Tips for success

To prevent the gravy from becoming too watery, ensure the slow cooker lid fits tightly to minimize condensation dripping back into the pot. If you prefer an even thicker gravy, you can whisk a tablespoon of cornstarch with two tablespoons of cold water to create a slurry.

Stir this mixture into the hot gravy during the last thirty minutes of cooking before adding the cheese, allowing it to bubble and thicken beautifully.

For an authentic French onion soup experience, toast a few slices of French baguette or rustic sourdough bread under the broiler with a rub of garlic and olive oil.

Place these toasted bread rounds directly on top of the meatballs in the slow cooker before layering the cheese. This allows the bread to soak up the rich onion gravy while providing a sturdy base for the melted cheese pull.

Variations

  • French Onion Chicken Meatballs: Substitute the ground beef meatballs with chicken or turkey meatballs for a lighter alternative. Ensure they reach a safe internal temperature of 165°F (74°C) when cooked.
  • Provolone and Parmesan Topping: Swap the cheese for a blend of sliced provolone and grated Parmesan cheese to create a slightly different, savory cheese pull.

Storage and make-ahead

Fridge
Store leftovers in an airtight container in the refrigerator for up to 3 to 4 days.
Freezer
Freeze the cooked meatballs and gravy without the cheese topping in a freezer-safe container for up to 3 months. Thaw overnight in the fridge.
Reheat
Reheat gently in a saucepan over medium-low heat until the meatballs reach 165°F (74°C), then top with fresh cheese and cover until melted.

Allow any leftover meatballs and gravy to cool completely at room temperature for no more than two hours before transferring them to an airtight container.

Store them in the refrigerator for up to three to four days. Keep the leftover cheese topping intact if possible, as it reheats beautifully alongside the meatballs and gravy, maintaining its rich texture.

You can easily prepare this dish ahead of time. Slice the onions and grate the cheese the night before, storing them in separate containers in the refrigerator. When ready to cook, simply sear the meatballs, caramelize the onions, layer everything in the slow cooker, and proceed with the recipe as directed for an effortless dinner.

Serving ideas

Serve these rich and savory meatballs hot directly from the slow cooker to preserve the melting cheese texture. They pair wonderfully over a bed of creamy mashed potatoes, which soak up the luxurious caramelized onion gravy perfectly.

Alternatively, serve them over buttered egg noodles or white rice for a comforting, hearty meal that the whole family will love.

For a lighter option, accompany the meatballs with a crisp green salad tossed in a light vinaigrette to balance the richness of the cheese and gravy. Steamed green beans or roasted asparagus also make excellent side dishes. Do not forget to serve extra crusty bread on the side to mop up every last drop of the delicious French onion gravy.

Frequently asked questions

Can these meatballs be made in an oven instead of a slow cooker?
Yes, assemble everything in a Dutch oven or deep casserole dish. Cover and bake at 350°F (175°C) for forty-five minutes, then top with cheese and broil until melted.
How can the onion gravy be thickened if it is too runny?
Whisk one tablespoon of cornstarch with two tablespoons of cold water to create a smooth slurry. Stir this into the slow cooker thirty minutes before adding the cheese.
Can frozen meatballs be used for this recipe?
Yes, store-bought or pre-made frozen meatballs can be used. Thaw them completely in the refrigerator before searing to ensure they brown nicely and heat through evenly.

Prep 10 minCook 4 h 20 minRest 5 minTotal 4 h 35 minServes 6

Ingredients

  • 24 ground beef meatballs, store-bought or made ahead
  • 2 large yellow onions, thinly sliced
  • 2 cups savory beef broth
  • 1 1/2 cups shredded cheese, such as Gruyere or Swiss
  • fresh parsley, chopped for serving

Instructions

  1. Heat a large skillet over medium-high heat. Add the ground beef meatballs in a single layer. Sear for five to six minutes, turning occasionally, until a golden-brown crust forms on all sides. Transfer the seared meatballs to a plate and set aside.
  2. In the same skillet over medium heat, add the sliced yellow onions. Cook, stirring frequently, for about fifteen minutes until they are soft, sweet, and deeply caramelized. Pour in the savory beef broth, scraping up any browned bits from the bottom of the pan.
  3. Transfer the caramelized onions and beef broth mixture into the slow cooker. Gently nestle the seared meatballs into the liquid. Cover and cook on low for four hours, or on high for two hours, until the meatballs are tender and reach an internal temperature of 160°F (71°C).
  4. Uncover the slow cooker and sprinkle the shredded cheese evenly over the top of the meatballs. Cover with the lid and cook on high for ten to fifteen minutes, or until the cheese is completely melted, bubbling, and hot.
  5. Sprinkle the fresh chopped parsley over the melted cheese. Serve the meatballs hot directly from the slow cooker, spooning the rich caramelized onion gravy over each portion.
