Tips for success

For the crispiest crust, make sure the oil is at the correct temperature before adding the chicken. If the oil is too hot, the outside will brown too quickly and the inside may remain undercooked.

If it’s too cool, the crust will absorb oil and become greasy. Use a deep-fry thermometer and adjust the heat as needed during frying.

When rolling the wraps, tuck the filling in tightly as you roll to avoid air pockets. If the tortilla tears, it’s okay—just toast it seam-side down and it will hold together.

For extra flavor, brush the outside of the tortilla with a little oil before toasting, though it’s not necessary. Serve the wraps immediately after slicing to enjoy the contrast of warm, crisp, and cool textures.

Variations

  • Grilled Chicken Version: Skip the breading and frying. Season the pounded chicken with the same spice rub, then grill or pan-sear until cooked through. Slice and use in the wrap for a lighter, smokier flavor.
  • Buffalo Caesar Wrap: Toss the fried chicken strips in buffalo sauce before wrapping. Reduce the chili paste in the dressing to 1 tsp to balance the heat. Add a drizzle of blue cheese dressing if desired.
  • Avocado Caesar Wrap: Add sliced avocado to the wrap along with the romaine and chicken. The creamy avocado complements the spicy dressing and adds extra richness.
  • Spicy Chicken Caesar Salad: Turn the wrap into a salad by serving the crispy chicken strips over a bed of dressed romaine, topped with shaved parmesan and extra chili dressing.

Storage and make-ahead

Fridge
Store leftover wraps in the refrigerator for up to 2 days. Keep components separate for best texture.
Freezer
Freeze the fried chicken strips for up to 2 months. Thaw overnight and reheat in a 375°F (190°C) oven until hot and crisp.
Reheat
Reheat assembled wraps in a dry skillet over medium heat for 2–3 minutes per side, or in an air fryer at 350°F (175°C) for 3–4 minutes.

Store leftover wraps in an airtight container in the refrigerator for up to 2 days. To keep the tortilla from getting soggy, store the components separately if possible: keep the chicken, dressed romaine, and tortillas in separate containers.

If already assembled, reheat in a dry skillet over medium heat to restore some crispness.

The spicy Caesar dressing can be made up to 3 days ahead and stored in the refrigerator. The chicken can be breaded and refrigerated for up to 4 hours before frying. The romaine can be washed and chopped a day ahead, but do not dress it until ready to assemble. Warm the tortillas just before serving.

Serving ideas

Serve the wraps warm, sliced diagonally, with extra chili Caesar dressing on the side for dipping. The wraps are substantial enough for a main course, but you can also serve them with a simple side of roasted potatoes or a light soup. For a lighter meal, cut them into smaller pieces and serve as appetizers.

These wraps are best eaten immediately after assembling, while the chicken is still crisp and the romaine is cold and crunchy.

If serving a crowd, keep the components warm and assemble to order. The spicy kick from the chili paste is balanced by the creamy dressing, so adjust the heat level to your preference.

Frequently asked questions

Can this wrap be made ahead of time?
The components can be prepared ahead: the dressing can be made up to 3 days in advance, and the chicken can be breaded and refrigerated for up to 4 hours before frying. However, the assembled wrap is best eaten immediately to preserve the crispness of the chicken and tortilla.
What is the best way to reheat leftover wraps?
Reheat in a dry skillet over medium heat for 2–3 minutes per side, or in an air fryer at 350°F (175°C) for 3–4 minutes. This helps restore some crispness to the tortilla and warms the filling without making it soggy.
Can the chicken be baked instead of fried?
Yes, but the crust will be less crispy. Brush the breaded chicken with oil and bake at 425°F (220°C) for 15–20 minutes, flipping once, until the internal temperature reaches 165°F (74°C).
What can be used instead of Calabrian chili paste?
Sriracha is a good substitute, or use 1 teaspoon of red pepper flakes soaked in a little warm water. Adjust the amount to taste, as heat levels vary.
How can the wrap be kept from getting soggy?
Toss the romaine with dressing just before assembling, and do not overfill the wrap. Toasting the assembled wrap seam-side down helps seal it and adds a barrier that keeps the tortilla crisp.

Crispy Spicy Chicken Caesar Wrap

Crispy spicy chicken Caesar wrap sliced diagonally showing golden chicken, romaine, and creamy dressing

Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 tbsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups seasoned panko breadcrumbs
  • Vegetable oil, for frying, to taste
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 2 cloves garlic, minced
  • 1 tbsp Calabrian chili paste or sriracha
  • 2 tbsp grated parmesan
  • 1 tbsp lemon juice
  • 3 cups chopped crisp romaine lettuce
  • Shaved parmesan, for serving
  • 4 large flour tortillas, warmed

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap and pound to an even 1/2-inch thickness. In a small bowl, mix the garlic powder, smoked paprika, black pepper, and salt. Rub the seasoning all over both sides of the cutlets.
  2. Place the flour, beaten eggs, and panko in three separate shallow dishes. Dredge each seasoned cutlet in the flour, shaking off any excess. Dip into the egg, letting the excess drip off, then press firmly into the panko until evenly coated.
  3. Pour about 1 inch of vegetable oil into a large, heavy skillet and heat over medium-high until it reaches 360°F (182°C). Use a deep-fry thermometer to monitor the temperature.
  4. Carefully lower the breaded cutlets into the hot oil. Fry for 4 minutes per side, turning once, until deeply golden brown and cooked through. Transfer to a wire rack to drain.
  5. In a small bowl, whisk together the mayonnaise, Dijon mustard, minced garlic, Calabrian chili paste, grated parmesan, and lemon juice until smooth and creamy.
  6. Place the chopped romaine in a large bowl. Add the spicy Caesar dressing and shaved parmesan, then toss until the lettuce is evenly coated.
  7. Let the fried cutlets rest for a few minutes, then slice them into thick, juicy strips.
  8. Lay a warm tortilla on a work surface. Place a portion of the dressed romaine in the center, top with the crispy chicken strips, and add extra shaved parmesan if desired.
  9. Fold in the sides of the tortilla, then roll tightly from the bottom, enclosing the filling. Place the wrap seam-side down in a dry skillet over medium heat. Toast for 1–2 minutes per side until golden and sealed.
  10. Transfer the toasted wraps to a cutting board. Slice each diagonally in half to show the crunchy cutlet, creamy dressing, and crisp greens. Serve immediately.
