Tips for success
For the most flavorful results, choose a chuck roast with good marbling. The fat renders during cooking, keeping the meat moist and adding richness to the gravy. If you have time, searing the roast in a hot skillet before adding it to the slow cooker adds a deeper, caramelized flavor, but it's not necessary—this recipe is all about simplicity.
To thicken the gravy further, you can mix a tablespoon of cornstarch with a couple tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
This will give you a slightly thicker, glossier sauce. Alternatively, you can leave it as is—the natural juices from the beef and vegetables create a delicious, light gravy that's perfect for soaking into rice.
Variations
- Add Mushrooms: Add 8 oz sliced cremini mushrooms along with the potatoes and carrots. They'll release moisture and add an earthy flavor to the gravy. No other changes needed.
- Swap the Mustard: Use smooth Dijon mustard instead of whole-grain for a smoother, more uniform sauce. Spicy brown mustard also works well for a bit more heat.
- Make It Dairy-Free: Substitute the sour cream with a dairy-free plain yogurt or coconut cream. The sauce will be slightly less tangy but still creamy and delicious.
- Add a Kick: Stir in 1-2 teaspoons of prepared horseradish or a pinch of cayenne pepper with the sour cream for a subtle kick. Adjust to taste.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 4 days. The gravy will thicken as it cools; add a splash of broth when reheating.
- Freezer
- Freeze cooled leftovers in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat gently on the stovetop over medium-low heat, stirring occasionally, until warmed through.
Store any leftovers in an airtight container in the refrigerator for up to 4 days. The flavors will continue to meld, making the leftovers even more delicious.
Reheat gently on the stovetop or in the microwave, adding a splash of beef broth or water if the gravy has thickened too much. The potatoes and carrots will soften further, so it's best to eat them within a couple of days.
This recipe is ideal for make-ahead meals. You can assemble everything in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker base and cook as directed.
Alternatively, cook the entire dish, let it cool, and store in the refrigerator or freezer. Reheat gently on the stovetop or in the microwave.
Serving ideas
Serve this hearty chuck roast over steamed white rice to soak up the delicious gravy. The fluffy rice provides a neutral base that lets the beef and sauce shine.
For a low-carb option, serve over cauliflower rice or alongside crusty bread to mop up every last bit. A sprinkle of fresh parsley or chives adds a pop of color and freshness, though it's optional.
This dish is a complete meal in itself, with protein, vegetables, and starch. Pair it with a simple green salad dressed with lemon vinaigrette to cut through the richness, or serve with a side of steamed green beans. For a cozy dinner, a glass of full-bodied red wine, like a Merlot or Zinfandel, complements the beef beautifully.

Crockpot Dijon Cream Chuck Roast: Dump and Forget

Ingredients
- 3 1/2 lb beef chuck roast
- 1 1/2 lb baby Yukon Gold potatoes, halved
- 4 heirloom carrots, thick-cut
- 1 cup sour cream
- 3 tbsp coarse whole-grain Dijon mustard
- 1 cup au jus
- Steamed white rice, for serving
Instructions
- Place the beef chuck roast in the center of the slow cooker. Scatter the halved baby Yukon Gold potatoes and thick-cut heirloom carrots around the roast, tucking them into the sides.
- Dollop the sour cream over the top of the roast and vegetables. Spread the coarse whole-grain Dijon mustard over the sour cream, covering as much surface as you can.
- Pour the au jus along the side of the slow cooker, being careful not to wash off the sour cream and mustard topping. The liquid should come up about halfway around the roast.
- Cover the slow cooker and cook on LOW for 8 to 10 hours, or on HIGH for 5 to 6 hours, until the beef is fork-tender and easily shreds. Let it rest for 3 minutes before slicing.
- Using two forks, shred the beef right in the slow cooker, mixing it with the cooking liquid and the softened vegetables. The gravy will thicken slightly as you stir. Let it rest for 3 minutes before slicing.
- Turn off the slow cooker and let the shredded beef rest in the hot gravy for at least 10 minutes. This allows the meat to reabsorb some of the liquid and become even more tender.
- Spoon the steaming shredded beef, potatoes, and carrots over fluffy steamed white rice. Drizzle with extra gravy from the slow cooker.
