Tips for success
For the crispiest results, make sure the eggplant fans are thoroughly dry before coating with flour. Any excess moisture will make the flour clump and prevent a crisp crust.
Also, do not skip the salting step after pressing—it helps draw out moisture and seasons the eggplant from within.
If you prefer a lighter version, you can shallow-fry with less oil, but the eggplant will not be as uniformly crispy. A deep skillet with about 1/2 inch of oil works well. For an extra touch, you can add a pinch of sumac or dried mint to the yogurt for a more authentic Turkish flavor.
Variations
- Herbed Yogurt: Add 1 tablespoon of chopped fresh dill or mint to the garlic yogurt for a brighter, more aromatic flavor. This is a common variation in Turkish cuisine and adds a lovely freshness.
- Spicy Tomato Sauce: Instead of red pepper butter, top the eggplant with a quick tomato sauce made with sautéed tomatoes, garlic, and a pinch of Aleppo pepper. This adds a tangy, savory element.
- Baked Version: For a lighter take, skip the frying and bake the floured eggplant fans at 425°F (220°C) for 15-20 minutes, flipping once, until crisp and golden. The texture will be slightly different but still delicious.
- Add Ground Meat: For a heartier dish, top the fried eggplant with seasoned ground lamb or beef, cooked with onions and spices, before adding the yogurt and butter. This turns the appetizer into a main course.
Storage and make-ahead
- Fridge
- Store leftover fried eggplant in an airtight container in the refrigerator for up to 2 days.
- Freezer
- Freezing is not recommended as the eggplant will become mushy upon thawing.
- Reheat
- Reheat fried eggplant in a 400°F (200°C) oven for 5-7 minutes to crisp up. The yogurt and butter can be reheated gently on the stove or microwave.
Leftover fried eggplant is best enjoyed immediately, but if you have leftovers, store them in an airtight container in the refrigerator for up to 2 days.
The eggplant will lose its crispness but can be reheated in a 400°F (200°C) oven for 5-7 minutes to revive some crunch. The garlic yogurt and red pepper butter can also be stored separately in the fridge for up to 3 days.
The garlic yogurt and red pepper butter can be prepared up to 2 days in advance and stored in the refrigerator. The eggplants can be roasted and pressed a day ahead, then kept covered in the fridge.
When ready to serve, bring them to room temperature, coat with flour, and fry as directed. This makes the final assembly quick and easy.
Serving ideas
Serve the fan-fried eggplant as a stunning appetizer or a side dish alongside grilled meats or rice. The combination of crispy eggplant, cool yogurt, and spicy butter is incredibly satisfying.
For a more substantial meal, you can serve it with warm bread to soak up every last bit of the sauce.
This dish is also wonderful as a mezze spread, alongside hummus, tabbouleh, and other small plates. The vibrant colors and textures make it a centerpiece on any table. Garnish with fresh herbs like parsley or mint if desired, though the video does not show this.

Crispy Turkish Fan-Fried Eggplant with Garlic Yogurt

Ingredients
- 2 large eggplants
- 1 tsp kosher salt
- 1/2 cup all-purpose flour
- 1 cup vegetable oil, for frying
- 1 cup thick Greek yogurt
- 2 cloves garlic, minced
- 1/4 tsp salt
- 3 tbsp unsalted butter
- 1 tsp sweet paprika
- 1/2 tsp red pepper flakes
Instructions
- Heat the oven to 425°F (220°C). Pierce the eggplants several times with a fork to allow steam to escape. Place them on a baking sheet and roast for 25-30 minutes, turning once, until the skin is wrinkled and the flesh feels very soft when pressed. Let cool just enough to handle, then peel off the skin while keeping the green stem intact.
- Place each peeled eggplant on a cutting board. Using a fork, gently press down lengthwise to flatten into a wide accordion fan shape. The flesh should spread into ridges. Sprinkle with kosher salt and let sit for 5 minutes to draw out excess moisture.
- Spread the all-purpose flour on a plate. Dredge each eggplant fan in the flour, pressing lightly so the flour adheres to all the ridges and crevices. Shake off any excess flour.
- Heat the vegetable oil in a large skillet over medium-high heat until shimmering (about 350°F / 175°C). Carefully lay the floured eggplant fans into the hot oil, working in batches to avoid crowding. Fry for about 3 minutes per side, flipping once, until both sides are blistered, amber, and crisp.
- Using tongs, transfer the fried eggplant fans to a plate lined with paper towels to drain excess oil. Sprinkle lightly with a pinch of salt while still hot.
- In a small bowl, combine the thick Greek yogurt, minced garlic, and salt. Stir until smooth and well blended. Set aside.
- In a small saucepan, melt the butter over medium heat. Add the sweet paprika and red pepper flakes, stirring for 30 seconds until fragrant and sizzling. Remove from heat.
- Spread a generous layer of garlic yogurt on a serving platter. Arrange the crispy eggplant fans on top. Drizzle with the hot red pepper butter, letting it sizzle over the yogurt. Serve immediately while the eggplant is still crisp.
