Tips for success
To add another layer of flavor, drizzle a tiny amount of high-quality pomegranate molasses over the beets before serving.
The tart sweetness pairs beautifully with the earthy beets and the tangy goat cheese, elevating the dish to a professional level with just one simple, final touch.
If the beets are particularly large, cut them into smaller, bite-sized pieces so that every triangle of flatbread contains a balanced amount of topping. This ensures that the guest gets a harmonious bite of the crunchy crust, creamy cheese, and sweet vegetable in every mouthful.
Variations
- Honey and Balsamic: Drizzle a small amount of honey and balsamic reduction over the finished flatbread to enhance the sweetness of the roasted beets and add a tangy depth that complements the goat cheese perfectly.
- Herb-Infused: Fold finely chopped fresh mint or dill into the whipped goat cheese before spreading it on the flatbread. This adds a refreshing, herbaceous note that cuts through the creaminess of the cheese.
Storage and make-ahead
- Fridge
- Keep in the refrigerator for up to 24 hours in an airtight container.
- Reheat
- Reheat the flatbread base in a 350°F oven for 5 minutes before adding the toppings.
Store any leftovers in an airtight container in the refrigerator. Because the flatbread is topped with fresh cheese and vegetables, it is best consumed within 24 hours to maintain the integrity of the crust.
Keep the toppings and the bread separate if you plan to serve this over multiple days.
You can prepare the whipped goat cheese and roast the beets up to two days in advance. Keep them in separate containers in the refrigerator.
When you are ready to serve, simply bake the flatbread fresh, whip the cheese for a few seconds to refresh it, and assemble just before eating.
Serving ideas
Serve this flatbread immediately after assembly while the crust is still warm and the toppings are fresh. It works exceptionally well as a starter for a dinner party, paired with a light, crisp white wine or a sparkling beverage to cut through the richness of the goat cheese.
Arrange the flatbread on a dark slate board or a wooden serving platter to highlight the vibrant colors of the beets and pistachios.
Place a few extra sprigs of fresh herbs, such as mint or parsley, around the board for a beautiful, bistro-inspired presentation that guests will appreciate.
