Tips for success
For the best flavor, use a good-quality cave-aged Gruyere, which has a nutty, slightly sweet taste that melts beautifully. If you cannot find Gruyere, a combination of Swiss cheese and a little Parmesan can work.
Always shred the cheese yourself from a block; pre-shredded varieties contain cellulose and other anti-caking agents that can make the sauce gritty and less smooth.
To make the dish even more indulgent, you can add a splash of heavy cream along with the cheese, though this is optional. If you prefer a more pronounced bacon flavor, cook the bacon until crisp and sprinkle a little extra on top before serving.
The leeks can be swapped for a large yellow onion if needed, but the leeks give a milder, sweeter flavor that pairs perfectly with the Gruyere.
Variations
- Mushroom and Thyme: Add 8 oz sliced cremini mushrooms in with the leeks, and stir in 1 tsp dried thyme with the nutmeg. The mushrooms add an earthy depth that complements the Gruyere and bacon.
- Dijon Mustard Twist: Stir 2 tbsp Dijon mustard into the sauce along with the cheese. The mustard adds a tangy kick that cuts through the richness and brightens the overall flavor.
- Ham and Potato: Replace the bacon with 1 cup diced cooked ham, and add 2 cups cubed Yukon Gold potatoes to the slow cooker with the leeks. Cook until the potatoes are tender, then proceed with the cheese.
- Herbed Croutons: Instead of plain bread, toss cubed baguette with olive oil, garlic powder, and dried herbs, then bake at 375°F (190°C) for 10 minutes until golden. Serve the fondue over these herbed croutons.
Storage and make-ahead
- Fridge
- Store leftover chicken fondue in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze the chicken fondue (without the bread or potatoes) in a freezer-safe container for up to 2 months.
- Reheat
- Reheat leftovers in a saucepan over medium-low heat, stirring frequently, until hot and bubbly.
Store leftover chicken fondue in an airtight container in the refrigerator for up to 4 days. The sauce will thicken as it cools; reheat gently on the stovetop or in the microwave, adding a splash of milk or broth to loosen it if needed. The bread or potatoes are best served fresh, so store them separately.
You can assemble the slow cooker insert with the leeks, chicken, wine, cream cheese, and nutmeg up to 1 day ahead. Cover and refrigerate, then start the slow cooker when ready to cook.
The cooking time may need to be increased by 30 minutes if starting from cold. The bacon can also be cooked and crumbled in advance and stored in the refrigerator.
Serving ideas
Serve this chicken fondue over cubes of crusty French bread that have been lightly toasted for a crunchy contrast. The bread soaks up the creamy sauce, making each bite satisfying and hearty. For a lower-carb option, roasted baby potatoes are an excellent alternative; their crispy edges hold up well to the rich sauce.
This dish is substantial enough to be a main course on its own, but it can also be served as part of a larger spread with a simple green salad or steamed vegetables.
A glass of the same dry white wine used in the sauce makes a natural pairing. For a festive touch, garnish with a sprinkle of fresh thyme or chives, though these are optional.
