Tips for success
For the best results, serve these immediately while they are fresh from the oven. The contrast between the hot, crispy cheese and the tender broccoli is at its peak when the crackers are warm.
If you find the cheese is not crisping enough, ensure your oven has reached the full temperature before putting the tray inside, and consider positioning the tray on the center rack for the most even heat distribution.
If you want to experiment with flavor, consider adding a pinch of smoked paprika or dried oregano to the seasoning mix. While the classic version relies on the saltiness of the parmesan, adding subtle dried herbs can elevate the dish for different occasions.
Always add spices after the smashing phase to ensure they stick to the oil-brushed broccoli and do not burn during the initial heat-up of the baking process.
Variations
- Spicy Cajun Broccoli: Replace the chili flakes with 1 teaspoon of Cajun seasoning for a bolder, smokier kick. The spices pair beautifully with the nutty flavor of the toasted parmesan crust.
- Herbed Lemon Broccoli: Add half a teaspoon of dried thyme and a squeeze of fresh lemon juice over the broccoli after baking. The brightness of the lemon cuts through the rich cheese perfectly.
Storage and make-ahead
- Fridge
- Keep in an airtight container for up to 24 hours, though crispness will diminish.
- Reheat
- Place on a baking sheet in a 400°F oven for 3 to 5 minutes until crispy again.
Store any leftovers in an airtight container at room temperature for up to one day, though they will lose their signature crispness over time. For the best quality, try to consume them within a few hours of baking. If they lose their crunch, you can briefly reheat them in a hot oven to restore their texture, but avoid the microwave as it will make the broccoli soggy and the cheese rubbery.
You can steam the broccoli and keep it in the refrigerator for up to 24 hours before you plan to bake. Blot the broccoli dry again before using it to ensure no moisture has accumulated. Do not assemble the parmesan mounds or smash the broccoli until immediately before baking, as the salt in the cheese will draw out moisture from the vegetables if left to sit, resulting in a less crispy final product.
Serving ideas
Serve these crispy broccoli crackers on a flat platter with a bowl of cool, creamy dip on the side. A lemon-garlic caesar dressing or a tangy sour cream dip works exceptionally well, as the cool, acidic notes balance the richness of the baked parmesan.
Place the crackers in a single layer to keep them from steaming each other, which helps maintain their texture for as long as possible before they are enjoyed by your guests.
These crackers make a fantastic side dish for a casual meal or a standout appetizer for a party. Because they are easy to eat with your hands, they are perfect for social settings.
Encourage your guests to dip them generously to experience the full range of flavors and textures. The combination of the sharp parmesan crust and the fresh broccoli is a versatile pairing that works well with a wide variety of meal themes.

Crispy Smashed Parmesan Broccoli Crackers

Ingredients
- 1 lb broccoli florets
- 15 grams grated Parmigiano-Reggiano
- 2 tbsp garlic olive oil
- 1 tsp chili flakes
- 60 grams grated Parmigiano-Reggiano
Instructions
- Steam the broccoli florets for 5 minutes until tender but firm. Remove from the heat and blot the florets thoroughly with paper towels to remove excess moisture. This ensures the cheese adheres properly during the baking process and results in a crispier texture rather than a soggy one.
- Preheat the oven to 425°F (220°C). Line a baking tray with parchment paper. Create small mounds using the 15g of parmesan on the tray. Place a broccoli floret on top of each cheese mound. Use the bottom of a heavy glass to press each floret down firmly until it is flattened into the cheese.
- Drizzle the broccoli with the garlic olive oil and sprinkle with chili flakes. Top each piece with the remaining 60g of parmesan. Bake for 18 minutes until the cheese is melted, browned, and forms a lacy, crispy skirt around the edges of the broccoli. Remove from the oven and serve immediately.
