Tips for success
For the most flavorful results, use high-quality Kalamata olives packed in brine—they add a depth that canned olives lack.
If you have time, let the chicken marinate in the lemon juice and oregano for 30 minutes before cooking, but this is optional. The dish is forgiving, so don't worry if you need to adjust the cooking time slightly.
To make the tzatziki at home, combine Greek yogurt, grated cucumber, garlic, lemon juice, and dill. It can be made a day ahead and refrigerated.
When warming pitas, wrap them in foil and heat in a 350°F (175°C) oven for 10 minutes, or microwave for 30 seconds. Keep the fillings separate until serving to prevent sogginess.
Variations
- Add Roasted Red Peppers: For extra sweetness and color, stir in 1/2 cup chopped roasted red peppers during the last 30 minutes of cooking. They'll soften and meld with the sauce, adding a smoky note that complements the olives and feta.
- Spicy Greek Chicken: Add 1 teaspoon of crushed red pepper flakes or a chopped fresh chili along with the garlic for a spicy kick. The heat will balance the briny olives and cool tzatziki beautifully.
- Use Chicken Breasts: Substitute chicken breasts for thighs. Cook on LOW for 3 hours, checking for doneness at 2 1/2 hours. Shred and return to the sauce. The result will be leaner but still moist if not overcooked.
- Serve Over Orzo: Instead of pitas, serve the chicken over cooked orzo pasta. The orzo absorbs the lemony sauce, making a satisfying one-bowl meal. Top with extra feta and dill.
Storage and make-ahead
- Fridge
- Store leftover chicken in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or microwave with a splash of broth.
- Freezer
- Freeze the shredded chicken in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat the chicken in a skillet over medium heat, stirring occasionally, until warmed through. Add a little broth or water if the sauce has thickened too much.
Store leftover chicken in an airtight container in the refrigerator for up to 4 days. The sauce may thicken as it cools; add a splash of chicken broth or water when reheating. Keep pita breads at room temperature in a sealed bag for up to 3 days, or freeze for longer storage.
The chicken can be cooked up to 2 days in advance and refrigerated. Reheat gently on the stovetop or in the microwave before serving. The tzatziki can be made 1 day ahead. Assemble the pitas just before eating to keep the bread from becoming soggy.
Serving ideas
Serve the chicken in warm pitas with a generous dollop of tzatziki, cucumber slices, and fresh dill. For a heartier meal, add a Greek salad on the side.
The cool, creamy tzatziki balances the warm, briny chicken, while the cucumber adds crunch. This is a hands-on meal that invites everyone to build their own wrap.
For a low-carb option, serve the chicken over a bed of greens or with roasted vegetables instead of pita. The leftovers also make a fantastic topping for grain bowls.
If you have extra feta, crumble it over the top just before serving. This dish is versatile enough for a casual family dinner or a weekend gathering.

Crockpot Greek Lemon Oregano Chicken with Feta

Ingredients
- 6 boneless, skinless chicken thighs
- 2 lemons, juiced
- 2 tbsp dried Greek oregano
- 6 cloves garlic, minced
- 1/2 cup Kalamata olives, pitted
- 2 tbsp olive oil
- 4 oz sheep's milk feta, crumbled
- 6 warm pita breads, for serving
- Tzatziki sauce, for serving
- Sliced cucumber, for serving
- Fresh dill, for serving
Instructions
- Place the chicken thighs in the slow cooker insert in a single layer. Sprinkle the dried oregano over the chicken, then add the minced garlic, Kalamata olives, lemon juice, and olive oil. Use a spoon to gently toss everything so the chicken is coated with the seasonings.
- Cover the slow cooker with the glass lid. Set the slow cooker to LOW and cook for 4 hours, until the chicken is tender and easily shreds with a fork. Avoid lifting the lid during cooking to maintain a steady temperature.
- Remove the chicken thighs from the slow cooker and place them on a cutting board. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir to coat with the cooking liquid and olives.
- Sprinkle the crumbled sheep's milk feta over the shredded chicken in the slow cooker. Cover and let it sit for 5 minutes to allow the feta to soften slightly. The feta will melt a little into the sauce, adding a creamy, tangy finish.
- Warm the pita breads in a dry skillet or in the microwave until soft and pliable. Spoon the chicken mixture into the center of each pita. Top with tzatziki sauce, sliced cucumber, and fresh dill. Fold the pita over and serve immediately.
