Tips for success
For the crispiest kadayıf, toast it in a single layer in the skillet, and don't overcrowd. If your skillet is small, do it in batches.
The sugar helps create that crackly texture, but be careful not to let it burn—keep the heat low and stir often. If the kadayıf seems too dry, add an extra tablespoon of butter.
When making the custard, use a heavy-bottomed saucepan to prevent scorching. Whisk in a figure-eight motion to ensure even thickening.
If you're nervous about lumps, you can strain the custard through a fine-mesh sieve before adding the butter and vanilla. The custard will set as it chills, so don't worry if it seems slightly loose when warm.
Variations
- Chocolate Swirl: Melt 1/2 cup of semisweet chocolate chips and swirl it into the custard before layering. This adds a rich chocolate flavor that pairs beautifully with the nuts and buttery kadayıf.
- Citrus Zest: Add the zest of one orange or lemon to the custard along with the vanilla. The bright citrus notes cut through the richness and add a refreshing lift.
- Spiced Nut Mix: Replace the walnuts with a mix of pistachios and almonds, and add 1/2 teaspoon of ground cinnamon to the kadayıf mixture. This gives the dessert a warm, aromatic flavor.
- Coffee Infusion: Steep 1 tablespoon of instant espresso powder in the warm milk before making the custard. The coffee adds depth and pairs wonderfully with the caramelized kadayıf.
Storage and make-ahead
- Fridge
- Store in the refrigerator, covered, for up to 3 days. The top may soften, but the custard stays creamy.
- Freezer
- This dessert can be frozen for up to 1 month. Wrap tightly in plastic wrap and then foil. Thaw in the refrigerator overnight before serving.
- Reheat
- To reheat, place slices in a 350°F oven for 5-10 minutes until warmed through. This will help crisp the top slightly.
Store any leftover dessert in the refrigerator, covered, for up to 3 days. The top kadayıf may soften over time, but the custard will remain creamy. To keep the top as crisp as possible, you can reheat the dessert briefly in a 350°F oven for 5-10 minutes, but this is optional.
This dessert is perfect for making a day ahead. Prepare the entire recipe, let it cool, then cover and refrigerate.
The flavors meld beautifully overnight, and the custard sets even firmer. When ready to serve, let it sit at room temperature for 15-20 minutes to take the chill off, then cut and serve.
Serving ideas
Serve this dessert chilled or at room temperature, cut into squares or rectangles. The contrast between the crispy kadayıf and the smooth custard is the star, so keep the plate simple.
A dusting of powdered sugar or a few extra chopped walnuts on top can add visual appeal, but it's not necessary. A dollop of whipped cream or a scoop of vanilla ice cream would be lovely, but the dessert stands beautifully on its own.
For a pretty presentation, use a sharp knife to cut clean slices, wiping the blade between cuts. The dessert is rich, so a small portion goes a long way. It pairs wonderfully with strong coffee or Turkish tea, making it a perfect ending to a Middle Eastern-inspired meal.
