Tips for success
For the crispiest crust, roll the dough as thin as possible without tearing. A thin rolling pin gives you better control, and turning the dough frequently helps keep it round.
Use a dry, screaming-hot pan; if the pan is not hot enough, the dough will cook slowly and become tough. Do not flip too early; wait until the underside is deeply blistered and golden.
Brushing the gözleme with melted butter immediately after cooking is key to flavor and texture. The butter soaks into the hot crust, making it rich and glossy.
If you prefer a lighter version, you can brush with olive oil instead, but butter gives the classic taste. Serve the gözleme hot, and if making ahead, reheat in a dry skillet to restore crispness.
Variations
- Spinach and Feta: Replace the potato filling with a mixture of sautéed spinach, crumbled feta, and a little dill. Omit the red pepper flakes for a milder flavor. Cook the same way, brushing with butter.
- Spicy Lamb: Brown ground lamb with onions, cumin, and paprika. Mix with a little crumbled feta and use as the filling. Cook until the dough is golden and the lamb is heated through.
- Herbed Cheese: Use a blend of crumbled feta, shredded mozzarella, and chopped fresh mint or parsley. Skip the potatoes for a lighter, cheese-only filling. Perfect for a quick snack.
- Sweet Version: For dessert, fill the dough with a sweetened mixture of mashed pumpkin or sweet potato, cinnamon, and a little sugar. Brush with butter and sprinkle with powdered sugar before serving.

The dough can be made a day ahead and kept in the refrigerator, covered. Bring it to room temperature before rolling. The filling can also be prepared in advance and refrigerated for up to 2 days. Assemble the gözleme just before cooking to prevent the dough from becoming soggy.
Serving ideas
Serve the gözleme hot, sliced into triangles, with a side of Turkish tea or ayran. The crisp, buttery crust pairs beautifully with a cool, tangy yogurt sauce or a simple salad of tomatoes and cucumbers.
For a heartier meal, serve alongside a bowl of lentil soup or a fresh green salad.
Gözleme is best enjoyed fresh off the pan, when the crust is at its crispiest and the cheese is gloriously stretchy.
Cut into wedges and serve on a shared platter for a casual gathering. It also makes a wonderful packed lunch; reheat in a toaster oven or skillet to revive the crunch.

Crispy Turkish Potato and Cheese Gözleme

Ingredients
- 4 medium russet potatoes, boiled
- 2 tbsp unsalted butter, softened
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp red pepper flakes
- 2 tbsp fresh parsley, chopped
- 1 cup shredded kaşar cheese
- 3 cups all-purpose flour
- 1 cup warm water
- 1/2 tsp salt
- 2 tbsp olive oil
- 4 tbsp unsalted butter, melted
Instructions
- In a large bowl, combine the flour and salt. Add the warm water and olive oil, and stir until a shaggy dough forms. Turn out onto a lightly floured surface and knead for about 5 minutes, until smooth and elastic. Cover with a damp towel and let rest for 30 minutes.
- While the dough rests, boil the potatoes in salted water until fork-tender, about 15 minutes. Drain and return to the pot. Add the softened butter, salt, black pepper, red pepper flakes, and chopped parsley. Mash until smooth and fluffy. Let cool slightly, then stir in the shredded kaşar cheese.
- Divide the rested dough into 4 equal pieces. On a lightly floured surface, roll each piece into a large, paper-thin circle, about 14 inches in diameter. Keep the other pieces covered while working.
- Spread a quarter of the potato-cheese filling over one half of each rolled dough circle, leaving a 1-inch border. Fold the other half over to create a D-shaped half-moon. Press the edges firmly to seal, then crimp with a fork if desired.
- Heat a large cast iron skillet or sac pan over medium-high heat until very hot. Place one gözleme in the dry pan. Cook for 2-3 minutes, until bubbles form and the bottom is blistered and golden. Flip and cook the other side for another 2-3 minutes.
- After flipping, brush the top generously with melted butter. When the second side is golden and blistered, remove from the pan and immediately brush the other side with more melted butter. Repeat with the remaining gözleme.
- Let the cooked gözleme rest for 2 minutes, then slice into triangles with a sharp knife. Serve hot, with Turkish black tea if desired.
