Tips for success
For the best texture, use a short pasta shape with ridges or curves that can hold onto the sauce. Farfalle is classic, but penne, rigatoni, or rotini also work well.
The key is to not overcook—check at the 3-hour mark and add time in small increments. If the sauce seems thin, let it sit uncovered for 10 minutes to thicken.
To get a golden, slightly crispy cheese top, you can switch the slow cooker to high for the last 15 minutes after stirring. This helps the cheese brown around the edges.
If you prefer a more caramelized kielbasa, you can quickly sear the medallions in a hot skillet before adding them to the slow cooker—a small extra step that adds depth.
Variations
- Spicy Sausage: Swap the smoked kielbasa for a spicy andouille or chorizo to add a kick. The smokiness and heat will complement the pesto and cheese beautifully.
- Vegetarian Version: Omit the kielbasa and add an extra cup of spinach and a can of drained chickpeas for protein. The pesto and cheese still provide plenty of flavor.
- Change the Pesto: Use sun-dried tomato pesto or arugula pesto instead of basil for a different flavor profile. Each brings its own unique color and taste.
- Add Mushrooms: Sauté 8 oz of sliced mushrooms in a little olive oil and layer them in with the kielbasa. They add an earthy depth that pairs well with the pesto.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently with a splash of water to restore the sauce's creaminess.
- Freezer
- Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator and reheat on the stovetop or microwave until hot.
- Reheat
- Reheat in the microwave in 1-minute intervals, stirring between, or in a skillet over medium heat with a splash of broth or water until heated through.
Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will absorb some sauce as it sits, so you may want to add a splash of water or broth when reheating to loosen it. Reheat in the microwave or on the stovetop until piping hot.
You can assemble the entire dish (without cooking) up to 24 hours in advance. Layer the ingredients in the slow cooker insert, cover, and refrigerate.
When ready to cook, place the insert in the slow cooker and cook on low for 3 hours, adding about 30 minutes to the cooking time to account for the cold start.
Serving ideas
Serve this pasta straight from the slow cooker for a casual family dinner, or plate it individually for a more polished presentation.
A simple green salad with a lemon vinaigrette and some crusty bread are all you need to round out the meal. The dish is rich and satisfying, so keep sides light.
For extra brightness, top each serving with a few fresh basil leaves or a grind of black pepper. If you like a little heat, a pinch of red pepper flakes adds a pleasant kick. The creamy, cheesy pasta pairs well with a crisp white wine like Pinot Grigio or a light beer.

Crockpot Parmesan Kielbasa Pesto Farfalle

Ingredients
- 2 lb smoked kielbasa, sliced into 1/2-inch medallions
- 12 oz farfalle (bow-tie) pasta
- 1 cup basil pesto
- 4 cups fresh baby spinach
- 2 cups shredded Italian four-cheese blend
- 1/2 cup freshly grated Parmigiano-Reggiano
Instructions
- Place the sliced kielbasa medallions in an even layer at the bottom of the slow cooker. Scatter the farfalle pasta over the kielbasa. Add the baby spinach and basil pesto, spreading the pesto as much as possible over the top. Sprinkle the shredded Italian cheese blend and grated Parmigiano-Reggiano evenly over the surface.
- Cover the slow cooker with its lid. Cook on low heat for 3 hours, or until the pasta is tender and has absorbed most of the liquid from the pesto and the spinach. The cheese should be melted and bubbling around the edges.
- After 3 hours, check the pasta for doneness. It should be al dente — tender but still with a slight bite. If the pasta is still hard, cover and continue cooking in 15-minute increments until tender. The sauce should be thick and coating the pasta; if it looks dry, add a splash of water or broth.
- Use a large spoon to gently fold the mixture, ensuring the pesto and cheese are evenly distributed. The spinach will have wilted into the sauce. Taste and adjust seasoning if needed, though the kielbasa and cheeses are usually salty enough.
- Spoon the hot pasta onto plates or into bowls. The cheese should be stretchy and the kielbasa caramelized at the edges. Serve immediately while hot and melty.
