Tips for success
For the best texture, cook the tortellini on LOW rather than HIGH. High heat can make the pasta mushy and cause the cheese to separate.
If you're short on time, you can cook on HIGH for 2–3 hours, but check frequently to avoid overcooking. The low-and-slow method gives the flavors time to meld and the sauce to thicken naturally.
Don't skip browning the sausage—it adds a depth of flavor that you can't get from just dumping it in raw. The caramelized bits from the skillet infuse the entire dish with savory richness.
If you want a crispy cheese top, after the slow cooker is done, you can place the insert under the broiler for a few minutes, but make sure the insert is oven-safe. Watch it closely to avoid burning.
Variations
- Spicy Sausage: Use hot Italian sausage instead of sweet, and add a pinch of red pepper flakes along with the marinara. The heat cuts through the creamy cheese and adds a nice kick.
- Veggie Boost: Add a cup of chopped spinach or kale along with the tortellini. The greens wilt into the sauce and add color and nutrients without overpowering the dish.
- Creamy Alfredo Twist: Replace half of the marinara with a jarred Alfredo sauce for a creamy, pink sauce that's extra indulgent. Reduce the marinara to 12 oz and add 12 oz Alfredo.
- Chicken and Pesto: Substitute cooked chicken breast for the sausage and stir in a few tablespoons of pesto along with the marinara. Top with extra Parmesan and fresh basil.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently with a splash of water or broth to restore the saucy texture.
- Freezer
- Freeze cooled leftovers in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in the microwave or on the stovetop over medium heat, adding a splash of water or broth to loosen the sauce. Stir frequently until heated through.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will absorb some sauce as it sits, so you may want to add a splash of water or extra marinara when reheating to loosen it up. Reheat gently in the microwave or on the stovetop until heated through.
You can assemble the entire dish the night before: brown the sausage, layer all the ingredients in the slow cooker insert, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook on low for 4 hours. You may need to add 30 minutes to the cooking time since the ingredients start cold.
Serving ideas
Serve this tortellini hot, straight from the slow cooker, with a generous spoonful of the cheesy sauce.
It's a complete meal on its own, but a simple green salad with a lemony vinaigrette and some crusty garlic bread would round it out nicely. For a touch of freshness, sprinkle with chopped parsley or basil right before serving.
This dish is hearty enough to be a main course, but you can also serve it as a side dish alongside grilled chicken or a simple roasted vegetable. The creamy tomato sauce pairs well with a light red wine, like a Chianti or Sangiovese. Leftovers are just as delicious the next day—if there are any!

Crockpot Parmesan Sausage Marinara Tortellini: A Set-It-and-Forget-It Dinner

Ingredients
- 1 lb sweet Italian pork sausage, casings removed
- 20 oz refrigerated three-cheese tortellini
- 24 oz crushed San Marzano marinara sauce
- 2 cups shredded Italian four-cheese blend
- 1/2 cup freshly grated Parmigiano-Reggiano
Instructions
- Heat a large skillet over medium-high heat. Add the sweet Italian sausage (casings removed) and cook, breaking it up with a wooden spoon, until browned and cooked through, about 8–10 minutes. Use a slotted spoon to transfer the sausage to the slow cooker insert, leaving any excess fat behind.
- Scatter the refrigerated three-cheese tortellini evenly over the sausage in the slow cooker. Pour the crushed San Marzano marinara sauce over the tortellini, making sure the sauce covers most of the pasta. Do not stir.
- Sprinkle the shredded Italian four-cheese blend evenly over the sauce, followed by the freshly grated Parmigiano-Reggiano. Cover the slow cooker with the lid.
- Set the slow cooker to LOW and cook for 3 to 4 hours, until the tortellini is tender and the sauce is bubbling around the edges. Do not lift the lid during the first 2 hours to keep the heat steady.
- After 3 hours, gently lift the lid and check the tortellini: it should be tender but still hold its shape. If the sauce looks too thick, stir in a splash of water or chicken broth. If the tortellini is still firm, re-cover and cook for another 30 minutes.
- Once the tortellini is cooked, stir the mixture gently to combine the sauce and cheese into a creamy, cohesive dish. Spoon the tortellini and sausage onto plates or into bowls, making sure to get plenty of the cheesy sauce. Serve hot.
