Before you start

Before starting, ensure the sushi rice is cooked and seasoned. If using leftover rice, let it come to room temperature and adjust the seasoning if needed.

Prepare all ingredients: dice the tuna, slice the green onions, mash the avocado with lime juice, and have the sweet soy glaze and sesame seeds ready.

Line the baking dish with plastic wrap, and have the frying oil measured. The rice needs to freeze for 1 hour, so plan ahead. Keep the tuna and avocado chilled until assembly.

Ingredients at a glance (13)
  • 2 cups cooked sushi rice, seasoned with rice vinegar and sugar
  • 2 tbsp rice vinegar
  • 1 tsp sugar
  • 8 oz sushi-grade tuna, finely diced
  • 3 tbsp Kewpie mayonnaise
  • 1 1/2 tbsp sriracha
  • 1 tsp toasted sesame oil
  • 2 tbsp sliced green onions
  • 1 ripe avocado, mashed with lime juice
  • 1 tbsp fresh lime juice
  • 3 tbsp sweet soy glaze
  • 1 tbsp toasted sesame seeds
  • 1/2 cup neutral oil, such as canola or vegetable, for frying

Instructions

Freeze and Cut the Rice

  1. Season and Press the Rice
If the sushi rice is not already seasoned, gently fold the rice vinegar and sugar into the warm cooked rice. Line an 8x8-inch baking dish with plastic wrap, leaving overhang on two sides. Press the seasoned rice firmly and evenly into the dish, compacting it well. Cover with the overhanging plastic wrap and press down again to pack the rice tightly. Freeze for 1 hour until firm and set.
Look for The rice should be cold, firm, and hold its shape when pressed.
Tip Wet your hands or the spatula lightly to prevent sticking when pressing the rice.
  2. Cut the Rice into Bites
Once the rice is fully chilled and firm, lift it out of the dish using the plastic wrap. Place on a cutting board. Using a sharp knife, cut the rice into 16 equal rectangles or squares, about 1 1/2 inches each. Wipe the knife clean between cuts if needed. Keep the pieces covered in the refrigerator until ready to fry.
Look for Clean, even pieces that hold their shape without crumbling.
Tip Use a ruler for perfect uniformity if you like.

The seasoned rice should be firmly packed into the dish and completely frozen. When you lift it out, it should be a solid block that cuts cleanly into neat rectangles. The pieces should hold their shape without crumbling. If they seem soft, return them to the freezer for another 15 minutes.

Crisp the Rice and Prep Toppings

  1. Pan-Fry the Rice Until Golden
Heat the neutral oil in a large skillet over medium-high heat until shimmering. Carefully place the rice pieces in the hot oil in a single layer, without crowding. Fry for 3 minutes per side, turning with tongs, until golden brown and blistered on all sides. The rice should be crisp and crackling. Transfer to a paper towel-lined plate to drain. Repeat with the remaining pieces.
Look for The rice is golden amber, crispy, and makes a crackling sound when pressed.
Tip Do not move the rice too soon; let it develop a crust before turning.
  2. Prepare the Spicy Tuna Tartare
While the rice cools, finely dice the sushi-grade tuna into small, even cubes. Place in a chilled bowl. Add the Kewpie mayonnaise, sriracha, toasted sesame oil, and sliced green onions. Fold gently with a rubber spatula until just combined. Be careful not to overmix, which can break the tuna. Keep the tartare refrigerated until ready to assemble.
Look for The tuna is glossy, evenly coated, and still chunky.
Tip Chill the bowl and knife beforehand to keep the tuna cold.
  3. Mash the Avocado
In a small bowl, mash the ripe avocado with the fresh lime juice until smooth but still slightly chunky. Season with a pinch of salt if desired. Set aside.
Look for Smooth, creamy avocado with a bright lime flavor.
Tip Use a fork for a rustic texture; do not over-mash.

The rice pieces should be golden amber with a blistered, crackling crust on every side. The tuna tartare should be glossy and well chilled, the avocado creamy and bright. The kitchen will smell of toasted rice and sesame. The rice should make a loud crunch when pressed.

Assemble and Serve

  1. Assemble the Bites
Place a spoonful of the mashed avocado on each crispy rice piece, spreading it slightly. Top with a generous mound of the spicy tuna tartare, pressing gently to adhere. Drizzle with sweet soy glaze and sprinkle with toasted sesame seeds. Serve immediately.
Look for Each bite is neat, colorful, and ready to pick up.
Safe temperature 145°F (63°C) internal temperature (fish)
Tip Assemble just before serving to keep the rice crisp.
  2. Serve and Enjoy
Arrange the assembled bites on a serving platter. For the best texture, serve immediately while the rice is still warm and crispy. The contrast of warm crunchy rice, cool creamy avocado, and spicy tuna is the signature of this dish.
Look for The rice is crisp, the tuna is cool, and the glaze glistens.
Tip If making ahead, keep components separate and assemble at the last minute.

Each bite should be neatly topped with avocado, a generous mound of tuna, and a drizzle of sweet soy glaze. The sesame seeds add a final nutty touch. Serve immediately to enjoy the contrast of warm crispy rice and cool, silky tuna.

Common mistakes

A common mistake is not pressing the rice firmly enough, which causes the pieces to fall apart during frying. Be generous with the pressure and use the plastic wrap to compact it thoroughly. Another pitfall is overcrowding the pan, which lowers the oil temperature and results in greasy, soggy rice.

Fry in batches and keep the oil hot. Overmixing the tuna tartare can turn it mushy—fold gently just until combined. Finally, assembling too far in advance can make the rice lose its crunch, so assemble just before serving.

How to tell it’s done

The rice is done when it is golden brown and crispy on all sides, with a crunchy exterior that yields to a tender interior. The tuna tartare should be well chilled and the avocado creamy.

For food safety, the tuna is served raw, so it is important to use sushi-grade fish and keep it refrigerated until serving. The internal temperature of the tuna does not need to reach a specific temperature, but it should be consumed immediately or within 2 hours.
