Before you start

Before you start, make sure the kadayıf is at room temperature and the butter is melted. Prepare your Turkish coffee cups or ramekins by greasing them lightly. Have all ingredients measured and ready.

The syrup should be made and chilled while the kadayıf bakes, so plan accordingly. You'll also need a baking dish large enough to hold the nests in a single layer for the soaking step.

Ingredients at a glance (9)
  • 400 g raw kadayıf (shredded phyllo)
  • 200 g unsalted butter, melted
  • 1/2 cup shelled pistachios, roughly chopped
  • 200 g white chocolate, chopped
  • 1 1/2 cups whole milk
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 60 g dark chocolate, for shaving
  • 1/4 cup shelled pistachios, finely chopped

Instructions

Preparing the Pastry

  1. Prepare the Kadayıf
Heat the oven to 325°F (160°C). Place the raw kadayıf in a large bowl and use your hands to gently separate and shred the strands. Pour the melted butter over the kadayıf and toss thoroughly with your fingers or two forks, making sure every strand is coated with butter. The strands should look glossy and separate easily.
Look for The kadayıf should be evenly buttered, with no dry clumps.
Tip Work gently to avoid crushing the delicate strands.
  2. Form the Nests
Lightly grease eight small Turkish coffee cups or ramekins. Press a portion of the buttered kadayıf into each cup, pressing firmly to create a compact nest shape. Sprinkle a generous pinch of chopped pistachios into the center of each nest, then press more kadayıf on top to enclose the nuts. Place the filled cups in a baking dish.
Look for The nests should hold their shape when pressed.
Tip Use the back of a spoon to compact the kadayıf evenly.

The kadayıf strands are evenly coated with butter, glossy and separate easily. The nests are firmly packed and hold their shape. The pistachios are hidden inside, ready to add a surprise crunch.

Baking and Syrup

  1. Bake the Kadayıf
Bake the kadayıf nests in the preheated oven for 25-30 minutes, until they are deeply golden and crisp. The edges should look brown and slightly caramelized. Remove from the oven and let them cool for 5 minutes in the cups, then carefully turn them out onto a cooling rack.
Look for The nests should be golden brown all over and feel crisp to the touch.
Tip If the nests are not browning evenly, rotate the baking dish halfway through.
  2. Make the Syrup
While the kadayıf bakes, combine the white chocolate, whole milk, sugar, and vanilla extract in a small saucepan. Heat over medium-low, stirring constantly, until the chocolate is melted and the sugar is dissolved. Do not let the mixture boil. Remove from heat and let the syrup cool completely, then refrigerate until chilled.
Look for The syrup should be smooth, glossy, and completely cool.
Tip Chilling the syrup is essential for the hot-cold contrast.

The nests are golden brown and crisp, filling the kitchen with a buttery aroma. The syrup is smooth and chilled, with the white chocolate fully melted and the sugar dissolved. The contrast of hot pastry and cold syrup is about to happen.

Soaking and Chilling

  1. Soak the Hot Nests
Place the warm kadayıf nests in a shallow baking dish. Pour the cold white chocolate milk syrup over the hot nests in three gradual rounds, waiting a few seconds between each pour so the syrup soaks in slowly. The pastry will sizzle gently as it absorbs the cold liquid. Let the nests sit and absorb all the syrup.
Look for The nests should be moist but not swimming in syrup.
Tip Pour slowly to avoid oversaturating the pastry.
  2. Chill and Garnish
Transfer the syrup-soaked kadayıf nests to a serving platter or individual plates. Cover loosely and refrigerate for at least 2 hours, until completely chilled and set. Before serving, grate the dark chocolate over the top and sprinkle with the finely chopped pistachios.
Look for The nests should be cold and firm, with a crunchy exterior.
Tip Use a microplane for fine chocolate shavings.

The syrup is absorbed gradually, creating a gentle sizzle. The nests are moist but not soggy, and after chilling, they are cold and set. The dark chocolate shavings and pistachios add the final touch of color and texture.

Common mistakes

One common mistake is over-soaking the kadayıf, which can make it mushy. Pour the syrup gradually and stop when the pastry is moist but not swimming.

Another pitfall is not baking the nests long enough; they need to be deeply golden to achieve the desired crunch.

Also, be sure to chill the syrup completely—warm syrup will make the pastry soggy instead of creating the hot-cold contrast.

How to tell it’s done

The kadayıf nests are done when they are deeply golden brown and feel crisp to the touch. The syrup is ready when the white chocolate is fully melted and the mixture is smooth.

After chilling, the nests should be firm and cold, with the syrup fully absorbed. There is no protein in this recipe, so no internal temperature check is needed.
