Five ingredients, one slow cooker, and dinner handles itself. Turkey tenderloin strips braise with green and red peppers, onions, garlic powder, soy sauce and broth until everything turns soft, savory and glossed with a thick brown sauce. The prep takes fifteen minutes in the morning; the crockpot does every other job, and the kitchen smells like a takeout counter by evening.
This is pepper steak built for a slow cooker and made with turkey instead of beef. Strips of turkey tenderloin go into the crock first, then a generous heap of bell pepper and onion strips, a scatter of garlic powder, and a pour of soy sauce thinned with broth.
Four hours on low and the turkey is tender all the way through, the vegetables are silky, and the cooking liquid has turned into a savory brown sauce that clings to every piece.
It is the kind of recipe that asks almost nothing of the cook: slice, layer, pour, cover, walk away. Serve it over rice, noodles or mashed potatoes, or straight from the crock with a fork. The ingredient list is short on purpose, and every item in it does real work.
Ingredients
- 1 1/2 lb turkey tenderloin, cut into strips
- 3 bell peppers, green and red, cut into strips
- 1 yellow onion, cut into strips
- 1 tsp garlic powder
- 1/3 cup soy sauce
- 2/3 cup chicken broth
Why this recipe works
Slow braising is the right method for turkey tenderloin, a lean cut that dries out fast under high heat. In a slow cooker, the strips sit mostly submerged in soy sauce, broth and the juices the vegetables release, held at a steady low temperature.
The connective tissue softens and the muscle fibers relax without squeezing out their moisture, so lean turkey comes out tender instead of chalky — the same reason pot roast works, applied to a cut that needs the help.
The sauce builds itself during the cook. Soy sauce brings salt and deep savory flavor; broth dilutes it to the right strength; the peppers and onions give up their own liquid and sweetness as they soften, rounding the saltiness into something brown and glossy.
Garlic powder, scattered dry on top, disperses evenly through the liquid without the burnt edge raw garlic can get in a long cook. By the end, the sauce needs nothing added — just a short uncovered rest on warm to reduce and cling.
Notes and substitutions
Turkey tenderloin is the cut to look for: boneless, skinless, already trimmed, and easy to slice into uniform strips. Turkey breast works too, as does chicken breast or thigh, all cooked the same way. For the peppers, one green and one or two red gives the best color and a balance of grassy and sweet; any combination is fine. Yellow onion holds its shape better than sweet onion over four hours of braising.
A 5- to 6-quart oval slow cooker is the right size; smaller and the layers stack too high, larger and the liquid spreads thin. Regular soy sauce brings salt and gluten, so use tamari if wheat is a concern — the flavor is nearly identical. No salt is added anywhere else in the recipe, so taste before adjusting. Anything extra, from cornstarch to hot sauce, is a choice made at the table, not in the crock.
- turkey tenderloin: Turkey breast cut into strips works the same; chicken breast or thighs are also good and cook at the same temperature.
- chicken broth: Beef or vegetable broth can be used; beef broth deepens the color of the sauce, vegetable broth keeps it milder.
- soy sauce: Tamari gives the same savory depth with no wheat; use the same amount and check the label if gluten matters.
- bell peppers: Any color of bell pepper works; add a poblano or a small hot pepper for gentle heat.
