Before you start

Before starting, slice the kielbasa into 1/2-inch rounds, slice the mushrooms if not pre-sliced, and measure the Alfredo sauce, ricotta, and provolone. Have a 6-quart slow cooker ready.

No need to pre-cook anything—just layer the ingredients as directed. If you prefer a thicker sauce, have a little milk or broth on hand to adjust consistency after cooking.

Ingredients at a glance (6)
  • 2 lb smoked kielbasa, sliced into 1/2-inch rounds
  • 20 oz refrigerated spinach-and-cheese tortellini
  • 8 oz cremini mushrooms, sliced
  • 15 oz Alfredo sauce
  • 1 cup whole-milk ricotta cheese
  • 2 cups shredded provolone cheese

Instructions

Layer and Cook

  1. Layer the Ingredients
Place the sliced kielbasa in an even layer in the bottom of a 6-quart slow cooker. Add the tortellini, mushrooms, and Alfredo sauce, gently stirring to coat everything. Dollop the ricotta over the top and sprinkle with the shredded provolone.
Look for The slow cooker should be filled with layers of sausage, pasta, and sauce.
Tip No need to pre-cook the kielbasa; it will heat through and develop flavor during cooking.
  2. Cook on Low
Cover the slow cooker and cook on low for 3 to 4 hours, until the tortellini are tender and the sauce is bubbling. Stir gently once halfway through to redistribute the sauce and prevent sticking. Let it rest for 3 minutes before slicing.
Look for The sauce should be hot and bubbling around the edges.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Resist lifting the lid too often; each peek adds cooking time.

At the end of this phase, the slow cooker is filled with layers of sausage, tortellini, mushrooms, and sauce.

The ingredients are cold but evenly distributed. The cheese is on top, ready to melt during cooking. The slow cooker is set to low and the lid is secure.

Stir and Thicken

  1. Check for Doneness
After 3 hours, check the tortellini: they should be tender but not mushy. The kielbasa should be heated through and the cheese melted. If the sauce looks too thin, leave the lid off for 10-15 minutes to thicken.
Look for The cheese is fully melted and the sauce coats the back of a spoon.
Tip If the sauce thickens too much, stir in a splash of milk or broth.
  2. Gently Stir
Stir the mixture well to combine the ricotta and provolone into the sauce. The tortellini should be coated evenly and the kielbasa distributed throughout. Taste and adjust seasoning if desired.
Look for The sauce should be creamy and uniformly colored.
Tip Use a gentle hand to avoid breaking the tortellini.

After the cooking time, the sauce is bubbling and the cheese has melted. The tortellini are tender and the kielbasa is heated through. The mixture looks creamy and cohesive, with no large pools of liquid. Stir gently to combine everything into a uniform sauce.

Serve and Enjoy

  1. Serve Hot
Spoon the hot pasta into bowls or onto plates. The cheese should be stretchy and the sauce rich. Serve immediately while steaming.
Look for Steam rises from the creamy, cheesy pasta.
Tip Garnish with fresh parsley or cracked black pepper if desired.

The finished dish is steaming, with a creamy, cheesy sauce coating every piece. The kielbasa is caramelized at the edges and the tortellini are tender. The aroma is rich and savory. Serve immediately for the best texture and flavor.

Common mistakes

One common mistake is overcooking the tortellini, which turns them mushy. Stick to the recommended cooking time and check at the low end. Another is lifting the lid frequently, which lets out heat and extends cooking time.

Also, avoid using frozen tortellini without adjusting the time; they can become waterlogged. Finally, don't skip the stir halfway through—it ensures even cooking and prevents sticking.

How to tell it’s done

The dish is done when the tortellini are tender but still hold their shape, the kielbasa is heated through, and the sauce is bubbling around the edges. The internal temperature of the kielbasa should reach at least 145°F (63°C).

The cheese should be fully melted and the sauce creamy. If the sauce seems thin, remove the lid and let it cook an additional 10-15 minutes to thicken.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
