Tips for success
For the most tender brisket, cook on low rather than high. Low heat gives the collagen more time to break down, resulting in meat that shreds effortlessly.
If you are short on time, high heat can work, but the texture may be slightly less tender. Also, let the brisket rest for at least 10 minutes after cooking; this allows the juices to redistribute, making every bite juicy and flavorful.
To make your own cowboy butter, soften 1/2 cup unsalted butter and mix in 2 minced garlic cloves, 1 tablespoon chopped fresh parsley, 1 teaspoon fresh thyme leaves, 1/2 teaspoon lemon zest, and a pinch of salt and pepper.
Roll it into a log using plastic wrap, chill until firm, then slice into medallions. This can be made ahead and kept in the fridge for up to a week or frozen for longer storage.
Variations
- Add Onions: Slice 1 large yellow onion into thick wedges and layer them under the brisket. The onions will soften and caramelize as they cook, adding sweetness and texture to the gravy.
- Spicy Kick: Add 1 teaspoon red pepper flakes or a chopped jalapeño along with the onion soup mix for a subtle heat that balances the rich butter.
- Herb Swap: Use a compound butter made with rosemary and sage instead of parsley and thyme for a more earthy, savory flavor profile.
- Red Wine Gravy: Deglaze the slow cooker with 1/2 cup red wine before adding the brisket, or simply add the wine to the pot with the other ingredients for a deeper, more complex sauce.
Storage and make-ahead
- Fridge
- Store leftover brisket in an airtight container in the refrigerator for up to 4 days. Reheat gently, adding a splash of broth if needed.
- Freezer
- Freeze shredded brisket with gravy in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
- Reheat
- Reheat brisket on the stovetop over medium-low heat, adding a little beef broth to loosen the gravy, or in the microwave in 30-second bursts until hot.
Leftover brisket can be stored in an airtight container in the refrigerator for up to 4 days. The gravy will thicken as it cools; you can thin it with a splash of beef broth or water when reheating.
The shredded meat and mushrooms keep well, and the flavors continue to meld overnight. Reheat gently on the stovetop or in the microwave until piping hot.
This recipe is ideal for make-ahead meals. You can assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed. The brisket also freezes well after cooking; shred it and store it with the gravy in a freezer-safe container for up to 3 months.
Serving ideas
Serve the brisket over a bed of buttered egg noodles, as shown in the video, or alongside mashed potatoes, polenta, or crusty bread to soak up the gravy. The rich, savory sauce pairs well with simple sides that let the meat shine. For a complete meal, add a crisp green salad or steamed green beans.
For a lighter option, skip the noodles and serve the brisket on its own with the mushrooms and gravy spooned over the top. You can also use the shredded beef in sandwiches, tacos, or over rice. The leftovers are incredibly versatile and taste even better the next day as the flavors meld.

Crockpot Mushroom Garlic Butter Brisket

Ingredients
- 3 1/2 lb beef brisket, trimmed
- 1 oz dry onion soup mix
- 8 oz cremini mushrooms, halved
- 4 oz garlic-herb compound butter (cowboy butter), sliced
- 12 oz wide egg noodles
Instructions
- Place the trimmed beef brisket flat in the bottom of a 6-quart slow cooker. Sprinkle the dry onion soup mix evenly over the top of the brisket, then scatter the halved cremini mushrooms around the sides of the meat.
- Place the slices of garlic-herb compound butter evenly across the top of the brisket. No need to stir—the butter will melt and create the gravy as it cooks.
- Cover the slow cooker and cook on low for 8 to 10 hours, or on high for 5 to 6 hours, until the brisket is fork-tender and easily shreds. The internal temperature should reach at least 145°F (63°C) for safety, but for best texture cook until it pulls apart easily. Let it rest for 3 minutes before slicing.
- Once the brisket is fork-tender, turn off the slow cooker. Remove the brisket to a cutting board and let it rest for at least 10 minutes. This allows the juices to redistribute and makes shredding easier.
- Using two forks, shred the brisket into bite-sized pieces. Return the shredded meat to the slow cooker with the mushrooms and gravy, and stir gently to coat everything in the buttery sauce.
- While the brisket rests, bring a large pot of salted water to a boil. Cook the wide egg noodles according to package directions until al dente, then drain well.
- To serve, place a generous portion of buttered egg noodles on each plate. Top with the shredded brisket and ladle the mushroom gravy over the top. Serve hot.
