Tips for success
For the crispiest results, use a cast iron skillet and don't overcrowd the pan.
Cook the wraps in batches if necessary, and keep them warm in a 200°F (93°C) oven while you finish the rest.
Press down firmly with a burger press or spatula when toasting to ensure even browning and a compact wrap that holds together.
If you like extra heat, add a few slices of jalapeño or a drizzle of hot sauce before folding.
Variations
- Spicy Jalapeño: Add sliced pickled jalapeños or fresh jalapeño rings to the filling, and mix a little hot sauce into the burger sauce for extra heat.
- Bacon Cheeseburger: Crumble cooked bacon over the beef filling before adding the cheese. The smoky, salty bacon complements the beef and cheddar perfectly.
- Southwest Style: Add a spoonful of corn and black bean salsa to the filling, and use pepper jack cheese instead of cheddar. Serve with a dollop of sour cream.
- Mushroom Swiss: Sauté sliced mushrooms with the beef, and swap the cheddar for Swiss cheese. The earthy mushrooms and nutty Swiss are a delicious twist.

Reheat in a skillet over medium heat to restore crispness, or in a toaster oven. Avoid microwaving, as it makes the tortilla soggy.
The beef filling can be cooked up to 2 days in advance and stored in the refrigerator. Assemble the wraps just before toasting to keep the tortillas crisp.
You can also freeze the cooked filling for up to 3 months; thaw overnight in the refrigerator before using.

Crispy Smash Burger Quesadilla Wrap

Ingredients
- 4 flour tortillas (8-inch)
- 1 lb 80/20 ground beef
- 1/2 cup finely diced yellow onion
- 2 cloves minced garlic
- 1 tbsp tomato paste
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 1 1/2 cups shredded sharp cheddar cheese
- 1/2 cup dill pickle slices
- 1/2 cup burger sauce (store-bought or homemade)
- 2 tbsp unsalted butter, softened
Instructions
- Heat a large cast iron skillet over medium-high heat. Add the ground beef, onion, and garlic. Cook, breaking the meat into small crumbles, until the beef is browned and the onion is translucent, about 5-7 minutes. Stir in the tomato paste, smoked paprika, garlic powder, onion powder, salt, and pepper. Cook for another 2 minutes until the paste is well incorporated and the beef is fully cooked. The internal temperature should reach 160°F (71°C).
- Lay the tortillas on a clean work surface. Divide the cooked beef mixture evenly among the tortillas, placing it on one half of each. Top with shredded cheddar cheese and a few pickle slices. Drizzle about 1 tablespoon of burger sauce over each. Fold the other half of the tortilla over the filling to create a half-moon shape.
- Wipe the skillet clean and place it over medium heat. Add 1 tablespoon of butter and let it melt. Place the wraps seam-side down in the skillet (work in batches if needed). Press down gently with a burger press or a heavy spatula. Cook for 2-3 minutes until golden brown and crispy. Flip and cook the other side for another 2-3 minutes, until the cheese is fully melted and the tortilla is crisp.
- Transfer the wraps to a cutting board. Let them rest for 1 minute, then slice each in half diagonally. Serve with extra burger sauce on the side for dipping.
