Tips for success

To achieve the most consistent results, slice the okra strips to a uniform thickness of about 1/8 inch. Using a mandoline slicer can help achieve this precision, but a sharp chef's knife is perfectly adequate if you work carefully. Consistency in size ensures that all pieces cook at the same rate, preventing some from burning while others remain undercooked.

Experiment with the spice profile by adding a pinch of ground cumin or coriander to the flour mix for a deeper, more aromatic flavor. These additions complement the earthy nature of the chickpea flour and the tang of the amchur powder. Always taste the spice mix before adding it to the okra to ensure the balance of heat and acidity matches personal preference.

Variations

  • Spicy Heat Version: Increase the amount of Kashmiri chili powder or add a pinch of cayenne pepper to the dry spice mix for a significantly hotter and more intense flavor profile.
  • Garlic Infused: Add half a teaspoon of garlic powder to the spice mixture to provide a savory, aromatic depth that pairs wonderfully with the tangy amchur and lime.

Storage and make-ahead

Fridge
Storing in the fridge is not recommended as the moisture will cause the okra to lose its crisp texture immediately.
Reheat
Reheat in a preheated oven or air fryer at 350°F (175°C) for 3-5 minutes until warmed through and crisp.

If any leftovers remain, allow them to cool completely on a wire rack to prevent moisture buildup from the residual heat. Once cool, store them in an airtight container at room temperature for up to one day.

For longer storage, keep them in a cool, dry place. Note that the texture will inevitably soften over time, so consuming them immediately after frying is highly recommended.

The okra can be sliced and deseeded up to two hours before frying, provided the strips are kept in a single layer on a paper towel-lined tray and covered loosely.

However, do not toss them with the flour and spices until just before you are ready to fry. Coating them early will cause the salt and spices to draw moisture out of the vegetable, resulting in a soggy, clumpy mess instead of a crispy snack.

Serving ideas

Serve these okra fries immediately while they are still hot and at their peak crispiness. A brass platter or a shallow bowl works well to showcase the vibrant golden color and texture.

Place a small bowl of extra chaat masala on the side for those who prefer an extra kick of tanginess, and provide plenty of fresh lime wedges for guests to squeeze over their portion right before eating.

These fries make an excellent appetizer or side dish for a variety of Indian meals. They pair beautifully with cooling yogurt-based dips like raita, which provides a creamy contrast to the spicy, brittle okra.

Because they are so light and addictive, they are best enjoyed as a quick snack during social gatherings or as a crunchy addition to a larger spread of traditional Indian appetizers.

Frequently asked questions

Can these okra fries be made in an air fryer?
Yes, air frying is possible. Preheat the air fryer to 375°F (190°C), coat the strips in a very thin layer of oil, and cook in a single layer for 8-10 minutes, shaking halfway through. Monitor closely to ensure they reach the desired golden crispness without burning.
Why does the okra sometimes turn out soggy?
Sogginess is usually caused by either overcrowding the fryer, which drops the oil temperature, or by failing to remove enough moisture before frying. Always fry in small batches, ensure the okra is completely dry before coating, and do not add the spice mix until the very moment you are ready to fry.
What is the best way to slice the okra into thin strips?
Using a sharp chef's knife, slice the pod in half lengthwise. Place the cut side down on the cutting board to stabilize it, then use the tip of your knife to gently scrape out the seeds. Once cleared, slice the halves into thin, matchstick-like strips. A mandoline can also be used for perfectly uniform results.

Ingredients

  • 400 g fresh okra pods
  • 40 g besan (chickpea flour)
  • 20 g rice flour
  • 1 tsp Kashmiri chili powder
  • 1/4 tsp turmeric powder
  • 1 tsp amchur (dried mango powder)
  • 2 cups peanut oil for frying
  • chaat masala to taste
  • fresh lime wedges for serving

Instructions

  1. Wash and thoroughly pat the okra pods dry. Slice each pod in half lengthwise and carefully scrape out the seeds using the edge of a knife. Slice the cleaned pods into thin, uniform strips to ensure they crisp up evenly during the frying process.
  2. Place the okra strips in a large mixing bowl. Add the chickpea flour, rice flour, Kashmiri chili powder, turmeric, and amchur powder. Toss the strips thoroughly until every piece is lightly coated with the dry spice and flour mixture.
  3. Heat the peanut oil in a deep pot to 375°F (190°C). Fry the okra strips in small batches for approximately 2.5 minutes until they curl and turn golden brown. Remove with a spider strainer, drain on paper towels, then immediately toss with chaat masala and a squeeze of fresh lime juice.
