Before you start
Before starting, bake a batch of dark fudge brownies and let them cool completely. Chill the brownies in the pan for at least 1 hour to firm them up. Thaw the kataifi dough if frozen, and measure all ingredients.
Preheat the oven to 350°F (175°C) for toasting the kataifi. Have the pistachio cream at room temperature for easier mixing. Prepare a double boiler or microwave for melting the chocolate. Line a baking sheet with parchment paper for the kataifi.
Ingredients at a glance (6)
- 1 batch dark fudge brownies, baked and cooled
- 1 1/2 cups kataifi dough, thawed
- 3 tbsp unsalted butter, melted
- 1 cup pistachio cream
- 8 oz dark couverture chocolate, chopped
- 1 tbsp coconut oil
Instructions
Build the Layers
- Prepare the Brownie BaseBake a batch of dark fudge brownies in a 9x9-inch pan according to your favorite recipe. Allow them to cool completely in the pan. Once cool, place the pan in the refrigerator for at least 1 hour to make the brownies firm and easier to top.Look for Brownies are fully cooled and firm to the touch.Tip Chilling the brownies prevents the pistachio layer from sinking in.
- Toast the KataifiPreheat the oven to 350°F (175°C). Spread the thawed kataifi dough on a baking sheet and drizzle with melted butter. Toss to coat. Bake for 8-10 minutes, stirring once, until golden and crispy. Remove from the oven and let cool completely.Look for Kataifi is golden brown and crunchy, with a nutty aroma.Tip Stir halfway through baking for even toasting.
- Mix the Pistachio LayerIn a medium bowl, combine the toasted kataifi with the pistachio cream. Stir until the kataifi is evenly coated and the mixture holds together when pressed.Look for The mixture is clumpy and well combined, with a vibrant green color.Tip Use a spatula to press the mixture into the pan later.
At the end of this phase, the brownie base is chilled and firm, the kataifi is toasted to a golden crunch, and the pistachio mixture is ready. The kitchen smells of toasted butter and nuts. The kataifi should be crisp and not chewy, and the pistachio cream should be well incorporated.
Add the Toppings
- Spread the Pistachio LayerRemove the chilled brownies from the refrigerator. Using an offset spatula, press the pistachio-kataifi mixture evenly over the top of the brownies. Press firmly to create a compact layer.Look for The pistachio layer is smooth and covers the entire brownie surface.Tip Pressing firmly helps the layer adhere when slicing.
- Melt the ChocolatePlace the chopped dark couverture chocolate and coconut oil in a heatproof bowl. Set over a pan of simmering water (double boiler) and stir until melted and smooth. Alternatively, microwave in 20-second bursts, stirring between each.Look for Chocolate is glossy and fully melted with no lumps.Tip Do not overheat; chocolate should be just melted and warm.
- Pour the Chocolate ShellPour the melted chocolate over the pistachio layer. Use the offset spatula to spread it evenly to the edges, creating a smooth, glossy top.Look for The chocolate layer is even and shiny, covering the pistachio layer completely.Tip Work quickly before the chocolate sets.
The pistachio layer is evenly spread over the brownies, and the melted chocolate is poured smoothly over the top. The surface is glossy and even, with no bare spots. The chocolate should be fluid but not hot, and the layers should be level for a professional finish.
Set and Slice
- Chill to SetPlace the pan in the refrigerator for at least 20 minutes, until the chocolate shell is completely set and firm to the touch.Look for The chocolate is hard and cracks when pressed lightly.Tip Chilling longer makes slicing easier.
- Slice and ServeRemove the pan from the refrigerator. Using a sharp chef's knife, slice into 12 squares. Wipe the knife clean between cuts for neat edges. Serve immediately, or let sit for a few minutes to slightly soften the chocolate for easier cutting.Look for Clean cuts with visible layers: fudge, green pistachio, and dark chocolate.Tip For the loudest crunch, serve straight from the fridge.
The chocolate shell is completely set and hard to the touch. When you press it, it does not give. Slicing produces clean edges with a visible cross-section: dark chocolate, bright green pistachio, and fudgy brownie. The first bite should produce a loud crackle.
Common mistakes
One common mistake is not chilling the brownies before adding the toppings, which can cause the pistachio layer to sink into the soft base. Ensure the brownies are fully cooled and refrigerated for at least 1 hour.
Another issue is over-toasting the kataifi, which can become bitter; watch it closely and stir often. When melting chocolate, avoid overheating, as it can seize and become grainy.
Finally, use a sharp knife and wipe it clean between cuts to get neat squares without dragging the layers.
How to tell it’s done
The brownies are done when the chocolate shell is firm to the touch and cracks slightly when pressed. The kataifi layer should be golden brown and crispy, and the pistachio cream should be fully set.
When sliced, the layers should hold together, with a clean cut showing the fudge base, green pistachio layer, and dark chocolate top. The brownies are best served chilled for the maximum crunch, but can sit at room temperature for a few minutes to soften slightly for easier cutting.
