Tips for success
For the best flavor, use a high-quality smoked kielbasa with a good amount of fat; it keeps the dish moist and adds depth. If you prefer a spicier kick, substitute andouille sausage or add a pinch of red pepper flakes.
The tortellini can be swapped for cheese-filled ravioli for a different texture. Always check the tortellini at the minimum cooking time to avoid overcooking.
To make the sauce extra creamy, stir in a splash of heavy cream or a pat of butter just before serving.
If you have leftovers, they will thicken as they sit; add a little milk or broth when reheating to restore the saucy consistency. This dish is best enjoyed fresh, but it can be stored in the refrigerator for up to 3 days.
Variations
- Spicy Andouille: Swap the kielbasa for andouille sausage and add a pinch of cayenne pepper for a smoky, spicy twist. The andouille's bold flavors will shine through the creamy sauce.
- Chicken and Broccoli: Replace kielbasa with cooked chicken breast and add 2 cups of broccoli florets. Use a garlic Alfredo sauce and top with extra provolone for a chicken broccoli alfredo vibe.
- Vegetarian Mushroom: Omit the kielbasa and double the mushrooms. Add a can of drained cannellini beans for protein. The creamy sauce and cheese make this a satisfying meatless meal.
- Cheesy Ravioli Bake: Use cheese ravioli instead of tortellini and add a layer of marinara sauce along with the Alfredo for a rosé sauce. Top with mozzarella instead of provolone.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. The sauce will thicken; add a splash of milk when reheating.
- Freezer
- Freeze in an airtight container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave in 1-minute increments, stirring between, or in a saucepan over medium heat with a splash of milk or broth until hot.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
The pasta will absorb some sauce, so add a splash of milk or broth when reheating to bring back the creamy texture. Reheat gently in the microwave or on the stovetop until heated through.
This recipe is ideal for meal prep. Assemble all the ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook on low as directed. You may need to add 15-20 minutes to the cooking time if starting from cold.
Serving ideas
Serve this hearty pasta dish as a main course with a side of crusty bread or a simple green salad. The creamy sauce pairs well with a light vinaigrette to cut through the richness. For a complete meal, add steamed broccoli or roasted asparagus on the side.
This dish is also great for potlucks or family gatherings. Keep it warm in the slow cooker on the 'keep warm' setting and let guests serve themselves. Top with extra shredded provolone or fresh herbs before serving for a polished presentation.

Crockpot Provolone Kielbasa Spinach Tortellini

Ingredients
- 2 lb smoked kielbasa, sliced into 1/2-inch rounds
- 20 oz refrigerated spinach-and-cheese tortellini
- 8 oz cremini mushrooms, sliced
- 15 oz Alfredo sauce
- 1 cup whole-milk ricotta cheese
- 2 cups shredded provolone cheese
Instructions
- Place the sliced kielbasa in an even layer in the bottom of a 6-quart slow cooker. Add the tortellini, mushrooms, and Alfredo sauce, gently stirring to coat everything. Dollop the ricotta over the top and sprinkle with the shredded provolone.
- Cover the slow cooker and cook on low for 3 to 4 hours, until the tortellini are tender and the sauce is bubbling. Stir gently once halfway through to redistribute the sauce and prevent sticking. Let it rest for 3 minutes before slicing.
- After 3 hours, check the tortellini: they should be tender but not mushy. The kielbasa should be heated through and the cheese melted. If the sauce looks too thin, leave the lid off for 10-15 minutes to thicken.
- Stir the mixture well to combine the ricotta and provolone into the sauce. The tortellini should be coated evenly and the kielbasa distributed throughout. Taste and adjust seasoning if desired.
- Spoon the hot pasta into bowls or onto plates. The cheese should be stretchy and the sauce rich. Serve immediately while steaming.
