Tips for success

For a deeper flavor, you can sear the pork chops in a hot skillet for one minute per side before placing them in the slow cooker.

While this is an optional step, it adds a layer of caramelized flavor to the meat that pairs beautifully with the creamy sauce. If you choose to do this, ensure the skillet is very hot and use a small amount of oil to prevent sticking.

If you find that the sauce is too thick once the pork is finished, you can stir in a small amount of warm chicken broth or water, one tablespoon at a time, until it reaches your preferred consistency.

This is especially helpful if you plan to serve the pork chops alongside mashed potatoes or rice, as it creates a wonderful gravy that can be drizzled over the side dish.

Variations

  • Spicy Everything Bagel Pork: Stir one teaspoon of crushed red pepper flakes into the cream cheese before cooking to add a subtle, warming heat that complements the savory seasoning.
  • Garlic Herb Pork Chops: Add two cloves of minced garlic and a teaspoon of dried thyme to the slow cooker for an earthier flavor profile that pairs well with the creamy sauce.

Storage and make-ahead

Fridge
Keep in an airtight container for up to 3 days.
Freezer
Freeze for up to 2 months in a freezer-safe container; thaw in the refrigerator overnight before reheating.
Reheat
Reheat gently in a microwave or on the stovetop over low heat, adding a splash of liquid if the sauce has thickened too much.

Store any leftovers in an airtight container in the refrigerator for up to 3 days. When storing, try to keep the pork chops submerged in the creamy sauce, as this helps protect the meat from drying out. Ensure the leftovers are cooled to room temperature within 2 hours of cooking before placing them into the refrigerator to maintain food safety standards.

You can prepare the pork chops and onion in the slow cooker insert up to 12 hours in advance, keeping it covered in the refrigerator. When you are ready to cook, simply add the seasoning and the block of cream cheese, then start the slow cooker. This makes it very convenient to assemble the dish in the morning and have it ready for dinner in the evening.

Serving ideas

Serve the pork chops hot, spooning a generous amount of the creamy, seed-speckled sauce over each piece. The sauce is the highlight of the dish, so ensure each serving gets plenty of it.

Placing the pork on a warm plate can help maintain the temperature of the dish while you finish plating the sides, ensuring a pleasant eating experience from the first bite to the last.

This dish pairs exceptionally well with simple side dishes that can soak up the flavorful sauce. Consider serving it with steamed green beans, roasted asparagus, or a side of mashed potatoes.

A crisp green salad with a light vinaigrette also provides a nice contrast to the richness of the creamy pork, balancing the meal perfectly for a satisfying and complete dinner experience.

Frequently asked questions

Can this dish be made in a pressure cooker?
While this recipe is designed for a slow cooker, a pressure cooker can be used. Set the pressure cooker to high for 12 to 15 minutes, then allow a natural pressure release for 10 minutes. Ensure the pork reaches 145°F (63°C) and stir the sauce well before serving.
Why does the cream cheese sauce sometimes look separated?
Separation can occur if the sauce is cooked at too high a temperature for too long. If this happens, whisk the sauce vigorously with a fork or a small whisk until the fats and solids emulsify back into a smooth, creamy consistency before serving.
Is it necessary to use a block of cream cheese?
Yes, using a block of cream cheese is recommended because it contains fewer additives and stabilizers than tub-style cream cheese. This allows it to melt into a thicker, more stable sauce that clings well to the pork chops during the long cooking process.
