Tips for success
For the best texture, shred the chicken while it's still warm—it pulls apart more easily and absorbs the sauce better. If you prefer a smoother sauce, whisk it well before folding.
You can also add a pinch of cayenne or hot sauce to the white sauce for extra heat. Taste the sauce before adding it; adjust the salt and pepper to your liking.
The pulled chicken freezes beautifully. Store it in an airtight container with some of the cooking liquid to keep it moist. When reheating, add a splash of chicken broth or water to loosen it up.
The white sauce may separate slightly upon reheating; whisk it well to bring it back together. For a lighter option, serve the chicken on a bed of greens instead of a bun.
Variations
- Spicy Kick: Add 1-2 teaspoons of hot sauce or a pinch of cayenne pepper to the white BBQ sauce before folding it into the chicken. For extra heat, also add a diced jalapeño to the slow cooker with the chicken.
- Smoky Twist: Replace the smoked paprika with 1 teaspoon of liquid smoke, added to the vinegar in the slow cooker. This intensifies the smoky flavor without extra spice. You can also use a smoked salt instead of regular salt in the seasoning.
- Honey-Sweetened: Stir 1-2 tablespoons of honey into the white BBQ sauce for a touch of sweetness that balances the tang and heat. This works especially well if you prefer a milder pepper flavor.
- Low-Carb Bowl: Skip the buns and serve the pulled chicken over a bed of shredded lettuce or cauliflower rice. Top with extra pickles and a drizzle of white BBQ sauce for a lighter meal that still delivers on flavor.
Storage and make-ahead
- Fridge
- Store leftover pulled chicken in an airtight container in the refrigerator for up to 4 days. Keep the sauce separate if possible to avoid sogginess.
- Freezer
- Freeze the pulled chicken (without the buns) in a freezer-safe container for up to 3 months. Thaw overnight in the refrigerator before reheating.
- Reheat
- Reheat the pulled chicken in a skillet over medium heat, adding a splash of chicken broth or water to restore moisture.
Leftover pulled chicken can be stored in an airtight container in the refrigerator for up to 4 days. Let it cool completely before refrigerating.
To reheat, warm it gently in a skillet or microwave, adding a little broth or water to restore moisture. The chicken can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
You can season the chicken and place it in the slow cooker insert the night before, then refrigerate overnight. In the morning, place the insert in the slow cooker and cook as directed.
The white BBQ sauce can also be made up to a week ahead and stored in the refrigerator. The cooked pulled chicken can be made 2 days ahead and reheated gently.
Serving ideas
Serve the pulled chicken piled high on toasted brioche buns, with extra dill pickle spears on the side. The pickles provide a crisp, tangy contrast to the creamy chicken. For a complete meal, add a simple coleslaw or potato salad. The sandwiches are hearty enough for a main course, but you could also serve smaller portions as sliders.
For a Southern-style spread, pair these sandwiches with baked beans, mac and cheese, or a green salad. The tangy white sauce also works well drizzled over the chicken as a topping. If you have leftover sauce, use it as a dip for fries or roasted vegetables. The dish is best served warm, right after assembling, so the buns stay crisp.

Crockpot Alabama White BBQ Pulled Chicken

Ingredients
- 3 lb boneless, skinless chicken thighs
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp coarse black pepper
- 1/2 cup apple cider vinegar
- 2 tbsp butter, cut into small pieces
- 1 cup Alabama white BBQ sauce (store-bought or homemade)
- 6 brioche buns, split and toasted
- Dill pickle spears, for serving
Instructions
- Place the chicken thighs in the slow cooker insert. In a small bowl, stir together the smoked paprika, garlic powder, and coarse black pepper. Sprinkle the seasoning mixture over the chicken and toss with tongs to coat evenly. Pour the apple cider vinegar over the chicken and scatter the butter pieces on top.
- Place the glass lid on the slow cooker. Set the slow cooker to LOW and cook for 4 hours, until the chicken is tender and easily shreds with a fork. Avoid lifting the lid during cooking to keep the heat and moisture inside.
- Remove the chicken from the slow cooker to a cutting board or large bowl. Using two forks, shred the chicken into bite-sized pieces. Discard any large pieces of fat. Return the shredded chicken to the slow cooker.
- Pour the Alabama white BBQ sauce over the shredded chicken. Stir gently with tongs or a spatula until the chicken is evenly coated with the creamy, peppery sauce. Let it heat through for about 5 minutes on LOW, stirring once.
- While the chicken finishes heating, split the brioche buns and toast them cut-side down in a skillet over medium heat until golden and crisp, about 1 to 2 minutes. Alternatively, toast them in a toaster oven or under the broiler.
- Pile a generous amount of the creamy pulled chicken onto the bottom half of each toasted brioche bun. Top with crisp dill pickle spears, then close with the top bun. Serve immediately while warm.
