Before you start

Before starting, make sure the chicken breasts are thawed if frozen. Slice the leeks, rinse them well, and pat them dry. Cook and crumble the bacon if you haven't already; you can do this while the chicken cooks.

Measure out the wine and have the cream cheese at room temperature so it melts smoothly. Shred the Gruyere from a block for best results. Have your serving bread or roasted potatoes ready before the chicken finishes.

Ingredients at a glance (9)
  • 3 leeks, white and light green parts only, sliced
  • 4 boneless, skinless chicken breasts
  • 1/2 cup dry white wine
  • 4 oz cream cheese, softened and cubed
  • 1/4 tsp ground nutmeg
  • 2 cups shredded cave-aged Gruyere cheese
  • 6 slices bacon, cooked and crumbled
  • crusty French bread, cubed, for serving
  • roasted baby potatoes, for serving

Instructions

Layer and slow cook

  1. Layer the ingredients
Place the sliced leeks in an even layer in the bottom of the slow cooker. Lay the chicken breasts on top of the leeks. Pour the white wine over the chicken and leeks. Scatter the cream cheese cubes over the top, then sprinkle with the ground nutmeg.
Look for The leeks form a bed, the chicken sits on top, and the cream cheese is dotted over the surface.
Tip For even cooking, tuck any large chicken breasts in a single layer without overlapping.
  2. Slow cook on low
Cover the slow cooker with the glass lid and cook on LOW for 4 hours, until the chicken is cooked through and easily shreds with a fork.
Look for After 4 hours, the chicken should be tender and the sauce bubbly and aromatic.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid lifting the lid during cooking to keep the heat and moisture inside.

After the first phase, the slow cooker should be filled with the leeks, chicken, wine, and cream cheese. The leeks will be soft and fragrant, and the chicken will be cooked through and tender.

The liquid will be bubbling gently around the chicken, and the cream cheese will have melted into a pale sauce. The kitchen will smell of wine, leeks, and a hint of nutmeg.

Shred and melt

  1. Shred the chicken
Remove the chicken breasts to a cutting board and shred with two forks. Return the shredded chicken to the slow cooker with the leeks and cooking liquid.
Look for The chicken shreds easily and is moist and tender.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the chicken is still slightly pink in the center, return it to the slow cooker and cook for another 30 minutes.
  2. Melt in the cheese and bacon
Add the shredded Gruyere and crumbled bacon to the slow cooker. Stir gently until the cheese is fully melted and the sauce is smooth and creamy.
Look for The cheese melts into a glossy, thick sauce that coats the chicken and leeks.
Tip If the sauce seems thin, let it cook uncovered for 10–15 minutes to thicken.

The chicken should shred easily into moist pieces, and the sauce will be slightly thinner before the cheese is added. Once the Gruyere and bacon are stirred in, the sauce turns glossy and thickens as the cheese melts. The bacon adds smoky bits throughout, and the cheese pulls into long strands when lifted with a spoon.

Serve and savor

  1. Serve over bread or potatoes
Spoon the hot chicken fondue over cubed crusty French bread or roasted baby potatoes. Serve immediately while warm and melty.
Look for The dish is bubbling and the cheese is stretchy and aromatic.
Tip For a crisp contrast, toast the bread cubes before serving.

The final dish is a rich, creamy mixture of shredded chicken, soft leeks, and melted cheese, studded with bacon. It should be spooned over bread or potatoes while hot and bubbly. The cheese should be stretchy and the sauce thick enough to cling to each piece of bread. The aroma is deeply savory with notes of toasted nuts from the Gruyere.

Common mistakes

One common mistake is lifting the lid during cooking, which lets out steam and extends the cooking time. Another is overcooking the chicken on high, which can dry it out; always use low for the full 4 hours.

Adding the cheese too early can cause it to separate or become stringy, so always stir it in after the chicken is cooked. Finally, do not use pre-shredded cheese if possible, as it may not melt as smoothly.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) and shreds easily with a fork. The sauce should be thick and creamy, coating the back of a spoon.

The leeks should be very soft and translucent, and the cheese should be fully melted with no visible shreds. If the sauce is too thin, simmer uncovered for a few minutes to reduce. Taste and adjust seasoning with salt and pepper if needed.

  • Poultry: 165°F (74°C) in the thickest part
