Tips for success
For the best flavor, use a good-quality aged Gruyère and real cream cheese. The slow cooker concentrates flavors, so the quality of the cheese matters.
Cut the cream cheese into small chunks to ensure it melts evenly. If you prefer a smoother sauce, you can whisk the sauce gently at the end of cooking, but be careful not to break up the potatoes.
To make this dish even more convenient, you can prep the ingredients the night before and store them in the refrigerator in the slow cooker insert. In the morning, just put the insert into the slow cooker and turn it on.
If you use a liner, you can also assemble everything in the liner and refrigerate it overnight. This makes it a true dump-and-go meal for busy days.
Variations
- Add mushrooms: Add 8 oz sliced cremini mushrooms along with the beef. They will release liquid and add an earthy flavor that complements the Gruyère. No other changes needed.
- Use chicken thighs: Substitute 2 lb boneless, skinless chicken thighs for the beef. Cook on LOW for 4-5 hours until the chicken is tender and reaches 165°F. The sauce will be slightly lighter.
- Make it spicy: Add 1/2 tsp red pepper flakes or a diced jalapeño with the garlic for a subtle heat. The cream cheese and Gruyère balance the spice nicely.
- Vegetarian version: Replace the beef with 2 lb of mixed mushrooms and extra potatoes. Cook on LOW for 4-5 hours. The sauce will be just as creamy and flavorful.

When ready to cook, place the insert in the slow cooker and cook as directed. You may need to add 30 minutes to the cooking time if starting from cold. The dish also freezes well; see freezer instructions.
Serving ideas
Serve this dish over toasted garlic brioche to soak up the rich, cheesy sauce. The brioche adds a buttery, crisp texture that contrasts beautifully with the tender beef and creamy sauce. You can also serve it over mashed potatoes, egg noodles, or rice if you prefer. A simple green salad with a vinaigrette would brighten the meal.
For a complete dinner, pair this with a light vegetable side dish, such as steamed green beans or roasted asparagus. The richness of the sauce is balanced by the freshness of the vegetables.
A glass of full-bodied red wine, like a Merlot or Zinfandel, would complement the beef and cheese beautifully. Garnish with fresh thyme or parsley if desired, though the video does not include it.

Crockpot Gruyère Cream Garlic Potato Beef Bites

Ingredients
- 2 lb beef chuck stew meat, cut into 1-inch cubes
- 1 1/2 lb baby Yukon Gold potatoes, halved
- 2 tbsp minced garlic
- 8 oz softened cream cheese, cut into chunks
- 1 1/2 cups shredded aged Gruyère cheese
- 1 tsp kosher salt
- 1/2 tsp black pepper
- toasted garlic brioche slices, for serving
Instructions
- Place the beef chuck cubes in the bottom of a 6-quart slow cooker in an even layer. Scatter the halved baby potatoes over the beef, then sprinkle the minced garlic over the top. Season with salt and pepper. Do not stir.
- Dot the surface with chunks of softened cream cheese, then sprinkle the shredded Gruyère evenly over the top. The cheese will melt and form a rich sauce as the slow cooker works.
- Cover the slow cooker and cook on LOW for 6 to 7 hours, or on HIGH for 3 to 4 hours, until the beef is fork-tender and the potatoes are soft. The sauce will be bubbling and slightly thickened. Do not open the lid during cooking unless necessary. Let it rest for 3 minutes before slicing.
- After the minimum cooking time, check the beef by piercing a cube with a fork. It should offer no resistance and pull apart easily. The potatoes should be tender all the way through when pierced with a knife. If not done, continue cooking in 30-minute increments. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the beef rest in the sauce for at least 3 minutes. This allows the juices to redistribute and keeps the meat moist. The sauce will also settle and thicken slightly.
- Place a slice of toasted garlic brioche on each plate. Using a slotted spoon, ladle the beef, potatoes, and a generous amount of the creamy sauce over the brioche. Serve hot.
