Tips for success
For the crispiest potatoes, make sure they are completely dry before frying. After rinsing, spread them on a clean kitchen towel and pat them dry thoroughly.
You can even let them air-dry for a few minutes. Also, use a thermometer to maintain the oil temperature precisely; this ensures even cooking and prevents the potatoes from absorbing excess oil.
When making the glaze, taste it before adding the potatoes and adjust the seasoning. If you prefer a milder dish, use less harissa and chili. For extra brightness, add a little more lemon juice at the end.
The harissa garlic mayo can be made ahead and stored in the refrigerator for up to 3 days; it also makes a great dip for other vegetables or grilled meats.
Variations
- Extra Spicy: Add 1/2 teaspoon of cayenne pepper or a finely chopped bird's eye chili to the glaze for an intense heat. Increase the harissa to 3 tablespoons and add a pinch of smoked paprika for a deeper smoky flavor.
- Rosemary Garlic: Replace the parsley with 1 tablespoon of fresh chopped rosemary and add 1 teaspoon of dried oregano to the glaze. Omit the chili for a milder, herb-forward version that pairs well with roasted meats.
- Lemon Herb: Use 2 tablespoons of fresh lemon juice and add 1 teaspoon of lemon zest to the glaze. Replace the parsley with a mix of fresh mint and cilantro for a bright, refreshing twist.
- Crispy Chickpea Add-In: Add 1 cup of cooked chickpeas to the skillet with the potatoes during the final toss. The chickpeas absorb the glaze and get slightly crispy, adding extra protein and texture.
Storage and make-ahead
- Fridge
- Store leftover potatoes in an airtight container in the refrigerator for up to 3 days. The mayo can be kept in the fridge for up to 5 days.
- Freezer
- Freeze the par-fried potatoes in a single layer on a baking sheet, then transfer to a freezer bag for up to 3 months.
- Reheat
- Reheat the potatoes in a 400°F (200°C) oven for 5-7 minutes until hot and crispy. Do not microwave. The mayo can be served cold or at room temperature.

Avoid microwaving, as it will make them soggy. The harissa garlic mayo should be stored separately in the refrigerator.
The potatoes can be par-fried (first fry) up to 2 hours ahead of time. Let them cool completely, then refrigerate. When ready to serve, do the second fry and toss with the glaze.
The harissa garlic mayo can be made up to 3 days in advance. The glaze can also be prepared ahead and kept in the refrigerator for up to 2 days; reheat it gently before tossing with the potatoes.
Serving ideas
Serve the batata harra hot, straight from the skillet, with the harissa garlic mayo on the side for dipping. The contrast of temperatures and textures is key: the potatoes should be crispy and hot, the mayo cool and creamy. This dish is perfect as an appetizer for a dinner party, a side dish for grilled meats, or a snack for game day.
For a more substantial meal, serve the potatoes alongside grilled chicken, lamb, or falafel. They also work well as a topping for salads or grain bowls. The harissa garlic mayo can be drizzled over the potatoes or used as a dip for pita bread and fresh vegetables. Garnish with extra parsley and a sprinkle of sumac for a traditional touch.

Crispy Spicy Batata Harra Potato Cubes with Harissa Garlic Mayo

Ingredients
- 4 large russet potatoes, peeled and cut into bite-sized cubes
- Vegetable oil, for frying, to taste
- 1 tbsp minced garlic
- 1 red chili, finely chopped
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 2 tbsp spicy harissa sauce
- 1 tsp garlic powder
- Salt, to taste
- Black pepper, to taste
- 1 tbsp fresh lemon juice
- 2 tbsp chopped fresh parsley
- 1/2 cup mayonnaise
- 1 tbsp harissa sauce
- 1 tsp minced garlic
- 2 tbsp finely diced red onion
Instructions
- Peel the russet potatoes and cut them into uniform 1-inch cubes. Rinse the cubes in a colander under cold running water until the water runs clear, then pat them completely dry with clean kitchen towels. This removes excess starch and ensures crispness.
- Heat 2 inches of vegetable oil in a large pot to 325°F (163°C). Carefully add the potato cubes in batches and fry for 5 minutes, until they are tender but not browned. Remove with a slotted spoon and drain on paper towels. Let them rest for 10 minutes.
- Increase the oil temperature to 365°F (185°C). Return the potatoes to the hot oil and fry for 3 minutes, until deeply golden and shatteringly crisp. Drain on paper towels and season lightly with salt.
- In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and chopped red chili, and sauté for 30 seconds until fragrant. Stir in the tomato paste and harissa sauce, and cook for another minute until the mixture darkens and becomes aromatic.
- Add the fried potatoes to the skillet with the harissa glaze. Sprinkle with garlic powder, salt, and black pepper. Drizzle with fresh lemon juice and toss everything together until the potatoes are evenly coated and glistening red.
- Remove the skillet from the heat and stir in the chopped fresh parsley. The residual heat will wilt the parsley slightly, adding a fresh herbal note to the spicy glaze.
- In a small bowl, whisk together the mayonnaise, harissa sauce, minced garlic, and finely diced red onion until smooth. Adjust the heat level by adding more harissa if desired.
- Transfer the glazed potatoes to a serving platter. Serve immediately with the harissa garlic mayo on the side for dipping. The contrast of hot, spicy potatoes and cool, creamy dip is the signature of this dish.
