Before you start

Before beginning, ensure the slow cooker is positioned on a level, heat-resistant surface near a power outlet. Prepare the steak by trimming any excessive fat and cutting the meat into consistent 1-inch cubes. Having all ingredients measured and ready to go will make the assembly process seamless.

Check that the slow cooker lid fits securely to maintain the temperature throughout the cooking cycle. Do not leave raw meat out at room temperature for more than 30 minutes; keep it refrigerated until the moment you are ready to assemble the dish in the cooker.

Ingredients at a glance (4)
  • 2 lb sirloin steak, cut into 1-inch cubes
  • 1 cup yellow onion, diced
  • 2 tbsp garlic herb seasoning blend
  • 4 tbsp unsalted butter, sliced

Instructions

Assembly of ingredients

  1. Prepare the slow cooker
Place the cubed sirloin steak into the bottom of the slow cooker basin. Ensure the pieces are spread out in an even layer to promote consistent cooking throughout the process.
Look for the steak should be in a single layer at the bottom of the slow cooker.
Tip pat the steak cubes dry with paper towels before placing them in the cooker to improve the final texture.
  2. Add aromatics and seasoning
Scatter the diced onions evenly over the top of the steak cubes. Sprinkle the garlic herb seasoning generously across the entire surface of the meat and onions to ensure balanced flavor.
Look for all surfaces of the meat should be coated with the seasoning blend.
Tip use a homemade blend of dried herbs if a store-bought packet is not available.

The steak cubes should be arranged in a uniform layer at the base, covered by the onions and seasoning. The butter should be placed on top, ready to melt down.

Everything should look clean and organized within the slow cooker basin, ensuring the seasoning is evenly distributed across the meat surface before the lid is placed.

Slow cooking process

  1. Layer with butter
Arrange the slices of butter over the top of the seasoned steak and onions. As the butter melts during the cooking process, it will create a rich, savory coating for the beef.
Look for the butter slices should be distributed evenly across the top.
Tip using cold butter makes it easier to slice and layer effectively.

During this phase, the aroma of garlic and savory beef will begin to fill the kitchen. The butter will have fully melted, creating a rich, bubbling sauce that coats the steak. The onions should appear soft and translucent, having contributed their moisture to the base of the slow cooker.

Resting and serving

  1. Cook and serve
Cover and cook on low for 4 hours until the steak reaches an internal temperature of 145°F (63°C). Once cooked, let the steak bites rest for 5 minutes before serving to ensure the meat stays tender and juicy.
Look for the steak should be tender and the sauce glossy and fragrant.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip check the internal temperature using a digital thermometer to avoid overcooking the meat.

The steak bites are ready when they reach the required temperature and are tender to the touch. The sauce should be glossy and thickened, clinging to the cubes. After resting for 5 minutes, the meat should be succulent, fragrant, and ready to be transferred to a warm serving plate.

Common mistakes

A common mistake is overcrowding the slow cooker or using pieces of steak that vary wildly in size, which leads to uneven cooking. Another error is failing to let the meat rest after cooking; the resting period is crucial for allowing the juices to redistribute, ensuring every bite is moist.

Finally, avoid lifting the lid frequently during the cooking process, as each time the lid is removed, heat escapes and the cooking time is extended, which can lead to inconsistent results.

How to tell it’s done

To determine if the steak bites are done, use a digital meat thermometer inserted into the thickest piece of meat. The internal temperature must reach at least 145°F (63°C) for safety.

At this stage, the steak should be tender enough to be easily pierced with a fork, and the sauce should have a glossy, thickened consistency. If the meat feels resistant or tough, it may need additional time, as the connective tissue needs more heat to fully break down properly.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
