Before you start

Before starting, gather all the ingredients and equipment. Slice the chicken breast into strips and set up a breading station with two shallow dishes: one with beaten eggs and one with panko breadcrumbs mixed with the spices.

Have the Caesar salad ready in a bowl. Warm the tortillas in a dry skillet or microwave for a few seconds to make them pliable. Keep a large skillet and tongs nearby for cooking the chicken and toasting the wraps.

Ingredients at a glance (11)
  • 1 lb chicken breast, sliced into strips
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 4 cups Caesar salad (romaine, shaved parmesan, creamy dressing)
  • 4 large flour tortillas (10-inch)
  • extra creamy Caesar dressing, for dipping, to taste

Instructions

Bread and cook the chicken

  1. Season and bread the chicken
Slice the chicken breast into strips about 1/2-inch thick. In a bowl, combine the chili powder, garlic powder, smoked paprika, salt, and black pepper. Rub the spice mixture all over the chicken strips. Place the beaten eggs in one shallow dish and the panko breadcrumbs in another. Dip each chicken strip into the egg, letting the excess drip off, then coat thoroughly in the panko, pressing gently to adhere.
Look for The chicken strips are evenly coated with a golden layer of panko that sticks without falling off.
Tip Use one hand for the wet ingredients and the other for the dry to keep the coating light and even.
  2. Cook the chicken until golden and cooked through
Heat a large skillet over medium-high heat and add a thin layer of oil. When the oil shimmers, carefully place the breaded chicken strips in a single layer, working in batches if needed. Cook for 3 to 4 minutes per side, until the coating is deep golden brown and crispy. The chicken is done when an instant-read thermometer inserted into the thickest strip reads 165°F (74°C). Transfer to a plate.
Look for The chicken is golden brown and crisp on the outside, and the juices run clear when pierced.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Avoid overcrowding the pan; too many strips lower the oil temperature and make the coating soggy.

The chicken strips are coated with a thick, even layer of panko that clings well.

When cooked, they are golden brown and crisp, and an instant-read thermometer registers 165°F (74°C) in the thickest strip. The kitchen smells of smoked paprika and toasted breadcrumbs.

Assemble the wraps

  1. Assemble the wraps with salad and hot chicken
Lay a flour tortilla on a clean work surface. Pile about 1 cup of Caesar salad down the center, leaving a border at the top and bottom. Arrange the hot chicken strips over the salad. Fold the bottom of the tortilla up over the filling, then fold in the sides, and roll tightly into a sealed wrap. Repeat with the remaining tortillas, salad, and chicken.
Look for The wraps are plump and secure, with no filling spilling out from the ends.
Tip Warm the tortillas briefly in a dry skillet or microwave to make them more pliable and easier to roll.

Each tortilla is filled with a generous pile of Caesar salad and hot chicken strips. The wraps are rolled tightly, with the bottom flap tucked over the filling and the sides folded in, so no filling escapes.

Toast and serve

  1. Toast the wraps until crackling
Wipe the skillet clean and return it to medium heat. Place the wraps seam-side down in the skillet, in batches if necessary. Toast for 2 to 3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and crackly. The wrap should feel firm and crisp when pressed. Cut each wrap in half on a diagonal and serve with extra Caesar dressing for dipping.
Look for The tortilla is deeply golden with darker spots, and it crackles when pressed with a spatula.
Tip Don't rush the toasting; a medium heat ensures the inside warms through without burning the outside.

The wraps are toasted until the tortilla is deeply golden and crackly on both sides. When pressed, they feel firm and crisp. Cut in half, the filling is visible, and the chicken is still warm and juicy.

Common mistakes

One common mistake is overcrowding the skillet when cooking the chicken, which lowers the oil temperature and makes the coating soggy. Cook in batches if needed. Another is not sealing the wraps tightly, which causes the filling to spill out during toasting.

Fold the bottom and sides securely. Also, avoid toasting over too high heat, which burns the tortilla before the inside warms through. Use medium heat and press gently with a spatula.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) and the coating is deep golden brown and crisp. The wraps are done when the tortilla is golden brown on both sides and crackles when pressed with a spatula.

The inside should be hot and the cheese melted. If you cut into a wrap, the filling should be steaming and the chicken should be juicy, not dry.

  • Poultry: 165°F (74°C) in the thickest part
  • Egg dishes: 160°F (71°C) in the thickest part
