Tips for success
For the best texture, shred the chicken while it is still warm—it breaks apart more easily and absorbs the sauce better. Use two forks to pull the meat into large chunks, then stir gently to coat.
If you prefer a smoother sauce, use an immersion blender briefly, but be careful not to over-blend the beans. For a thicker sauce, remove the lid for the last 15 minutes of cooking to let excess moisture evaporate.
This dish freezes beautifully. Cool it completely, then transfer to airtight containers or freezer bags. It keeps for up to 3 months.
To reheat, thaw overnight in the refrigerator and warm gently on the stovetop or in the microwave, adding a splash of chicken broth or water if needed. The sauce may separate slightly after freezing, but a good stir will bring it back together.
Variations
- Spicy Chipotle: Add 1–2 chopped chipotle peppers in adobo sauce along with the chicken for a smoky, fiery kick. Reduce the enchilada sauce to 1 cup and add 1/2 cup chicken broth to maintain the sauce consistency.
- Green Enchilada Version: Swap the red enchilada sauce for green tomatillo sauce. Use monterey jack cheese instead of cheddar for a milder, tangier flavor. The rest of the ingredients stay the same.
- Black Bean and Corn: Replace the pinto beans with black beans and add 1 cup frozen corn kernels with the beans. The corn adds a pop of sweetness and color. Cook time remains the same.
- Creamy Salsa Verde: Use a 16-ounce jar of salsa verde instead of red enchilada sauce. Add 1 teaspoon ground cumin and 1/2 teaspoon dried oregano for extra depth. Finish with a handful of fresh cilantro before serving.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat in a saucepan over medium-low heat, stirring occasionally, until hot and bubbling.
Store leftovers in an airtight container in the refrigerator for up to 4 days. The flavors continue to meld, making it even better the next day. Reheat gently on the stovetop over low heat, stirring occasionally, or in the microwave in 30-second increments. Add a splash of chicken broth or water if the sauce thickens too much.
This recipe is ideal for meal prep. Assemble all the ingredients in the slow cooker insert the night before, cover, and refrigerate.
In the morning, place the insert in the slow cooker and cook as directed, adding about 30 minutes to the cooking time if the ingredients are cold. Alternatively, cook the full recipe, shred the chicken, and store in the refrigerator for up to 3 days.
Serving ideas
Serve the fiesta chicken over a bed of fluffy cilantro-lime rice to soak up the creamy sauce. For a low-carb option, spoon it into lettuce cups or serve over cauliflower rice.
A side of warm tortillas or crusty bread also works well for dipping. Garnish with fresh cilantro, diced avocado, or a squeeze of lime to brighten the flavors.
This dish also shines as a filling for tacos, burritos, or quesadillas. Use it to top nachos with extra cheese and jalapeños, or stuff it into bell peppers and bake until tender. The leftovers are versatile enough to reinvent for lunch the next day—try it in a wrap or as a hearty bowl with extra beans and corn.

Crockpot Cheddar Enchilada Fiesta Chicken

Ingredients
- 3 lb boneless skinless chicken breasts
- 1 1/2 cups red enchilada sauce
- 1 can (15 oz) pinto beans, drained and rinsed
- 8 oz cream cheese, softened and cubed
- 2 cups shredded sharp cheddar cheese
- Cilantro-lime rice, for serving
Instructions
- Place the chicken breasts in the bottom of a 6-quart slow cooker in a single layer. Pour the red enchilada sauce over the chicken, then add the drained pinto beans. Dot the cream cheese cubes over the top, and scatter the shredded cheddar cheese evenly over everything.
- Cover the slow cooker and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is cooked through and registers 165°F (74°C) in the thickest part. The sauce will look curdled at first; that is normal. Do not stir during cooking.
- Turn off the slow cooker. Using two forks, shred the chicken directly in the pot into large bite-size pieces. Stir the shredded chicken into the sauce, breaking up any large cream cheese chunks. The sauce will become smooth and velvety as you stir.
- Cover the slow cooker again and cook on low for 15 to 20 minutes, until the sauce is hot and fully combined. The cheese should be completely melted and the sauce thickened slightly. Stir once more before serving.
- Spoon the fiesta chicken over warm cilantro-lime rice. Use a slotted spoon to portion the chicken and beans, then ladle extra sauce over the top. Serve immediately.
