Tips for success
For the crispiest edges, make sure your griddle is truly smoking hot before you add the tortillas. The sizzle you hear when the meat hits the pan is a good sign—it means the moisture is evaporating and the crust is forming.
Use a cast iron press or a heavy spatula to press down firmly for the first 10 seconds; this ensures maximum contact with the pan.
If you're using ground chicken or turkey, the cooking time may be slightly longer because poultry needs to reach 165°F (74°C).
Keep an eye on the internal temperature and adjust the cooking time as needed. The burger sauce can be made ahead and stored in the fridge for up to a week—it's also great on regular burgers or as a dip.
Variations
- Chicken version: Use ground chicken instead of beef. Season the same way, but cook until the internal temperature reaches 165°F (74°C). The chicken will be slightly leaner, so the edges may be less crispy—add a little oil to the griddle.
- Spicy smash tacos: Add a pinch of cayenne or a dash of hot sauce to the meat before pressing. Use pepper jack cheese instead of cheddar, and top with sliced jalapeños for extra heat.
- BBQ bacon version: Swap the burger sauce for BBQ sauce and add crumbled cooked bacon on top of the cheese. Use smoked cheddar or Gouda for a smoky flavor.
- Breakfast tacos: Use breakfast sausage instead of ground beef, and top with a fried egg (cooked until set) and American cheese. Serve with salsa instead of burger sauce.
Storage and make-ahead

- Reheat
- Reheat frozen or refrigerated tacos in a dry skillet over medium heat for 2-3 minutes per side, or in a 350°F (175°C) oven for 5-7 minutes.
Leftover smash burger tacos can be stored in an airtight container in the refrigerator for up to 2 days.
To reheat, place them in a dry skillet over medium heat for 2-3 minutes per side, or until heated through and the edges crisp up again. Avoid microwaving, as it will make the tortillas soggy.
You can prepare the meat-topped tortillas up to 4 hours ahead. Arrange them on a baking sheet, cover with plastic wrap, and refrigerate. When ready to cook, heat the griddle and proceed as directed. The burger sauce can also be made up to a week in advance and stored in the fridge.
Serving ideas
Serve these smash burger tacos immediately after folding, while the edges are still crispy and the cheese is molten.
They're perfect for a weeknight dinner, but also fun for game day or a casual get-together. Set out extra burger sauce, pickles, and shredded lettuce so everyone can customize their tacos.
These tacos are a meal in themselves, but they pair well with a simple side of Mexican street corn, a crisp green salad, or tortilla chips and guacamole. For a lighter option, serve them with a side of fresh fruit. The key is to keep the sides simple so the tacos remain the star of the show.

Crispy Smash Burger Tacos Ready in 10 Minutes

Ingredients
- 1 lb ground beef (80/20)
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 8 mini flour tortillas (6-inch)
- 4 slices sharp cheddar cheese
- 1/2 cup homemade thousand-island burger sauce
- 1/2 cup dill pickle slices
- 1 cup shredded iceberg lettuce
Instructions
- In a medium bowl, combine the ground beef with the salt and pepper. Mix gently with your hands until just combined; do not overwork. Divide the meat into 8 equal portions (about 2 tablespoons each). Place a mini tortilla on a cutting board, then put one portion of meat on top. Press the meat out to the edges of the tortilla, making a thin, even layer. Repeat with the remaining tortillas and meat.
- Place a large cast iron griddle or skillet over high heat. Let it heat for at least 2 minutes until it is smoking hot. You can test by flicking a drop of water onto the surface—it should sizzle and evaporate immediately.
- Carefully place the tortillas meat-side down onto the hot griddle. Use a cast iron press or the back of a heavy spatula to press each one down firmly for 10 seconds. Cook without moving for 3 minutes, until the meat is deeply browned and crispy around the edges.
- After 3 minutes, use a spatula to flip each tortilla so the meat side is up. Immediately place a slice of cheddar cheese on top of the meat. Let cook for 1 minute, until the cheese is melted and bubbly. The meat should reach 160°F (71°C) internally.
- Drizzle about 1 tablespoon of burger sauce over each cheesy meat patty. Top with a few dill pickle slices and a handful of shredded iceberg lettuce.
- Fold each tortilla in half like a taco, pressing gently to hold the filling. Serve immediately while the edges are still crispy and the cheese is molten.
