to your favorite recipe. Allow them to cool completely in the pan. Once cool, place the pan in the refrigerator for at least 1 hour to make the brownies firm and easier to top.
- Preheat the oven to 350°F (175°C). Spread the thawed kataifi dough on a baking sheet and drizzle with melted butter. Toss to coat. Bake for 8-10 minutes, stirring once, until golden and crispy. Remove from the oven and let cool completely.
- In a medium bowl, combine the toasted kataifi with the pistachio cream. Stir until the kataifi is evenly coated and the mixture holds together when pressed.
- Remove the chilled brownies from the refrigerator. Using an offset spatula, press the pistachio-kataifi mixture evenly over the top of the brownies. Press firmly to create a compact layer.
- Place the chopped dark couverture chocolate and coconut oil in a heatproof bowl. Set over a pan of simmering water (double boiler) and stir until melted and smooth. Alternatively, microwave in 20-second bursts, stirring between each.
- Pour the melted chocolate over the pistachio layer. Use the offset spatula to spread it evenly to the edges, creating a smooth, glossy top.
- Place the pan in the refrigerator for at least 20 minutes, until the chocolate shell is completely set and firm to the touch.
- Remove the pan from the refrigerator. Using a sharp chef's knife, slice into 12 squares. Wipe the knife clean between cuts for neat edges. Serve immediately, or let sit for a few minutes to slightly soften the chocolate for easier cutting.
