Tips for success
For the absolute best results, try shredding your own cheese from a block rather than buying pre-shredded packages. Block cheese does not contain the anti-caking agents found in pre-bagged varieties, meaning it melts much more smoothly and creates that spectacular, gooey cheese stretch shown in the video.
If you prefer a bit of a crust on the bottom and sides of your casserole, you can cook it on the high setting for the entire duration, as the higher heat encourages a delicious golden browning where the potatoes contact the slow cooker insert.
If you find that your slow cooker tends to trap too much condensation on the lid, which can drip back down onto the cheese and make it soggy, place a clean paper towel or a thin kitchen towel across the top of the slow cooker insert before putting the lid on during the last 30 minutes of cooking.
This towel will absorb the rising steam, keeping the cheese topping beautifully glossy, thick, and perfectly melted without any watery pools on the surface.
Variations
- Spicy Jalapeño Taco Casserole: Stir in a can of diced green chilies or freshly chopped jalapeños to the beef mixture before slow cooking for a spicy kick.
- Black Bean and Corn Taco Casserole: Add a drained can of black beans and sweet corn to the slow cooker mixture to add more color and texture to the dish.
Storage and make-ahead
- Fridge
- Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days, cooling for no more than 2 hours first.
- Freezer
- Freeze in a freezer-safe container or heavy-duty freezer bags for up to 3 months. Thaw in the refrigerator overnight.
- Reheat
- Reheat individual portions in the microwave for 1 to 2 minutes, or in an oven-safe dish at 350°F (175°C) for 15 to 20 minutes until hot.
Allow any leftover casserole to cool completely at room temperature for no more than two hours before transferring it to an airtight container. Store the container in the refrigerator for up to three to four days. To freeze, transfer the cooled portions to a freezer-safe container or heavy-duty freezer bags, removing as much air as possible, and freeze for up to three months. Thaw frozen leftovers in the refrigerator overnight before reheating.
This casserole is highly suitable for preparing ahead of time. You can brown the ground beef with the taco seasoning and mix it with the thawed hash browns and condensed cheese soup the night before. Store this mixture in a covered bowl in the refrigerator overnight.
In the morning, transfer the chilled mixture to the slow cooker, top with the shredded cheese, and cook as directed, adding about 30 minutes to the total cooking time to account for the cold ingredients.
Serving ideas
Serve this hearty casserole straight from the slow cooker to keep it warm and gooey throughout the meal. It pairs wonderfully with classic taco toppings set out in small bowls so everyone can customize their plate.
Fresh sliced jalapeños, chopped green onions, diced tomatoes, and a dollop of sour cream or guacamole add a bright, fresh contrast to the rich, savory flavors of the beef and cheese. A splash of your favorite hot sauce can also bring a welcome touch of heat.
To round out the meal, serve the casserole alongside a simple, crisp green salad dressed with a lime vinaigrette, or a side of warm black beans and corn salad. The acidity and freshness of these sides help balance the comforting richness of the potato and cheese base. It is also excellent served as a filling for warm flour tortillas or scooped up with crispy tortilla chips for a fun, interactive family dinner.

Crock Pot Taco Hash Brown Casserole

Ingredients
- 1 lb ground beef
- 1 oz taco seasoning
- 30 oz frozen shredded hash browns, thawed and drained
- 10.75 oz condensed cheddar cheese soup
- 2 cups shredded Mexican blend cheese
Instructions
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a wooden spoon, for 6 to 8 minutes until it is fully browned and no pink remains. Ensure the beef reaches a safe internal temperature of 160°F (71°C). Stir in the taco seasoning until the meat is evenly coated. Remove the skillet from the heat and carefully drain any excess grease from the pan.
- In the greased insert of a 6-quart slow cooker, combine the cooked and seasoned taco beef, the thawed shredded hash browns, and the canned condensed cheddar cheese soup. Use a large spoon to stir the ingredients together thoroughly until the potatoes and beef are evenly distributed and coated in the creamy cheese soup.
- Spread the mixture into an even layer in the slow cooker. Sprinkle the shredded Mexican blend cheese evenly over the top of the potato and beef mixture. Cover the slow cooker with its lid and cook on low for 4 hours, or on high for 2 hours, until the casserole is hot and bubbling.
- Once the cooking time is complete and the cheese is fully melted and glistening, turn the slow cooker to the warm setting. Let the casserole rest for 5 minutes to set slightly. Scoop generous portions of the hot, cheesy taco casserole directly from the slow cooker and serve immediately.
