Tips for success
For the best texture, serve the cake warm, straight from the slow cooker. The contrast between the warm, gooey cake and cold bowls (or a scoop of vanilla ice cream) is what makes this dessert irresistible.
If you prefer a firmer cake, let it cool for 15–20 minutes before serving—it will set slightly but remain soft and spoonable. The key lime curd will continue to thicken as it cools.
To toast coconut flakes, spread them in a dry skillet over medium heat and stir frequently for 2–3 minutes until golden brown. Watch carefully because they can burn quickly. Alternatively, spread on a baking sheet and toast in a 350°F (175°C) oven for 5–7 minutes. Store any leftover toasted coconut in an airtight container at room temperature for up to a week.
Variations
- Coconut Key Lime: Add 1/2 cup shredded sweetened coconut to the cake mix layer before cooking. This adds texture and enhances the tropical flavor. Toast extra coconut for garnish.
- Berry Swirl: Spoon 1/2 cup of raspberry or strawberry preserves over the key lime base before adding the cake mix. The berries create a colorful swirl and add a fruity tartness.
- Spiced Lime: Stir 1/2 teaspoon of ground ginger and a pinch of ground cardamom into the cake mix before sprinkling. The warm spices complement the lime and white chocolate beautifully.
- Gluten-Free Option: Use a gluten-free white cake mix and ensure the white chocolate chips are gluten-free. The texture will be slightly more tender, but the flavor remains delicious.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. The cake will firm up when chilled but can be reheated gently.
- Freezer
- Freeze the cooled cake in an airtight container for up to 3 months. Thaw overnight in the refrigerator and reheat in the microwave or on the stovetop.
- Reheat
- To reheat, microwave individual portions for 30–60 seconds, or warm in a saucepan over low heat, stirring occasionally, until heated through.
Store leftover cake in an airtight container in the refrigerator for up to 4 days. The texture will become more pudding-like as it chills, which is delicious in its own way.
To reheat, spoon individual portions into a microwave-safe bowl and heat in 30-second intervals until warm. The cake can also be reheated in a saucepan over low heat, stirring gently, until heated through.
The cake can be assembled (without cooking) up to 24 hours ahead. Whisk the condensed milk, key lime juice, and zest in the slow cooker, then layer the cake mix, chocolate chips, and butter on top.
Cover and refrigerate. When ready to cook, add 15–20 minutes to the cooking time to account for the chilled ingredients. The fully cooked cake can be made a day ahead and reheated gently before serving.
Serving ideas
Serve the cake warm, spooned into chilled bowls to create a delightful temperature contrast. A dollop of lightly sweetened whipped cream or a scoop of vanilla ice cream is a natural partner, though the cake is rich enough to stand alone.
The toasted coconut flakes and fresh lime wheels add a bright, tropical finish that makes each serving look like it came from a beachside café.
For a more elegant presentation, layer the warm cake and a spoonful of additional key lime curd in small glasses or mason jars, then top with coconut and a lime twist. This makes a lovely dessert for parties or a fun way to serve kids. The cake is also delicious cold, straight from the fridge, like a citrusy bread pudding.

Key Lime White Chocolate Dump Cake Made in a Crockpot

Ingredients
- 14 oz sweetened condensed milk
- 1/2 cup key lime juice
- 1 tbsp lime zest
- 1 box (15.25 oz) white cake mix
- 1 cup white chocolate chips
- 6 tbsp butter, cut into 12 pats
- 1/4 cup toasted coconut flakes
- 1 fresh key lime, sliced into wheels
Instructions
- In the bottom of a 6-quart slow cooker, whisk together the sweetened condensed milk, key lime juice, and lime zest until smooth and fully combined. Spread the mixture evenly across the bottom of the Crockpot.
- Sprinkle the white cake mix evenly over the key lime mixture. Do not stir. Scatter the white chocolate chips over the cake mix, then dot the top with the butter pats, spacing them evenly.
- Cover the slow cooker and cook on HIGH for 2 hours and 15 minutes, without opening the lid during the first 2 hours. The cake is done when the edges are bubbly and golden, and the center is mostly set but still moist.
- Once the cake is done, turn off the slow cooker. Spoon the warm cake into chilled bowls. Garnish each serving with toasted coconut flakes and a fresh key lime wheel. Serve immediately.
