Tips for success

For the best texture, use a high-quality slow cooker that heats evenly. If your slow cooker runs hot, check the dish at the 3.5-hour mark to avoid overcooking the pasta.

You can also cook on low for 3–4 hours, or on high for 2–3 hours, but low and slow gives the most tender meatballs and perfectly cooked pasta.

To make this dish even more indulgent, stir in a handful of fresh basil or parsley just before serving.

For a bit of crunch, top with toasted breadcrumbs or extra mozzarella and broil for a few minutes. The leftovers are just as good the next day—the flavors meld even more overnight.

Variations

  • Spicy Sausage Rigatoni: Swap the beef meatballs for spicy Italian sausage links (casings removed) and add a pinch of red pepper flakes. Cook as directed, then serve with extra Parmesan.
  • Veggie-Packed Version: Add a cup of sliced mushrooms, bell peppers, or zucchini along with the sauce. These vegetables will soften and add flavor without changing the cooking time.
  • Cheesy Pesto Twist: Stir in 1/4 cup of pesto with the sauce for a fresh, herby flavor. Omit the basil garnish and top with pine nuts for crunch.
  • Gluten-Free Adaptation: Use gluten-free rigatoni and ensure the meatballs and sauce are gluten-free. Increase the cooking time slightly, as gluten-free pasta may need a few extra minutes to soften.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days.
Freezer
Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat individual portions in the microwave or in a saucepan over medium heat, stirring occasionally, until hot and bubbling.

Store leftovers in an airtight container in the refrigerator for up to 4 days. The pasta will continue to absorb sauce, so you may want to add a splash of water or extra sauce when reheating. Let the dish cool for no more than 2 hours before refrigerating.

You can assemble the entire dish (without cooking) up to 24 hours in advance. Simply layer the ingredients in the slow cooker insert, cover, and refrigerate.

When ready to cook, place the insert in the slow cooker and cook on low for 4–5 hours, or until the meatballs reach 160°F (71°C) and the pasta is tender.

Serving ideas

Serve this hearty pasta bake straight from the slow cooker, spooned into shallow bowls.

It's a complete meal on its own, but a simple green salad with a lemony vinaigrette and some crusty bread for dipping make excellent accompaniments. The creamy sauce is perfect for sopping up with bread.

For a family-style dinner, set the slow cooker on the table and let everyone serve themselves. Top with extra mozzarella, fresh basil, or a sprinkle of red pepper flakes for those who like heat. This dish also pairs well with a glass of Chianti or a light red wine.

Frequently asked questions

Can this recipe be made with frozen meatballs?
Yes, frozen meatballs work perfectly. Add them directly to the slow cooker without thawing; they will cook through during the 4-hour cooking time. Just make sure they reach an internal temperature of 160°F (71°C) before serving.
Why is the pasta still hard after 4 hours?
If the pasta is still firm, the slow cooker may be running at a lower temperature or the lid was lifted frequently. Cover and cook for an additional 20–30 minutes, checking for doneness. Ensure the pasta is submerged in sauce as much as possible to help it cook evenly.
Can this be cooked on high instead of low?
Yes, you can cook on high for 2–3 hours, but the results may be slightly less tender. Low and slow is recommended for the best texture and flavor. If using high, start checking the dish at the 2-hour mark.
What can be used instead of cream cheese?
For a similar creamy texture, use mascarpone or a dollop of sour cream. You can also use a dairy-free cream cheese alternative. The flavor will change slightly, but the dish will still be rich and delicious.
How can this be made dairy-free?
Use dairy-free cream cheese and mozzarella alternatives, and ensure the meatballs and sauce are dairy-free. The texture may be slightly different, but it will still be a satisfying pasta bake.

Crockpot Mozzarella Meatball Rigatoni: Dump-and-Forget Dinner

Crockpot Mozzarella Meatball Rigatoni in a slow cooker, with melted cheese and sauce

Ingredients

  • 2 lb homestyle Italian beef meatballs
  • 16 oz rigatoni pasta
  • 24 oz roasted garlic tomato basil sauce
  • 8 oz cream cheese, softened
  • 2 cups shredded whole-milk mozzarella

Instructions

  1. Place the beef meatballs in an even layer in the bottom of a 6-quart slow cooker. Add the rigatoni pasta and pour the roasted garlic tomato basil sauce over the meatballs and pasta, making sure the sauce covers the pasta as much as possible.
  2. Place the block of cream cheese in the center of the slow cooker, then sprinkle the shredded mozzarella evenly over the top. Do not stir—the cream cheese will melt and blend during cooking.
  3. Cover the slow cooker and cook on low for 4 hours, or until the meatballs are cooked through and the pasta is tender. The sauce should be bubbling around the edges and the cheese melted and bubbly.
  4. After 4 hours, stir the pasta bake gently to combine the melted cream cheese and sauce. Check that the meatballs reach an internal temperature of 160°F (71°C) and the pasta is al dente. If the pasta is still firm, cover and cook for an additional 20–30 minutes.
  5. Spoon the mozzarella meatball rigatoni onto warm plates or bowls. Serve hot, with extra mozzarella on top if desired. The dish is rich and satisfying on its own.
