Tips for success
For a thicker sauce, remove the lid during the last 20 minutes of cooking to allow excess liquid to evaporate. If you prefer a spicier kick, add an extra minced chipotle pepper or a teaspoon of adobo sauce.
For a milder version, reduce the chipotle to one tablespoon and add a pinch of smoked paprika for smokiness without heat.
This recipe is forgiving; you can substitute chicken thighs for breasts for extra juiciness. If using frozen chicken, thaw completely in the refrigerator before cooking. To make it a complete meal, serve over rice, quinoa, or in warm corn tortillas. Leftovers can be stored in the refrigerator for up to four days.
Variations
- Mild and Smoky: Reduce the chipotle peppers to 1 tablespoon and add 1 teaspoon smoked paprika. The dish will be less spicy but still carry a pleasant smokiness that pairs well with the sweet pineapple.
- Extra Veggie: Add 1 diced bell pepper and 1/2 cup frozen corn along with the chicken. The vegetables will soften during cooking and add color and texture to the final dish.
- Spicy Mango Twist: Replace the pineapple tidbits with 1 cup diced mango and add 1 finely chopped jalapeño. The mango brings a different tropical sweetness, and the jalapeño adds a fresh, bright heat.
- Creamy Chipotle: Stir in 1/2 cup sour cream or Mexican crema after shredding the chicken. This adds a tangy, creamy element that balances the smokiness and makes the sauce even richer.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days. Reheat gently before serving.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator.
- Reheat
- Reheat in a saucepan over medium heat, adding a splash of broth or water to loosen the sauce. Or microwave in 30-second bursts, stirring between.
Store leftover fiesta chicken in an airtight container in the refrigerator for up to 4 days. The flavors will meld further overnight.
Reheat gently in the microwave or on the stovetop, adding a splash of chicken broth or water if the sauce has thickened too much. Do not leave the cooked dish at room temperature for more than 2 hours.
The entire dish can be prepared a day ahead and refrigerated after cooking. Reheat on the stovetop or in the microwave until piping hot.
You can also assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate, then cook the next day. Add 30 minutes to the cooking time if starting from cold.
Serving ideas
Serve this chipotle pineapple fiesta chicken over steamed Spanish red rice for a vibrant, satisfying plate. The rice soaks up the sweet-spicy sauce, and the melted cheese adds a creamy finish.
Garnish with fresh cilantro, diced avocado, or a dollop of sour cream if desired, though these are optional and not shown in the video.
For a taco night, spoon the chicken into warm corn or flour tortillas and top with pickled onions or a squeeze of lime. The dish also works well as a filling for burritos, quesadillas, or enchiladas. Leftovers can be repurposed into a hearty nacho topping or a quick lunch bowl with black beans and corn.

Crockpot Chipotle Pineapple Fiesta Chicken: Easy Dump Meal

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 1 can (20 oz) pineapple tidbits in juice, drained
- 2 tbsp chipotle peppers in adobo sauce, minced
- 2 cups shredded Oaxaca cheese
- 1 cup shredded Mexican four-cheese blend
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Scatter the drained pineapple tidbits evenly over the chicken. Spoon the minced chipotle peppers in adobo over the pineapple, spreading them as evenly as possible. Top with the shredded Oaxaca cheese and then the Mexican four-cheese blend, covering the chicken completely.
- Place the lid on the slow cooker and set it to LOW. Cook for 4 hours, or until the chicken is tender and easily shreds with a fork. Avoid opening the lid during cooking to keep the heat steady. The cheese will melt and blend with the pineapple and chipotle into a glossy sauce.
- After 4 hours, check that the chicken is cooked through and reaches 165°F (74°C) in the thickest part. Using two forks, shred the chicken directly in the slow cooker, mixing it with the pineapple and cheese sauce. Stir gently to coat every piece with the sauce.
- Cover the slow cooker again and cook on LOW for an additional 20–30 minutes, allowing the shredded chicken to absorb the sweet and smoky sauce. The mixture will look juicy and slightly saucy, not dry. Stir once more before serving.
- Spoon the hot fiesta chicken over steamed Spanish red rice or into warm tortillas. Use a slotted spoon to serve if there is extra liquid. Garnish with fresh cilantro or a squeeze of lime if desired, though the video does not show these additions.
