Tips for success
For the crispiest result, fry the eggplant right after flouring and do not let it sit. The flour absorbs moisture from the eggplant over time, which can make the crust heavy.
Use a wide skillet and enough oil to come about 1/4 inch up the sides. Keep the oil at a steady medium-high heat, adjusting as needed to maintain a vigorous sizzle without burning.
The garlic yogurt can be made a few hours ahead and kept refrigerated. The red pepper butter is best made fresh, but it can be gently reheated.
If the eggplant fans cool and lose their crunch, reheat them in a 400°F (200°C) oven for a few minutes until crisp again. Serve the yogurt at room temperature for the best contrast with the hot eggplant.
Variations
- Spicy Tomato Sauce: Replace the red pepper butter with a quick tomato sauce: simmer 1 cup crushed tomatoes with 1 clove garlic, 1 tsp red pepper flakes, and a pinch of salt for 10 minutes. Drizzle over the eggplant with the yogurt.
- Herbed Yogurt: Stir 2 tbsp chopped fresh dill, mint, or parsley into the garlic yogurt. Add a squeeze of lemon juice for brightness. This variation is especially good in summer.
- Baked Version: For a lighter take, brush the floured fans with oil and bake at 425°F (220°C) for 20-25 minutes, flipping once, until golden and crisp. The texture will be less shatter-crisp but still delicious.
- Nutty Crunch: Add 1/4 cup finely chopped walnuts or pistachios to the red pepper butter just before drizzling. The nuts toast slightly in the warm butter and add extra crunch and flavor.
Storage and make-ahead
- Fridge
- Store leftover fried eggplant in an airtight container for up to 2 days. Keep yogurt and butter separately. Reheat in a 400°F (200°C) oven for 5-7 minutes.
- Freezer
- Not recommended for freezing; the crust will become soggy. Freeze only the roasted eggplant fans before frying, then thaw and proceed with flouring and frying.
- Reheat
- Reheat fried eggplant in a 400°F (200°C) oven on a baking sheet for 5-7 minutes until crisp. Do not microwave.
Leftover fried eggplant can be stored in an airtight container in the refrigerator for up to 2 days. The garlic yogurt and red pepper butter should be stored separately. To reheat, place the eggplant on a baking sheet and warm in a 400°F (200°C) oven for 5 to 7 minutes until crisp. Avoid microwaving, which makes the crust soggy.
The eggplants can be roasted, peeled, and pressed into fans up to 1 day ahead. Keep them covered in the refrigerator. Bring them to room temperature before flouring and frying.
The garlic yogurt can also be made ahead and refrigerated. The red pepper butter is best made just before serving, but it can be made a few hours ahead and reheated gently.
Serving ideas
Serve the crispy eggplant fans as a main course with rice, bulgur, or warm flatbread. A simple green salad with lemon and herbs makes a bright side.
For a meze spread, arrange the fans on a platter with the garlic yogurt drizzled on top and the red pepper butter spooned over. Let everyone tear off pieces and dunk them into the sauce.
This dish is also delicious as a sandwich filling, tucked into a crusty roll with extra yogurt and fresh herbs. It can be served warm or at room temperature, though it is best within an hour of frying. If serving at room temperature, keep the yogurt and butter separate and add them just before serving to preserve the crunch.

Crispy Turkish Fan-Fried Eggplant with Garlic Yogurt

Ingredients
- 2 large eggplants (about 1 lb each)
- 1 tsp fine salt, plus more for seasoning
- 1 cup all-purpose flour
- 1 cup vegetable oil, for frying
- 1 cup thick plain yogurt (Greek-style)
- 2 cloves garlic, minced
- 2 tbsp unsalted butter
- 1 tsp red pepper flakes (or aleppo pepper)
Instructions
- Heat the oven to 400°F (200°C). Prick the eggplants all over with a fork. Place them on a baking sheet and roast until very soft and collapsed, about 20 minutes. Let cool just enough to handle. Peel off the skin while keeping the green stem intact. Place each peeled eggplant on a cutting board and gently press flat with a fork into a wide accordion fan.
- Season both sides of the flattened eggplant fans with fine salt. Spread the all-purpose flour on a flat platter. Dredge each eggplant fan thoroughly in the flour, pressing gently so the flour adheres to every surface. Shake off any excess and set aside on a plate.
- Heat the vegetable oil in a large skillet over medium-high heat until shimmering. Carefully lay the floured eggplant fans in the hot oil. Fry without moving for 3 minutes, then flip and fry for another 3 minutes until both sides are deep golden brown and blistered. Use tongs to transfer to a paper-towel-lined plate to drain.
- In a small bowl, stir together the thick yogurt and minced garlic. In a small saucepan, melt the butter over low heat. Add the red pepper flakes and swirl for 30 seconds until fragrant and sizzling. Remove from heat.
- Spread the garlic yogurt on a serving platter or individual plates. Place the crispy eggplant fans on top. Drizzle with the red pepper butter while still warm. Serve immediately, encouraging everyone to dunk each crunchy piece into the yogurt before eating.
