Tips for success

For the creamiest sauce, use full-fat cream cheese and whole-milk mozzarella. If you prefer a thinner sauce, stir in a splash of reserved pasta water or milk before serving.

Taste and adjust seasoning with salt and pepper, though the pesto and meatballs often add enough flavor.

To prevent the pasta from overcooking, check it at the 4-hour mark. Slow cookers vary, so start checking early. If the sauce seems too thick, a splash of chicken broth can loosen it. For extra richness, stir in a handful of grated Parmesan just before serving.

Variations

  • Spicy Sausage Version: Swap the beef meatballs for spicy Italian sausage links (casings removed) and use a spicy pesto or add red pepper flakes. Cook as directed, ensuring the sausage reaches 160°F.
  • Vegetarian Option: Use plant-based meatballs and dairy-free cream cheese and mozzarella. Choose a vegan pesto. Cook as directed, checking that the plant-based meatballs are heated through.
  • Extra Veggies: Add sliced mushrooms, bell peppers, or zucchini along with the spinach for more vegetables. Sauté them briefly first to release excess moisture, then add to the slow cooker.
  • Gluten-Free Adaptation: Use gluten-free farfalle or another gluten-free pasta shape. Ensure the meatballs and pesto are gluten-free. Cooking time may be slightly shorter, so check pasta tenderness early.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 3 days. Add a splash of milk or broth when reheating to restore creaminess.
Freezer
Freeze in a freezer-safe container for up to 2 months. Thaw overnight in the refrigerator before reheating.
Reheat
Reheat in the microwave or on the stovetop over medium heat, stirring occasionally, until hot and bubbly.

Store leftovers in an airtight container in the refrigerator for up to 3 days. The pasta will absorb some sauce as it sits, so you may want to add a splash of milk or broth when reheating. Reheat gently in the microwave or on the stovetop until hot.

This recipe can be assembled ahead of time: layer all ingredients in the slow cooker insert, cover, and refrigerate overnight.

In the morning, place the insert in the slow cooker and cook on low as directed, adding about 30 minutes to the cooking time since the ingredients start cold.

Serving ideas

Serve this pasta bake hot, straight from the slow cooker, for a casual family dinner. It pairs well with a simple green salad and crusty garlic bread.

For a more elegant presentation, spoon it onto a large platter and sprinkle with fresh basil and extra mozzarella.

This dish is also great for potlucks and gatherings—keep the slow cooker on warm and let guests serve themselves.

The creamy, cheesy sauce and tender meatballs are always a crowd-pleaser. Store any leftovers in the refrigerator for quick lunches throughout the week.

Frequently asked questions

Can this recipe be made with frozen meatballs?
Yes, frozen meatballs work perfectly—no need to thaw. Just add them to the slow cooker as directed. The cooking time may be slightly longer, so check that the meatballs reach 160°F (71°C) before serving.
Why does the pasta sometimes turn mushy?
Pasta can become mushy if cooked too long or stirred too often. Use the low setting and avoid lifting the lid until the minimum cooking time has passed. Check for doneness at the 4-hour mark and stop cooking as soon as the pasta is tender.
Can this dish be made ahead and reheated?
Absolutely. Assemble the slow cooker insert and refrigerate overnight, then cook as directed. Leftovers can be stored in the refrigerator for up to 3 days and reheated gently with a splash of milk or broth to restore the creamy sauce.
What can be used instead of cream cheese?
Mascarpone is the closest substitute, offering a similar richness. For a dairy-free option, use a vegan cream cheese. If you don't have either, a cup of heavy cream can be added, though the sauce will be thinner.
Can this recipe be cooked on high to save time?
Yes, you can cook on high for 2 to 3 hours, but watch closely—pasta can overcook quickly on high. Stir gently halfway through and check the meatball temperature to ensure they are fully cooked.

Crockpot Mozzarella Meatball Pesto Farfalle

Prep 10 minCook 4 hTotal 4 h 10 minServes 6
Slow cooker filled with creamy meatball pesto farfalle, topped with melted mozzarella.

Ingredients

  • 2 lb homestyle Italian beef meatballs
  • 12 oz bow-tie pasta (farfalle)
  • 1/2 cup basil pesto
  • 4 cups fresh baby spinach leaves
  • 8 oz cream cheese, softened and cut into cubes
  • 2 cups shredded whole-milk mozzarella

Instructions

  1. Place the 2 pounds of beef meatballs in an even layer in the bottom of a 6-quart slow cooker. Scatter the bow-tie pasta, fresh baby spinach, and basil pesto over the meatballs. Set the cream cheese cubes in the center of the mixture, then sprinkle the shredded mozzarella evenly over the top.
  2. Cover the slow cooker with the lid and cook on low for 4 to 5 hours, until the pasta is tender and the meatballs are cooked through. Stir gently halfway through cooking, if possible, to redistribute the sauce.
  3. After 4 hours, use an instant-read thermometer to check the internal temperature of a meatball. It should read at least 160°F (71°C). If not fully cooked, continue cooking for another 30 minutes and check again.
  4. Once the meatballs are cooked through, stir the mixture well to combine the melted cream cheese and mozzarella into a creamy sauce. The spinach should be wilted and the pasta coated evenly.
  5. Spoon the hot pasta and meatballs onto plates or into bowls. Serve immediately, with extra grated mozzarella or a sprinkle of fresh basil if desired.
