Tips for success
For the best results, use a high-quality tahini that is smooth and pourable. If your tahini is too thick, whisk in a small amount of warm water and lemon juice until it reaches a drizzle-able consistency.
This enhances the tanginess and ensures the sauce coats the meat evenly, balancing the richness of the lamb with a bright, acidic note.
If you prefer an extra layer of flavor, consider lightly brushing the non-meat side of the pita with a tiny amount of olive oil before placing it in the skillet.
This helps the pita crisp up even more effectively and adds a subtle richness that complements the toasted flavor of the bread. Keep a close eye on the pita during the final minute to prevent the edges from burning.
Variations
- Spicy Harissa Twist: Incorporate one tablespoon of harissa paste into the lamb mixture before smashing. This adds a smoky, spicy heat that pairs excellently with the sweetness of the pomegranate molasses and the creaminess of the tahini.
- Herbed Yogurt Finish: Replace the tahini with a dollop of thick Greek yogurt mixed with chopped fresh mint and garlic. This provides a cooling, refreshing finish that contrasts with the intense spice of the lamb.
Storage and make-ahead
- Fridge
- Keep leftovers in an airtight container for up to 2 days.
- Reheat
- Reheat in a 350°F oven for 5 to 7 minutes until the pita is crisp and the meat is warmed through.
Store any leftover flatbreads in an airtight container in the refrigerator for up to two days. To keep the pita from becoming overly soft, place a sheet of parchment paper between the flatbreads if stacking them. Note that the texture will change upon refrigeration, so they are best consumed freshly prepared whenever possible.
You can prepare the lamb kofta mixture up to 24 hours in advance and keep it refrigerated in a sealed container. The tahini sauce can also be made ahead of time and stored in the fridge. However, for the best texture and crispness, wait to assemble and sear the flatbreads until just before you intend to serve them.
Serving ideas
Serve the flatbreads immediately while they are hot and crispy. They are perfect as a standalone meal, perhaps accompanied by a fresh side salad of cucumbers, tomatoes, and parsley to cut through the richness of the lamb.
The combination of warm, spiced meat and fresh, cool vegetables provides a balanced dining experience that highlights the different textures of the dish.
For a more substantial spread, consider serving these flatbreads alongside a bowl of extra tahini or a side of pickled vegetables. The acidity of the pickles complements the pomegranate molasses beautifully.
Ensure each person has their own flatbread, as the smash technique is designed for individual serving sizes that are easy to pick up and enjoy with your hands.

Crispy Spiced Lamb Kofta Smash Flatbreads

Ingredients
- 1.3 lb ground lamb kofta, seasoned
- 4 large Greek pita rounds
- 1/4 cup tahini, lemony
- 2 tbsp pomegranate molasses
- 2 tbsp pomegranate seeds
Instructions
- Portion the seasoned lamb kofta into four equal pieces, each weighing approximately 150 grams. Keep the lamb refrigerated until just before you are ready to assemble the flatbreads to ensure food safety and maintain the texture of the meat.
- Place one portion of lamb onto the center of a pita round. Press the meat down firmly with your hands, spreading it out into a thin, even layer that covers the surface of the pita. Heat a cast-iron skillet to 450°F. Place the pita meat-side down in the hot skillet and sear for four minutes until the lamb reaches an internal temperature of 160°F (71°C) and the edges are charred.
- Carefully flip the flatbread to crisp the pita side for an additional minute. Once removed from the heat, drizzle the flatbread generously with the lemony tahini and pomegranate molasses. Sprinkle the fresh pomegranate seeds over the top before serving immediately while hot and crispy.
