Before you start

Before starting, ensure all ingredients are ready. Chop the celery into uniform pieces to ensure they soften at the same rate as the beef. Verify that your slow cooker is clean and positioned on a stable, heat-resistant surface away from any water sources.

Take the beef tips out of the refrigerator about 20 minutes before you begin to take the chill off, which helps the meat cook more evenly once the slow cooker reaches its operating temperature.

Ingredients at a glance (4)
  • 2 lb beef tips
  • 3 stalks celery, chopped
  • 1 packet garlic herb seasoning
  • 1 cup beef broth

Instructions

Preparation and layering

  1. Prepare the slow cooker
Place the beef tips into the bottom of the slow cooker. Add the chopped celery on top of the beef. Sprinkle the garlic herb seasoning evenly over the beef and celery mixture.
Look for Beef is evenly distributed in the bottom of the crockpot.
Tip Ensure the celery pieces are cut into uniform sizes for even cooking.

At this phase, the raw beef and celery should be neatly arranged in the bottom of the slow cooker. The seasoning should be sprinkled evenly to coat the meat surface. Ensure the ingredients are not piled too high, which allows for better heat circulation. The setup should look organized and ready for the addition of the broth, which is the final step before the lid is secured and the cooking begins.

Slow cooking process

  1. Add liquid and slow cook
Pour the beef broth over the ingredients in the slow cooker. Cover with the lid and cook on low heat for 8 hours or on high heat for 4 hours until the meat is tender, reaches an internal temperature of 145°F (63°C), and let the meat rest at least 3 minutes.
Look for Liquid covers the base of the pot and meat is submerged.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip Do not lift the lid during the first few hours of cooking to maintain constant heat.

During the long cooking phase, the slow cooker will begin to emit a savory, garlicky aroma. The liquid will gently simmer, and the beef will slowly change color from bright red to a deeper, cooked brown. You should not see any aggressive boiling. By the end of this phase, the kitchen will smell deeply of herbs and beef, indicating that the flavors are melding together effectively and the meat is softening.

Resting and serving

  1. Finish and serve
Once the beef reaches an internal temperature of 145°F (63°C), turn off the slow cooker. Let the beef tips rest for at least 5 minutes before serving to allow the juices to redistribute for the best texture.
Look for Meat pulls apart easily with a fork.
Safe temperature 145°F (63°C) internal temperature (steaks, chops and roasts)
Tip If the sauce is too thin, you can remove the meat and whisk in a little cornstarch slurry to the liquid on high heat.

After turning off the heat, the beef should look glossy and tender. The liquid should be reduced enough to coat the meat nicely. Before serving, the meat must rest for 5 minutes. This is critical for moisture retention.

Check that the meat is thoroughly tender by testing one piece with a fork. Once the resting period is complete, the dish is ready to be plated and served hot, potentially alongside mashed potatoes.

Common mistakes

A common mistake is overcrowding the slow cooker or using pieces of beef that are too large, which can lead to uneven cooking. Another error is lifting the lid too frequently, which releases necessary heat and extends the total cooking time significantly.

Avoid using high heat if you have the time for the low setting, as the low and slow approach is the secret to achieving the most tender results for this specific cut of meat.

How to tell it’s done

The beef tips are done when they are fork-tender, meaning a fork slides into the meat with almost no resistance. For safety, verify that the thickest part of the meat has reached a minimum internal temperature of 145°F (63°C).

The meat should appear glossy and dark, and the broth should have thickened slightly into a savory, aromatic gravy. If the meat still feels firm or tough, continue cooking for an additional 30 minutes and re-check.

  • Steaks, chops and roasts: 145°F (63°C) in the thickest part, then a 3-minute rest
