Tips for success
For the flakiest results, keep the pastry as cold as possible throughout the process. If your kitchen is warm, chill the assembled flowers for 10-15 minutes before baking.
Also, use a sharp knife or pizza cutter to cut the pastry squares—this helps maintain clean edges and promotes even rising.
These flowers are best served fresh from the oven, but you can assemble them ahead and refrigerate for up to 24 hours before baking.
If you do, add an extra minute or two to the baking time. For a fun twist, sprinkle a little grated Parmesan cheese on top before baking for a salty, savory crust.
Variations
- Cheesy Pizza Flowers: Add a small cube of mozzarella or a teaspoon of shredded cheese in the center of each square before folding. The cheese will melt and stretch when you pull the petals apart, adding a gooey, delicious surprise.
- Spinach and Ricotta: Replace the tomato paste with a mixture of cooked spinach and ricotta cheese, seasoned with nutmeg and salt. This creates a creamy, savory filling that pairs beautifully with the flaky pastry.
- Pesto and Sun-Dried Tomato: Spread a teaspoon of basil pesto on the pastry, then top with chopped sun-dried tomatoes. The pesto adds a fresh, herbal note, while the tomatoes provide a sweet-tangy burst.
- Sweet Cinnamon Sugar: For a dessert version, skip the tomato paste and instead fill with a mixture of cinnamon and sugar, plus a small pat of butter. Bake as directed, then dust with powdered sugar. Serve as a sweet treat with coffee.
Storage and make-ahead
- Fridge
- Store in an airtight container in the refrigerator for up to 3 days. Reheat in a 350°F oven for 5-7 minutes to crisp up.
- Freezer
- Freeze unbaked assembled flowers on a baking sheet until solid, then transfer to a zip-top bag for up to 2 months. Bake from frozen at 400°F for 18-20 minutes.
- Reheat
- Reheat leftovers in a 350°F oven for 5-7 minutes until hot and crispy. Avoid microwave.
Store leftover pizza flowers in an airtight container at room temperature for up to 2 days. They will lose their crispness, but you can reheat them in a 350°F (175°C) oven for 5 minutes to restore some crunch. Avoid microwaving, as it will make them soggy.
You can assemble the pizza flowers up to a day in advance. Place them on a parchment-lined baking sheet, cover with plastic wrap, and refrigerate. When ready to bake, brush with egg wash and bake as directed, adding a couple of minutes to the cooking time if they go in cold.
Serving ideas
Serve these pizza flowers warm, straight from the oven, as a stunning centerpiece on a party platter.
Arrange them on a slate board or wooden cutting board, sprinkle with fresh oregano, and watch guests pull them apart. They’re perfect for dipping into marinara sauce or a creamy garlic dip.
For a more substantial appetizer, pair them with a simple green salad or antipasto platter. They also make a fun addition to a brunch spread—try them with a side of scrambled eggs or a fresh fruit salad.
The flaky, buttery pastry is delicious on its own, but the tomato filling makes it a satisfying snack any time of day.

Crispy Puff Pastry Pizza Flowers

Ingredients
- 1 package puff pastry sheets, thawed (about 17.3 oz / 490 g)
- 1/4 cup garlic-herb tomato paste
- 1 large egg, beaten
- Dried oregano, for sprinkling, to taste
Instructions
- Thaw the puff pastry sheets according to package directions. On a lightly floured surface, unfold the pastry and gently roll out any creases. Cut each sheet into 4 equal squares. Spoon 1 teaspoon of garlic-herb tomato paste into the center of each square, leaving the corners clean.
- Take one corner of the pastry square and fold it toward the center, pressing gently to seal. Repeat with the opposite corner, then the remaining two corners, creating a pinwheel shape with the filling exposed in the middle. Place the pinwheels on a parchment-lined baking sheet, spacing them 2 inches apart.
- Refrigerate the assembled pizza flowers for 15 minutes while the oven heats. This step is not shown in the video but ensures the pastry is cold when it hits the heat, which gives the flakiest layers.
- Preheat the oven to 400°F (200°C) with a rack in the center position. Line a baking sheet with parchment paper if not already done.
- In a small bowl, beat the egg with 1 tablespoon of water. Using a pastry brush, lightly brush the exposed pastry petals with the egg wash, avoiding the tomato paste filling. This will give the pastry a golden, glossy finish.
- Bake the pizza flowers for 15 minutes, or until the pastry is puffed and deeply golden brown. Rotate the baking sheet halfway through for even browning. The internal temperature of the pastry should reach 160°F (71°C) if checked with an instant-read thermometer, ensuring the egg wash is fully cooked.
- Remove the baking sheet from the oven and let the pizza flowers cool on the sheet for 5 minutes. This allows the pastry to set and prevents burning your fingers when handling.
- Transfer the pizza flowers to a serving board or platter. Sprinkle with dried oregano while still warm. Serve immediately, pulling the petals apart to reveal the flaky layers and melted cheese (if using).
