Tips for success

For the best texture, use a good-quality beef chuck and trim any large fat pieces before cooking. If you prefer a thinner sauce, add a splash of beef broth or water before serving.

For a thicker sauce, remove the lid during the last 30 minutes of cooking to let some liquid evaporate. Taste before serving and adjust salt — the cheese and jalapeños can be salty.

This barbacoa is incredibly versatile. Serve it over rice, in tacos, on nachos, or stuffed into baked potatoes. It also makes a great filling for burritos or quesadillas.

Leftovers keep well in the refrigerator for up to 4 days and can be reheated gently on the stovetop or in the microwave. The flavors continue to develop overnight, making it taste even better the next day.

Variations

  • Chicken version: Swap the beef chuck for 2 1/2 pounds of boneless, skinless chicken thighs. Cook on low for 6 hours, then shred. The cooking time is shorter because chicken doesn't need as long to become tender. Ensure the chicken reaches 165°F (74°C).
  • Extra spicy: Add 2 tablespoons of pickled jalapeño brine along with the sliced jalapeños, and include a finely chopped fresh jalapeño with seeds for more heat. You can also use pepper Jack cheese instead of cheddar for an extra kick.
  • Smoky twist: Add 1 teaspoon of smoked paprika and 1/2 teaspoon of ground cumin to the slow cooker with the tomatoes. This adds a smoky depth that complements the fire-roasted tomatoes and pairs well with the pickled jalapeños.
  • Vegetarian option: Replace the beef with 2 (15-ounce) cans of black beans or pinto beans, drained and rinsed. Cook on low for 4 hours, then stir in the cheese and cream cheese. The beans will absorb the flavors and create a hearty, meatless filling.

Storage and make-ahead

Fridge
Store in an airtight container in the refrigerator for up to 4 days.

Reheat
Reheat gently on the stovetop over medium-low heat, stirring occasionally, or in the microwave in 30-second intervals.

Cool the barbacoa to room temperature within 2 hours of cooking, then transfer to an airtight container. Refrigerate for up to 4 days. For longer storage, freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.

This recipe is ideal for meal prep. Assemble the raw ingredients in the slow cooker insert the night before, cover, and refrigerate. In the morning, place the insert in the slow cooker and cook as directed. Cooked barbacoa can also be made up to 3 days ahead and reheated gently.

Serving ideas

Serve the barbacoa over fluffy white rice or cilantro-lime rice for a complete meal. The creamy, spicy sauce soaks into the rice, making every bite satisfying.

Garnish with fresh cilantro, diced avocado, or a squeeze of lime juice to brighten the flavors. Warm tortillas on the side are perfect for making tacos or burritos.

For a low-effort dinner, spoon the barbacoa onto tostadas or into crunchy taco shells. Top with shredded lettuce, diced tomatoes, and a dollop of sour cream or crema.

The dish is hearty enough to stand alone, but it also pairs well with refried beans or a simple green salad. Leftovers are delicious in quesadillas or as a nacho topping.

Frequently asked questions

Can this recipe be made in an Instant Pot?
Yes. Use the sauté function to brown the beef first for extra flavor, then add the tomatoes, jalapeños, cream cheese, and cheddar. Cook on high pressure for 35 minutes, then allow a natural release for 15 minutes. Shred the beef and stir the sauce before serving.
Why is the sauce watery?
A watery sauce can happen if the slow cooker is overfilled or if the lid is opened too often, causing condensation to drip back. To thicken, remove the lid during the last 30 minutes of cooking, or stir in a slurry of 1 tablespoon cornstarch and 2 tablespoons water.
Can this be frozen?
Yes, this barbacoa freezes well. Cool it completely, then store in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator and reheat gently on the stovetop or in the microwave. Add a splash of broth if needed to loosen the sauce.
What can be used instead of pickled jalapeños?
Use fresh jalapeño slices plus 1 tablespoon of white vinegar or lime juice to mimic the acidity. For a milder flavor, use canned green chiles. Adjust the amount to taste, keeping in mind that pickled jalapeños are more tangy than spicy.
Can this be cooked on high instead of low?
Yes, cook on high for 4-5 hours instead of low for 8 hours. The meat will still be tender, but low and slow is preferred for the most fall-apart texture. Always check that the beef reaches 145°F (63°C) before shredding.

Crockpot Cheddar Rotel Jalapeño Beef Barbacoa in the slow cooker, with creamy sauce and shredded beef

Ingredients

  • 2 1/2 lb beef chuck cubes
  • 1 can (10 oz) fire-roasted diced tomatoes with green chiles
  • 1/2 cup sliced pickled jalapeños
  • 8 oz cream cheese
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. Place the beef chuck cubes in the bottom of a 6-quart slow cooker in a single layer. Pour the fire-roasted diced tomatoes with green chiles over the beef, then scatter the sliced pickled jalapeños over the top. Place the block of cream cheese in the center of the mixture.
  2. Sprinkle the shredded sharp cheddar cheese evenly over the top of the mixture, covering the cream cheese and beef completely.
  3. Cover the slow cooker and cook on low for 8 hours, or until the beef is fork-tender and easily shreds. Do not open the lid during cooking except to check at the end. Let it rest for 3 minutes before slicing.
  4. Once the beef is fork-tender, remove it from the slow cooker and place it on a cutting board. Shred the beef with two forks, discarding any large pieces of fat. Return the shredded beef to the slow cooker and stir to combine with the sauce.
  5. Stir the sauce well to ensure the cream cheese and cheddar are fully melted and smooth. Serve the barbacoa over cilantro-lime rice or in warm tortillas, with extra pickled jalapeños and cheese if desired.
